PAN-FRIED CHINESE PANCAKES



Pan-Fried Chinese Pancakes image

A delicious brunch snack that can be found in many Chinese breakfast shops. Its various names include 'cong you bing,' 'jiu cai bing,', 'scallion pancakes,' 'green onion pancakes,' etc. This particular recipe is passed down through my mother's family, and brings back many good, yummy memories! Can serve with hot-sour sauce, or your favorite Chinese sauce.

¼ teaspoon salt
¾ cup warm water
1 cup all-purpose flour
¼ teaspoon vegetable oil
¼ cup all-purpose flour
1 tablespoon vegetable oil
1 tablespoon Asian (toasted) sesame oil, or as needed
½ cup finely chopped green onion
1 tablespoon vegetable oil, or as needed

Steps:

  • Dissolve salt in warm water, and mix in 1 cup of flour to make a soft dough. Turn the dough out onto a well-floured work surface, and knead until slightly springy, about 5 minutes. If the dough is sticky, knead in 1/4 teaspoon of vegetable oil. Divide the dough into 8 equal-size pieces, and keep the pieces covered with a cloth.
  • In a bowl, mix 1/4 cup of flour with 1 tablespoon vegetable oil to make a mixture like fine crumbs.
  • On a floured work surface, roll a piece of dough out into a thin square about 5x7 inches in size, brush the dough with toasted sesame oil, and sprinkle lightly with about 1 1/2 teaspoon of the flour-oil mixture. Sprinkle about 1 tablespoon of chopped green onion onto the dough, and spread the onion out evenly. Starting with a long end, roll the dough up into a rope shape, and pinch the seam and the ends closed. Roll the rope shape into a flat spiral, and press lightly with your hands to compact the spiral and keep it from unrolling.
  • Place the spiral down onto the floured work surface, and gently roll it out into a pancake with the onions folded inside, turning the pancake over often as you roll it out. Roll gently and turn often to avoid making holes in the pancakes. Finished pancakes should be about 5 inches in diameter. Repeat with the rest of the dough pieces, making 8 onion pancakes.
  • Heat a non-stick skillet over medium heat, and brush with vegetable oil. Pan-fry each pancake in the hot skillet until golden brown on both sides, about 5 minutes per side. Cut into wedges and serve warm.

These traditional Chinese dumplings with pork and vegetables are first fried, then steamed to create a crispy bottom, soft top, and tender filling.

For the Filling:
1/2 cup finely chopped bok choy leaves
1/2 cup finely chopped napa cabbage
1/4 cup finely chopped green onion
1/4 cup chopped water chestnuts
1 pound ground pork
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
2 teaspoons Chinese rice wine or dry sherry
1 teaspoon sesame oil
Dash of white pepper
For the Dumplings:
1 (48-count) package wonton or gyoza wrappers
1 tablespoon cornstarch mixed with 2 tablespoons water
1 tablespoon vegetable oil or canola oil
1/3 cup water (more if needed)
Optional: 1 lightly beaten egg white
Optional: dipping sauce

Steps:

  • Gather the ingredients.
  • In a large bowl, combine the filling ingredients. Use your fingers to mix everything together. If preparing the filling ahead of time, store in a sealed container in the refrigerator until ready to use.
  • Gather the ingredients.
  • Place a dumpling wrapper on a cutting board. Cover the remaining wrappers with a damp cloth to keep them from drying out while filling and folding the dumplings. Add a heaping teaspoon of the filling to the middle of the pot sticker wrapper and use your finger to spread it out toward the sides. Be sure not to overfill or spread the filling too close to the edge of the wrapper.
  • To fold the dumpling, moisten the edges of the wrapper with the mixture of water and cornstarch to make it easier to seal. Use the optional egg white instead if you'd prefer.
  • Gently lift the edges of the moistened wrapper over the filling and bring it together at the top center. Crimp the edges of the wrapper several times along the edge and pinch together to seal. Repeat with the remaining wrappers and filling. Keep the dumplings covered lightly with plastic wrap or a slightly damp clean kitchen towel as you work to avoid drying out.
  • Heat a wok or nonstick skillet over medium-high heat and add the oil. Add 10 to 12 pot stickers at a time and cook for 2 to 3 minutes until the bottoms are browned.
  • Add 1/3 cup water, cover, and steam the dumplings until cooked through and the liquid is absorbed, about 5 minutes.
  • Remove and cook the remaining dumplings in the same manner. Usually, 1/3 cup of water is enough to steam 10 to 12 dumplings, but use more if needed.
  • Serve alone or with a dipping sauce .

Scallion pancakes are a popular dish in China, and available from restaurants and street vendors. There are many different regional variations. My version is Shanghai-style and is my grandmother's recipe. These can be frozen after step 3, and thawed and finished cooking when ready to eat.

2 cups all-purpose flour
1 tablespoon salt, divided
¾ cup boiling water
½ cup cold water, or as needed
vegetable oil, or as needed, divided
1 bunch green onions (scallions), minced

Steps:

  • Mix flour and 1 teaspoon salt together in a large bowl; pour in boiling water and quickly mix together until water is absorbed. Work cold water, about 1 tablespoon at a time, into flour mixture just until dough forms. Knead dough for 10 minutes. Cover bowl with a damp cloth and let dough rest for 40 minutes.
  • Turn dough onto a lightly floured work surface; divide into 4 equal pieces.
  • Roll 1 piece of dough into a large thin round; brush the top with vegetable oil and sprinkle with about 1/2 teaspoon salt and 1/4 the green onions. Pick up 1 end of the round and roll dough around green onions into a long scroll-shape. Take 1 scroll end and roll dough into a disk. Repeat with remaining dough, letting each disk rest for 10 minutes.
  • Heat about 1 tablespoon vegetable oil in a skillet over medium-low heat. Place 1 disk on a floured surface and roll into a 1/2-inch thick round; cook in the hot oil until golden brown, 2 to 3 minutes per side. Repeat with remaining disks.

A simple and delicious recipe from the doyenne of Chinese-American cuisine, Barbara Tropp. It was in her excellent cookbook based on her San Francisco restaurant, the "China Moon Cookbook".

1 tablespoon flavorful oil (eg. 1 teaspoon sesame oil mixed with 2 teaspoons corn or peanut oil)
1 tablespoon hot chili oil
1 1/2 cups green and white scallions, thinly sliced rings (green onion)
1/2 cup coarsely chopped cilantro leaves and stems
1/2 cup chinese chives or 1/2 cup regular chives, finely chopped
2 cups all-purpose flour
2 teaspoons baking powder
1/3 cup very hot tap water
1/3 cup cold water
about 1 teaspoon kosher salt
1/3-1/2 cup corn oil or 1/3-1/2 cup peanut oil, for pan-frying

Steps:

  • Combine oil and chili oil in a small dish and set aside. Combine scallions, cilantro and chives in another bowl and set aside.
  • Combine flour and baking powder in the bowl of a mixer fitted with the flat paddle. With machine running on low speed, add hot and cold water in quick succession. Stop machine as soon as dough comes together in a soft ball. If it's very tacky and sticky, add a bit more flour.
  • Turn dough out onto a lightly floured board. Cover with plastic wrap and let rest 15 minutes. (If the dough has been made in a food processor, let rest 40 minutes.) Roll gently into a smooth log. Cut evenly into 4 pieces, then put each piece, cut side down, on the lightly floured board. Cover with plastic wrap.
  • Working with a piece at a time, shape dough by rolling into a thin, even circle about 7 ½ inches in diameter. Brush top with a generous film of the oil mixture, then sprinkle evenly with a rounded ¼ teaspoon salt. Heap dough with 2/3 cup of reserved greens, then spread evenly over top. Roll up dough into a fat cylinder - it doesn't need to be too tight. Grasp one end of the dough and wind other end around it in a tight spiral. Tuck tail end underneath and press lightly with your hand to flatten. Gently roll out into a 6-inch circle. Put aside on a freshly floured spot, then repeat with remaining dough.
  • Cook breads immediately to prevent a soggy texture. Heat an 8- to 10-inch heavy skillet over high heat until a bead of water evaporates on contact. Add enough oil to glaze bottom by 1/8 inch, swirling to coat; reduce heat to moderate. When oil is hot enough to foam a pinch of flour, add first bread to pan. Cook until bottom is golden and a bit crusty, 3 to 4 minutes. Adjust heat so bread doesn't scorch. Flip and fry until golden, about 3 minutes longer. Remove to paper towel-lined plate. Repeat process with oil and remaining dough.
  • Serve breads fresh from skillet, each cut into fourths. Or let cool and hold at room temperature up to 8 hours. Reheat in 350°F oven until hot, about 5 minutes.

3 Long imitation crab sticks
1.5 tablespoons Vegetable Oil
1/2 tablespoon Vegetable oil
3 cups Cabbage ((Half of medium small sized cabbage))
1/16 teaspoon Salt ((For stir fry cabbage))
1 cup All purpose flour
1 Egg ((Large))
1&1/4 cups Water
1/4 teaspoon Salt ((Add in the batter))
some XO sauce, Chili oil or hoisin sauce

Steps:

  • Shred or slice a half of medium small cabbage into strips. You need around 3 cups.
  • Cut 3 long imitation crab sticks into pieces.
  • Put 1/2 tablespoon of vegetable oil in a non-stick pan. Then, add the shredded cabbage and 1/16 teaspoon of salt.
  • Stir them a little bit and cover with a lid for 1-2 minutes until it's soft. (Do not need to be very soft.)
  • In a mixing bowl, add 1 cup all purpose flour and 1 large egg.
  • Next, add 1/4 teaspoon of salt and 1 & 1/4 cups of water.
  • Mix the batter very well. Make sure no lumps.
  • After that, put the cut crab meat and cooked cabbage into the batter.
  • Mix the batter and ingredients well.
  • Pour 1 tablespoon of vegetable oil into a non-stick pan and turn on medium low fire.
  • After, pour some batter mixture into the pan. Let it cook until it golden brown and flip the other side (remember to turn the fire to medium low).

1 teaspoon sugar

  • In a medium bowl, stir together yeast, lukewarm water, half the flour, sugar, and salt; let stand 10 minutes so that the yeast can start to ferment.

You can make a loaf with one half of the dough by cutting it into 3 pieces and placing them in the loaf pan. With the other half of the dough, cut it into eight equal pieces and make buns. You can really shape the dough however you like. Once shaped, let the dough proof for another hour.

  • Set up a food processor and combine the flour, salt and baking powder in its bowl. Pulse it a couple of times to aerate the dry ingredients. Run the processor while you pour the cold water in until you have a sticky dough form. Turn the dough out onto a lightly floured and clean surface and bring it together into a smooth ball. Transfer the ball of dough to a bowl and pour the sesame oil over it. Make sure it is all coated in the sesame oil, then cover it and let it rest for an hour.
  • When it is done resting, roll it out into a large rectangle that it about 1/4 inch thick. Sprinkle enough of the scallions on the rectangle to pretty well cover it in a single layer. Roll up the long side of the rectangle tightly over the scallions so that you have a long log. Take the log and roll it tightly into a spiral that looks like a snail shell. Roll out the snail shell to be a thin round pancake. Then heat about 2 inches of canola oil in a large skillet over medium high heat.
  • Once the oil is hot, pan fry the scallion bread for 3-4 minutes on each side to get it golden brown and crispy on the outside. It will puff up and the interior needs to cook too. When it is done, transfer it to a plate lined with a paper towel to drain it. Then cut it into quarters and serve it immediately with a delicious Chinese meal!
