Steps:
- Heat the oil in a medium pot over medium-high heat. Add 1/2 cup pico de gallo, the chopped chipotle and adobo sauce to taste; cook until the mixture starts to sizzle, about 2 minutes. Add the beans and 3/4 cup water; bring to a low boil, then stir in the chicken and cook until the mixture is slightly thickened, about 2 minutes. Stir in the cilantro and season with salt.
- Heat the tortillas as the label directs. Arrange the rice horizontally in the lower half of each tortilla, leaving a 1 1/2-inch border on all sides. Top evenly with the cheese, chicken mixture, lettuce and the remaining pico de gallo.
- Fold the bottom edge of each tortilla snugly over the filling, tuck in the sides and roll up tightly. Cut the burritos in half and serve with guacamole if using.

- Heat oven to 375°F. Line 13x9-inch pan with foil. Arrange drummettes in single layer in foil-lined pan.
- In small microwave-safe bowl, combine all remaining ingredients; mix well. Microwave on HIGH for 1 minute or until sugar is dissolved, stirring once halfway through cooking. Pour sauce over drummettes to cover.
- Bake at 375°F. for 30 minutes. Turn drummettes over; bake an additional 20 to 30 minutes or until drummettes are glazed, fork-tender and no longer pink next to bone.

CHIPOTLE LIME CHICKEN DRUMETTES W/ AVACADO SAUCE
Steps:
- Brush wings with mayonnaise.
- Mix together chipotle seasoning spices.
- Sprinkle spice mixture generously over chicken. Use your hands to really work the spices into the chicken.
- Cover and refrigerate for an hour.
- Preheat oven to 450.
- Arrange chicken on a foil-lined baking sheet brushed lightly with oil.
- Bake for 20 minutes.
- Drain off the juice.
- Return chicken to oven and broil to crisp up the skin. Watch carefully, this only takes a few minutes.
- Arrange chicken on a platter and garnish with fresh cut cilantro and the juice of 1 fresh lime.
- Make the avocado sauce by pureeing avocado and sour cream. Add in cilantro, garlic and enough water to thin it out (if desire) Puree until smooth. Stir in lime juice. Add salt and pepper to taste.

- Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.

- On a cutting board, season the chicken all over with salt and pepper.
- Transfer the chicken to a large zip-top bag with the chopped chipotles and mix until the chicken is fully coated.
- Refrigerate for at least 2 hours, up to overnight.
- Heat the oil in a large skillet over medium-high heat.
- Add the chicken and cook until golden brown, 4 minutes per side.
- Remove the chicken with tongs and place on a cutting board. Let cool for 5 minutes. Cut the chicken into bite-sized pieces.

- Place chipotle chile pepper and ancho chile pepper in a bowl; pour in water. Cover bowl and let sit until peppers are softened, at least 10 to 12 hours. Drain water and remove seeds from peppers.
- Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.
- Pound chicken thighs flat with a meat mallet and trim excess skin. Place chicken in a resealable plastic bag and add marinade. Turn chicken several times to coat. Seal bag and marinate at least 8 hours.

- Pre-heat oven to 350°F Spray a 13x9 pan with cooking spray. Place drumettes into pan and sprinkle with Salt,pepper and onion powder.
- Cook in 350°F for 30 minutes.
- Meanwhile in a small saucepan mix brown sugar,dry mustard, Marsala,soy sauce and minced garlic. Bring to boil over medium heat than turn down to simmer while drumettes cook. Stir sauce occasionally.

- Rinse off chicken.
- Combine all ingredients, except chicken, and bring to a boil. Leave on a low boil for 15 minutes.
- Add in chicken drummettes. Let boil for one hour or more until it all thickens and becomes sticky.
- Then let it stand for about ten minutes and then refrigerate.
- Can serve warm or cold(I have had them both ways and either way is good).
- Sprinkle with sesame seeds once arranged on platter and garnish with parsley.

SIAMESE CHICKEN DRUMETTES
This recipe originally came from Better Homes and Gardens. Our DIL Leah made it for our dinner last night-this is her recipe with modifications. BH&G say it is great for a picnic, or can be served as a delicious starter. We ate it as a main with a salad. I'm tempted to serve rice or noodles with them with the remaining sauce spooned over them too rather than waste it as BH&G suggest. Drumettes are the wings with the tips removed, so they're like mini drumsticks.

- Preheat oven to 200°C.
- Whisk the coconut cream, soy, lime juice and curry paste and pour into a baking tray.
- Add the chicken and toss to coat well with the sauce.
