SPICY SICHUAN-STYLE PRAWNS
Stir-fry shellfish with a spicy tomato, ginger and chilli bean sauce for a classic Chinese seafood dish

Steps:
- Heat a wok over a high heat. Add the groundnut oil and, when it is very hot and slightly smoking, add the ginger, garlic and spring onions. Stir-fry for 20 secs, then add the prawns. Stir-fry for about 1 min, then add all the sauce ingredients, along with ½ tsp salt and ½ tsp ground black pepper. Continue to stir-fry for another 3 mins over a high heat. Serve at once, scattered with the coriander and spring onion.

CHINESE PRAWNS WITH STIR FRIED VEGETABLES
A wonderful way to prepare green (raw) prawns that all the family will enjoy. It's easy to prepare and has a wonderful flavour.

- Prepare vegetables, of your own choice, i.e. bok choy, bean sprouts, capsicum, onion, broccoli, asparagus, Chinese leaf, and baby corn--a mixture is great.
- Blanche asparagus and broccoli for two minutes before adding to the other vegetables. Add the chili, crushed; place to one side.
- In a cup, place the stock, adding the Soya sauce (a mixture of light and rich is nice) add the sherry, oyster sauce and sesame oil. Mix the corn flour with enough water to be able to add to the stock.
- Heat wok, add half of the oil, stir fry the vegetables. Place in warm oven. Add remainder of the oil to wok and quickly stir fry the prawns for just a minute or two. Add the liquid and stir until it thickens.
- Toss the vegetables in and quickly stir.
- Serve separately with noodles of your choice.

CHINESE PRAWN TOAST
A popular and savory Chinese appetizer that's so very quick and easy to make. They're perfect for just about any occasion.

Steps:
- Add prawns, water chestnuts, green onions, ginger root, garlic, salt, and sugar to a food processor.
- Whisk egg white, cornstarch, soy sauce, rice vinegar, and sesame oil together in a small bowl and drizzle over the top of the shrimp mixture. Pulse until smooth, but not pureed, into a prawn mousse.
- Trim crusts off the bread and equally spread the prawn mousse all the way to the edge of each bread slice. Cut diagonally into 12 halves, and lightly sprinkle with sesame seeds
- Add oil to a 10-inch skillet so that it's about 1/2 inch deep, and heat to 375 degrees F (190 degrees C) over medium-high heat. Add 4 of the toasts, prawn-side down, not crowding the pan.
- Fry until toast is golden brown, 30 to 45 seconds; flip and cook bread side for another 15 seconds. The toasts cook very quickly, so keep your eye on them. Repeat for next batch.
- Transfer to a paper towel-lined rack and serve warm with sweet chili sauce.

ASIAN PRAWN NOODLES

- Put the noodles in a bowl, pour over enough boiling water to cover, set aside to soak for 5 mins, then drain.
- Meanwhile, pour 450ml water into a wok or wide pan and add the garlic, ginger, coriander stalks, chilli, tamari, spring onions and sugar snaps. Bring to the boil and simmer for 3 mins, then add the noodles and beansprouts to heat through.
- Stir in the prawns, lime zest and juice, coriander leaves and the mint, if using. Return to the boil until steaming hot and serve in deep bowls, drizzled with a dash of sesame oil, if you like.

- Heat the vegetable oil in a wok and add chopped Ginger.
- cook for a a minute and add the chopped leeks.Fry for 2-3 minutes. Set aside.
- Fry Prawns in oil for 2 minutes.
- crumble stock cube over prawns.
- Add Soya sauce. Add enough that prawns are frying in a pool of soya.
- Add leeks and fry for a minute or 2
- Serve with rice.

- Place the (thawed) raw prawns onto a paper towel. Pat dry to remove any excess water after thawing. Place the prawns into a small bowl and sprinkle over the flour and ground paprika. Mix well to fully coat the prawns.
