2 lbs chicken thighs or breasts ( boneless, skinless)
¼ cup olive oil
2 chipotle peppers (canned) plus 2 tablespoons adobo sauce ( juice from can)
4 garlic cloves
1 shallot
1 ½ tablespoons cumin
1 tablespoon coriander
2 teaspoons chili powder
1 teaspoon dried oregano
2 teaspoons salt ( 1 teaspoon per pound)

Steps:

  • Preheat grill to medium-high.
  • Place marinade ingredients in a food processor and process into a paste. Place the chicken and marinade in a ziplock bag and massage well to mix and coat all sides well. (Or brush all sides well with marinade and place in a container.) Marinate 20 mins or up to 3 days.
  • Grill each side of chicken 6-7 minutes, or until good grill marks appear. Lower heat and move chicken to cooler side of the grill and continue to grill until chicken is cooked through and internal temperature reaches 165F.
  • Let it rest 5-10 mins before serving and squeeze with lime. Sprinkle with optional cilantro.

1/2 cup butter, melted, divided
12 sheets phyllo dough (14x9 inches)
3 cups diced cooked chicken
1/2 pound sliced bacon, cooked and crumbled
3 cups frozen chopped broccoli, thawed and drained
2 cups shredded cheddar or Swiss cheese
6 large eggs
1 cup half-and-half cream or evaporated milk
1/2 cup whole milk
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375°. Brush sides and bottom of a 13x9-in. baking dish with some of the melted butter. Place one sheet of phyllo in bottom of dish; lightly brush with butter. Repeat with five more sheets of phyllo. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out. , In a large bowl, combine the chicken, bacon, broccoli and cheese; spread evenly over phyllo in baking dish. In a small bowl, whisk the eggs, cream, milk, salt and pepper; pour over chicken mixture. Cover filling with one sheet of phyllo; brush with butter. Repeat with remaining phyllo dough. Brush top with remaining butter. , Bake, uncovered, until light golden brown and thermometer reads 160°, 35-40 minutes. Let stand for 5-10 minutes before serving.

1 1/3 lbs ground chicken breast
6 scallions, thinly sliced, then chopped
1 1/2 cups reduced-fat cheddar cheese
1 garlic clove
1 chipotle chile in adobo, finely chopped
1 pinch salt
1 pinch pepper
6 sheets phyllo dough, defrosted
4 tablespoons margarine, melted
1 avocado
3 limes, juice of
2 tablespoons fresh cilantro
1 teaspoon salt
3 tablespoons extra virgin olive oil

Steps:

  • Preheat oven to 400 degrees Farenheit.
  • Combine the ground chicken, scallions, cheese, garlic, and chipotles and season with salt and pepper.
  • Transfer the mixture to a sealable plastic bag. Turn the bag into a homemade pastry bag by trimming 1 1/2 inches off one of the bottom corners of the bag.
  • Arrange phyllo dough with the long side closest to you on your kitchen counter, brush liberally with the melted margarine, season with salt and pepper. Place another sheet of phyllo on top, brush with margarine again, and season with salt and pepper. Repeat with third sheet of phyllo.
  • Place the trimmed end of the pastry bag 1/2 inch in from the left side and 1/2 inch up from the bottom of the phyllo sheet. Squeeze half the chicken mixture from the bag while moving along in a straight line from left to right. Roll the front edge of the phyllo sheet away from you, ensasing the chicken mixture. Continue until you have completed a long roll. Tuck the ends in and then brush the entire outside of the phyllo log with more melted butter. Transfer the first log to a rimmed cookie sheet, putting the seam side down. Repeat this process to make the second log with the remaining half of the chicken mixture. Bake for 15 minutes, or until the logs feel firm to the touch.
  • While the phyllo-wrapped chicken is in the oven, cut the avacado in half and remove skin and seed. Place in a food processor and combine with lime juice, cilantro, course salt, and about 3 tablespoons of water. Process until the avacaodo mixture is smooth, then stream the Olive Oil into the dressing. Season to taste.
  • Once the rolls are cooked, remove from oven and let them cool just enough to handle. Cut each roll in half, then cut each half into 3 equal pieces. Serve 3 chicken rolls per person. With a small ramekin of the dipping sauce.

1 onion , chopped
1 garlic clove , sliced
2 tbsp sunflower oil
1-2 tbsp chipotle paste (see tip, below)
400g can chopped tomatoes
1 tbsp cider vinegar
8 skinless chicken thigh fillets
small bunch coriander , chopped
soured cream and rice, to serve

Steps:

  • Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.
  • Add the chicken and cook for 10 mins or until cooked through, turning once. Scatter with coriander and serve with rice and soured cream.

1 package (1 1/3 pounds) ground chicken breast
6 scallions, thinly sliced, then chopped
1 1/2 cups grated sharp Cheddar cheese
1 garlic clove, finely chopped
1 chipotle pepper in adobo sauce, finely chopped, or 3 tablespoons of a chipotle-flavored salsa
Salt and freshly ground black pepper
6 sheets frozen phyllo dough, defrosted
4 tablespoons unsalted butter, melted
1 ripe Hass avocado
Juice of 3 limes
A handful of fresh cilantro leaves (2 tablespoons)
1 teaspoon coarse salt
3 tablespoons extra-virgin olive oil (EVOO) (eyeball it )
Bibb lettuce, to serve rolls on

Steps:

  • Preheat the oven to 400°F.
  • In a bowl, combine the ground chicken, scallions, Cheddar cheese, garlic, and chipotles and season with salt and pepper. Transfer the mixture to a sealable plastic bag. To turn the sealable plastic bag into a homemade pastry bag, trim 1 1/2 inches off one of the bottom corners of the plastic bag. Push the chicken mixture to the cut corner without pushing it through the hole. Reserve while you prepare the phyllo.
  • Arrange 1 sheet of phyllo dough with the long side closest to you on your kitchen counter, brush liberally from edge to edge with the melted butter, and season with salt and pepper. Place another sheet of phyllo on top, again brush liberally with butter, and season with salt and pepper. Repeat with the third sheet of phyllo.
  • Place the trimmed end of the pastry bag 1/2 inch in from the left side and 1/2 inch up from the bottom of the phyllo sheet. Separate the halves and scoop out the pit with a spoon, then use the spoon to scoop the avocado from its skin. Place the avocado in a food processor bowl and combine with the lime juice, cilantro, coarse salt, and about 3 tablespoons of water. Process until the avocado mixture is smooth, then stream the EVOO into the dressing. Taste and adjust the seasonings.
  • Once the chipotle chicken rolls are cooked, remove from the oven and let them cool just enough to handle. Cut each roll in half, then cut each half into 3 equal pieces. Serve 3 chicken rolls per person on a bed of Bibb lettuce with a small bowl or ramekin of the dipping sauce.
  • Chipotles in adobo sauce are sold in 7-ounce cans in the international foods aisle.

1 (7 ounce) can chipotle peppers in adobo sauce
2 tablespoons sour cream
4 skinless, boneless chicken breasts
1 cup sour cream
10 ounces baby spinach, rinsed
½ cup chicken broth
salt to taste

Steps:

  • Combine chopped chile peppers with 2 tablespoons sour cream. Mix together and spread mixture over chicken breasts. Sprinkle lightly with salt to taste, cover and marinate in refrigerator for at least 2 hours.
  • Place marinated chicken in an ungreased 9x13 inch baking dish and broil for about 5 minutes (rack should be about 6 inches from the top.) Pour 1 cup sour cream around edges of chicken and turn over chicken breasts. Broil for an additional 5 minutes. Sour cream should be lightly brown on the edges. Move breasts into a separate dish and cover to keep warm. Set aside.
  • Pour leftover broiled sour cream into a medium saucepan over high heat. Add spinach, broth and salt to taste. Boil for about 1 minute until all melted and mixed together. Pour mixture over chicken breasts and serve.

3/4 cup green onion, chopped
3/4 cup mayonnaise
3 teaspoons lemon juice
2 garlic cloves, crushed
3/4 teaspoon tarragon
1/2 cup butter, melted
1 garlic clove, crushed
6 sheets frozen phyllo dough
6 boneless chicken breasts
6 slices swiss cheese
1/2 cup parmesan cheese, grated

Steps:

  • Make sauce by combining green onions, mayonnaise, lemon juice, garlic cloves and tarragon. Set aside.
  • Brush one sheet of phyllo with butter.
  • Place one chicken breast in one corner.
  • Spoon on the sauce.
  • Top with slice of cheese.
  • Roll over the phyllo sheet placing the fold inside.
  • Brush with melted butter.
  • Sprinkle with parmesan cheese.
  • Bake for 1 hour in a preheated 350°F oven.
  • Tip: Notes Remove phyllo from freezer night before. When ready to prepare, take out 6 sheets and return package of phyllo to freezer. Place you phyllo between damp sheets of paper towels. Cover with tea towel to keep them damp, otherwise they will dry up and become brittle.

1 onion, finely minced
8 ounces mixed mushrooms, finely minced
2 tablespoons parsley, minced
1 garlic clove, minced
3 teaspoons all-purpose flour
1/4 cup dry vermouth or 1/4 cup dry white wine
salt and pepper
2 tablespoons olive oil
4 boneless skinless chicken breast halves
8 sheets phyllo dough
1 1/4 cups butter, melted
2 cups breadcrumbs
8 ounces feta cheese

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a skillet, melt 2 or 3 tablespoons of the butter; saute the onion until golden. Remove onion and set aside.
  • Melt 2 or 3 tablespoons butter in the same skillet; saute the mushrooms until all juices are absorbed.
  • Add the onions, parsley and garlic and saute 1 minute.
  • Stir in the flour and blend well.
  • Add the vermouth or dry white wine.
  • Stir over medium heat until thickened.
  • Season with salt and pepper to taste.
  • Remove mushroom mixture from skillet and set aside.
  • In same skillet melt remaining butter with olive oil and saute chicken until lightly browned, about 1 minute per side.
  • Remove from heat.
  • Brush one sheet of phyllo dough with melted butter and sprinkle with bread crumbs.
  • Place a second sheet of phyllo over the first; butter and sprinkle with bread crumbs.
  • Place a chicken breast in the lower half of the phyllo.
  • Put 1/4 of the mushroom mixture and 1/4 of the feta over the chicken.
  • Fold up the sides of the phyllo over the chicken, envelope style.
  • Repeat with remaining chicken breasts.
  • Place on a baking sheet, seam side down, and brush with butter.
  • Bake for 35 minutes, or until browned.
  • NOTES :
  • Recipe may be prepared in advance up to the point the chicken is wrapped in phyllo then frozen.
  • To serve, bake frozen at 350 degrees Fahrenheit for 50 minutes.

8 small boneless skinless chicken breasts (2 lb.)
1 Tbsp. olive oil
4 cups chopped stemmed kale
1 onion, chopped
4 oz. (1/2 of 8-oz. tub) PHILADELPHIA Spicy Jalapeño Cream Cheese Spread
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
1 pkg. (4 oz.) crumbled feta cheese
1 egg yolk, beaten
1 Tbsp. chopped canned chipotle peppers in adobo sauce with 1 tsp. sauce
1 Tbsp. flour
1/2 tsp. ground black pepper
16 sheets frozen phyllo dough (16x11-1/2 inch), thawed

Steps:

  • Heat oven to 350°F.
  • Pound chicken to 1/8-inch thickness.
  • Heat oil in large skillet on medium heat. Add kale and onions; cook 3 to 4 min. or until onions are crisp-tender, stirring occasionally. Remove from heat. Add cream cheese spread; stir until cream cheese is completely melted and mixture is well blended. Add all remaining ingredients except phyllo; mix well. Spoon about 1/4 cup kale mixture onto each chicken breast; roll up, starting at one of the short sides.
  • Spray 1 phyllo sheet with cooking spray; top with 1 of the remaining phyllo sheets. Spray with additional cooking spray. Place remaining phyllo sheets between sheets of plastic wrap; set aside until ready to use. Place 1 chicken roll along one short side of phyllo stack. Fold over both long sides of phyllo, then roll up, starting at chicken-topped side. Repeat with remaining phyllo sheets and chicken rolls. Place, seam sides down, in shallow pan sprayed with cooking spray. Spray tops of phyllo wraps with additional cooking spray.
  • Bake 30 to 35 min. or until chicken is done.
