Chinese Hot and Sour Soup with Ramen image

Incredibly delicious Chinese Hot and Sour Soup with Ramen is the perfect comfort food that's ready in under 30 minutes! It's a hearty meal, full of veggies, tofu, mushrooms and chicken.

2 tablespoons Vegetable Oil
2 dried Red Chillies (finely chopped (feel free to cut this down to 1 if you like your food less spicy))
1 tablespoon Ginger (chopped )
1 tablespoon Garlic (chopped )
1/2 cup Celery (chopped )
1 cup Carrots (chopped )
3 cups Assorted dried or fresh Mushrooms (I used shiitake mushrooms, wood ear mushrooms and button mushrooms)
2 tablespoons Dark Soy Sauce
2 tablespoons Light Soy Sauce
1 cup Firm Tofu (sliced)
2 1/2 tablespoons Cornstarch
1 pack Ramen noodles
1 Egg (beaten)
2 tablespoons Rice Vinegar
1/4 teaspoon White Pepper powder
1/2 teaspoon Salt (optional)
1 teaspoon Toasted Sesame Oil

Steps:

  • If using dried shiitake and wood ear mushrooms, rehydrate them by submerging them in hot water for 15-20 minutes till they soften up. Reserve the water to be used as stock in the soup. Slice all the mushrooms and set aside.
  • Heat oil in a pan and add red chillies and ginger. Saute till the ginger is golden brown and add the garlic. Saute the garlic for a few seconds and add the celery and carrots. Cook the carrots for a minute or two and add mushrooms, tofu, both the soy sauces and six cups water (or low sodium stock) to the pot (if using the stock from mushrooms, reduce the water to 5 cups and add the stock). Bring the pot to a boil and simmer for 5-6 minutes. Add the ramen to the pot.
  • While the ramen is cooking, stir together cornstarch in 1/4 cup water and slowly add it to the pot while stirring continuously. Bring the soup to a quick boil. The soup should start to thicken. Slowly add in the beaten egg, swirling with a ladle as you go to create egg ribbons in the soup. Stir in rice vinegar, white pepper, salt (if using) and sesame oil. Turn off the flame. Top with an egg or just some green onions and enjoy.

I am a hot and sour soup SNOB, for sure! I could eat it every day, but since I live 47 miles from the closest Chinese restaurant, and I'm on a budget as far as buying ingredients...I dreamed this up, and trust me, it is yummy. Not the real thing for sure, but it satisfies my cravings. I use Maruchan Ramen in either the oriental or shrimp flavor. You can use any brand rice vinegar, seasoned or unseasoned, and for the heat, I use only Sriracha HOT Chili Sauce. (or as we call it, rooster sauce, because of the picture of the rooster on the bottle.)

1 (3 ounce) package ramen noodles
2 cups water
1/8 cup mushroom, thinly sliced
1 tablespoon rice vinegar
1/8 teaspoon chili sauce
1 egg, beaten
1/8 cup meat, cooked, sliced thinly. (optional)
1 green onion, light and dark green parts, sliced thin

Steps:

  • Put 2 cups of warm water in saucepan. Add Ramen Noodles and Mushrooms. Bring to boil.
  • Add Rice Vinegar and Chili Sauce, cook till noodles are tender, about 5-7 minutes. Turn heat down to medium.
  • Add the sliced meat if desired. You can use beef, pork, or uncooked small shrimp.
  • Very slowly drizzle in the beaten egg so that it kinda forms a solid mass on top of the soup. Once the egg is kinda solid, stir the soup, incorporating the egg.
  • Pour into bowl and sprinkle sliced onion on top.
  • ******Note, Adjust the Vinegar and the Chili Sauce according to your taste.

This Hot and Sour Ramen Soup turns a few packets of ramen noodles into a quick and easy dinner. With some pantry items and fresh vegetables, this soup is light and bright, and will leave your lips tingling!

3 packages ramen noodles ((3 oz each, broken in half along the fold, flavor packet discarded))
2 tablespoons sesame oil
1 clove garlic (, finely minced)
1 1/2 teaspoons grated ginger
7 cups low-sodium chicken broth
3/4 cup rice wine vinegar
2 tablespoons Sriracha hot sauce
3 tablespoons granulated sugar
3 diced scallions (, plus more for garnish)
1/4 cup diced radishes
1/4 cup diced cucumbers
1/4 cup shredded carrot
1/4 cup fresh chopped parsley
poached egg (, optional but recommended)

Steps:

  • Bring water to boil in a large pot. Cook noodles according to package directions, about 3 minutes; drain. Set aside.
  • In the same pot, warm the sesame oil over medium heat. Add in the garlic and ginger; saute until fragrant, about 20 seconds.
  • Add in the chicken broth, rice wine vinegar, Sriracha, and sugar. Bring to a simmer, then remove from heat. Stir in the scallions.
  • Place some noodles in individual bowls. Pour some soup over the noodles.
  • Top with some chopped radishes, cucumber, carrot, parsley, and a few diced scallions. We also like to finish it off with a poached egg. Delish!

After trying many recipes, this one comes the closest to the soup served at my favorite Chinese restaurant. Be sure and have all ingredients cut, measured, etc. before you start, because it goes together fairly quickly once you get going.

1/2 ounce dried wood ear mushrooms
1 cup hot water
1 tablespoon vegetable oil
4 ounces lean pork, julienned
1 bunch green onion, chopped, white part only
salt
fresh ground black pepper
4 ounces straw mushrooms (fresh should be washed or trimmed or sliced)
1 (4 ounce) can sliced mushrooms
2 ounces bamboo shoots, cut into matchstick pieces
4 ounces bean curd, cut into strips or small pieces
4 cups chicken stock
2 teaspoons cornstarch
1/4 cup water
1/4 cup soy sauce (or more to taste)
1/4 cup rice vinegar (or more to taste)
1 egg, beaten
chopped green onion top, from above bunch
Tabasco sauce

Steps:

  • Soak wood ear mushrooms in hot water for 30 minutes.
  • Drain and julienne the mushrooms after removing tough center/core of each mushroom.
  • In a wok, over medium heat, add oil.
  • Season pork with salt and pepper.
  • When the oil is hot, add the pork and chopped white onions and stir fry for 2 minutes.
  • Add all mushrooms, bamboo shoots and bean curd.
  • Season with salt and pepper.
  • Sauté for 2 minutes.
  • Add the stock and bring to a boil.
  • Reduce to a simmer and cook for 5 minutes.
  • Dissolve the cornstarch in water.
  • Stir the cornstarch mixture into simmering liquid.
  • Bring back to a boil and cook for 2 to 3 minutes.
  • Reduce the heat to a simmer and add the soy sauce and rice vinegar.
  • In a wide circle, stir in the beaten eggs.
  • Stir gently until the eggs are cooked.
  • Season the soup with Tabasco sauce to desired hotness.
  • Reseason soup with salt and pepper to taste.
  • Serve in bowls, topping with green onion tops and crispy noodles (fried strips of wonton wrappers) if desired.
  • Notes------------.
  • The Tabasco provides the hot, adjust quantity added according to taste.
  • More can be added at the table to allow for additional heat as desired!
  • The rice vinegar provides the sour;, so add more as needed until desired tartness is achieved.
  • The more soy added, the darker the overall color of the broth, but as it is high in sodium, add more in small quantities and taste accordingly, until desired flavor results.
  • White pepper can be substituted for the black pepper.
  • Although the fresh ground black pepper more strongly flavors the soup overall than the white pepper does.
  • Can be made vegetarian by eliminating the pork strips.

3/4 cup canned bamboo shoot, drained
4 large dried shiitake mushrooms
2 teaspoons dark sesame oil
8 ounces boneless skinless chicken breasts, cut into 2 in thin strips
2 cups fresh mushrooms, sliced
1/3 cup green onion, including tops, sliced
2 1/2 cups chicken stock
2 -3 tablespoons soy sauce
2 teaspoons honey
1 1/2 tablespoons cornstarch
8 ounces firm tofu, cut into 2 in thin strips
2 tablespoons rice vinegar or 2 tablespoons white wine vinegar
1/4 teaspoon hot red pepper sauce (to taste)

Steps:

  • In a small saucepan, bring 1 cup of the water to a boil. Place the bamboo shoots in a small heatproof bowl and pour 1/2 cup of the boiling water over them; let soak for 5 minutes then drain. Add the dried mushrooms to the water to the water remaining in the saucepan and let soak for 15 minutes. Drain the mushrooms through a sieve, reserving the soaking liquid. Slice the mushrooms, discarding the stems.
  • In a large saucepan, heat the oil over moderate heat. Add the chicken and sauté for 4 minutes or until no longer pink on the outside. Add the soaked mushrooms, fresh mushrooms, green onions, stock, soy sauce, honey, and mushroom soaking liquid. Bring the sauce pan mixture to a simmer.
  • Meanwhile, in a small bowl, mix the cornstarch with the remaining 1/4 cup water. Stir the cornstarch mixture into the simmering soup and cook for 5 minutes. Stir in the tofu, vinegar, and red pepper sauce. Cook until the tofu is heated through.

Steps:

  • Combine broth, tomato juice, soya sauce, bamboo shoots, mushrooms, red pepper, hot pepper sauce and pepper flakes.
  • Bring to boil, reduce heat and simmer uncovered for 10 minutes.
  • Add vinegar, green onion and chicken.
  • Simmer for 1 minute longer.
  • Combine cornstarch with 1/4 cup water; mix well and stir into soup.
  • Simmer until mixture is slightly thickened.
  • Slowly add beaten egg in a continuous stream while soup is boiling.
  • Continue stirring until egg is cooked and looks like threads throughout the soup.
  • Serve.
