CHINESE CHICKEN SKEWERS
A delicious Asian inspired recipe for Chinese Chicken skewers that's going to knock your socks off! Simple but full of flavor!

Steps:
- Cut the chicken into 1 - 1.5" pieces.
- Combine the Marinade ingredients in a bowl.
- Add the chicken and set aside to marinate for at least 30 minutes, up to overnight.
- Thread chicken onto skewers.
- Heat 1 tbsp oil in a large skillet (big enough to fit the skewers) over medium high heat.
- Cook half the skewers for 3 to 5 minutes on each side until deep golden brown, using spatula to press them so they cook through evenly. Repeat with remaining skewers.
- Serve immediately, garnished with finely sliced scallions.

CHILI-GINGER GRILLED CHICKEN SKEWERS
Ingredients common to the Asian kitchen, including soy sauce, garlic, ginger and chili sauce, offer a quick, easy and super satisfying way to put a new spin on grilled chicken.

Steps:
- Combine the cilantro, oil, chili sauce, sugar, soy sauce, garlic, ginger, onions and 1/2 teaspoon salt in a mini food processor or blender and process until smooth.
- Drain the skewers and thread a piece of chicken onto each skewer. Place the skewers in a large nonreactive baking dish and rub with the marinade mixture. Cover and marinate in the refrigerator 1 to 2 hours.
- Preheat a grill or grill pan over medium-high heat. Remove the skewers from the baking dish and discard the marinade. Cook the chicken, turning once, until well charred and cooked through, 4 to 6 minutes per side. Serve with your favorite dipping sauce.
TERIYAKI CHICKEN THIGH SKEWERS
These chicken thigh skewers come together so quickly that you'll have dinner on the table in no time at all. Prep the day before, and dinner will be ready in 20 minutes. Serve over rice with some green veggies on the side for a complete meal.

Steps:
- Combine soy sauce, 1/4 cup plus 3 tablespoons pineapple juice, 1/4 cup plus 3 tablespoons hot honey, garlic, brown sugar, salt, and ginger in a saucepan; stir until well combined. Cook over medium heat until sauce is just starting to boil, about 5 minutes. Reduce heat to low and whisk in cornstarch until well incorporated. Cook, stirring constantly, until mixture starts to thicken, 1 to 2 minutes. Remove teriyaki sauce from heat.
- Thread chicken into skewers. Season both sides with salt and pepper. Brush chicken on both sides with teriyaki sauce, reserving remaining sauce, and refrigerate at least 2 hours or overnight for best results.
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Place chicken skewers on the prepared baking sheet.
- Bake in the preheated oven for 10 to 13 minutes. Remove from oven.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Brush skewers with more sauce. Broil each side for 2 to 3 minutes. Serve with extra teriyaki sauce on the side.

CHICKEN SATAY SKEWERS RECIPE BY TASTY

- In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
- Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
- Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
- With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
- Serve the chicken skewers with the sauce on the side.

CHINESE BBQ CHICKEN SKEWERS
From Penzey's Spices submitted by Christine Simmerman. This has become my favorite bbq sauce for chicken. I used boneless, skinless chicken thighs and did not cut them in strips, just put them on the grill over indirect heat. Very moist and the flavor was wonderful!

Steps:
- Cut the chicken pieces into long thin strips, 3-4 per piece.
- In a large bowl or zip top bag, combine the soy sauce, ginger, hoisin sauce, white pepper, and garllic.
- Place 2 TB of the marinade in a small covered bowl.
- Refrigerate until it is time to cook the chicken.
- Add the chicken to the remaining marinade in the bag, toss until well coated, push the air out of bag and seal.
- Marinate for at least 20 minutes - a few hours is nice and overnight even better.
- Preheat oven to 400 degrees.
- Remove the chicken from marinade.
- Discard the marinade and skewer the chicken using a weaving method with the skewer.
- Place on foil-lined cookie sheets in a single layer,.
- Bakefor 15-25 minutes.
- Flip halfway through and baste with the reserved marinade.
- You can grill for approximately 10 minutes on each side instead of using the oven.
TERIYAKI SESAME CHICKEN SKEWERS
Steps:
- Soak bamboo skewers in water for 1 hour to keep from burning later.
- Mix all marinade ingredients together in a non-reactive container large enough to hold all of the chicken. Cut chicken into 1/2-inch strips and submerge them in the marinade, cover, and refrigerate for at least 1 hour.
- Preheat oven to 375 degrees F.
- Thread 1 chicken strip on each skewer towards end of the stick, and line up on a sheet pan. Place in oven and bake for about 30 minutes, or until fully cooked through. Sprinkle with sesame seeds before serving. Serve by sticking skewers straight out of the side of a cantaloupe half filled with melon balls, if desired.

SPICY CUMIN CHICKEN HEART SKEWERS

Steps:
- To make the chicken hearts: Butterfly the chicken hearts by slicing them lengthwise, cutting deeply without cutting them entirely in half.
- Smash the green onions and ginger with clean hands to release their flavors.
- Add the smashed green onions and ginger, along with the Sichuan peppercorns, five-spice powder, cooking wine, and salt to a container along with 1 cup (240 ml) water to make a marinade.
- Add the chicken hearts to the marinade and stir well to combine. Cover the container with plastic wrap and let marinate in the refrigerator for 1 hour. Any longer and you risk over-marinating.
- To grill and serve: Thread 5 chicken hearts onto each skewer. The skewers may be kept refrigerated, covered, before cooking for no longer than 2 hours.
- Prepare a robata or other grill with charcoal that has turned ashy gray and is smoldering hot but not actively emitting flames. Set the skewers down on the grill surface and cook for 2 minutes, then flip over and cook for an additional 2 minutes. When the meat tightens up and oil begins to seep out, it is almost done. At this point, brush the oil on one side of the meat, then sprinkle half of the cumin, red chili powder, and salt, to taste, on top.
- Flip the skewers over and season the other side in the same way. Flip the skewers once more and toast the newly seasoned side for about 30 seconds. Cook for about a minute or so more on each side.
- Remove the cooked skewers to a plate, sprinkle with the sesame seeds, and serve immediately.
- Note: When brushing oil and sauce on the meat while over the fire, do so sparingly, dabbing off any excess, so it doesn't drip onto the flames. If at any point the flames flare up, remove the skewers from the grill until the flames die down.
CHICKEN TERIYAKI SKEWERS
Great served with rice as a main course or use as appys with dipping sauce. Soak the skewers while the chicken is marinading to save time. These go very quickly on an indoor grill but are equally as good done outdoors. Cooking time includes marinading time.

Steps:
- Soak skewers in water for about 20 minutes. Preheat grill indoor or outdoor.
- Mix mashed garlic with salt.
- Whisk garlic with soy sauce, lemon juice, ginger, honey and vinegar.
- Pour into sealable plastic bag and add chicken tenders.
- Seal and marinate for 30 minutes.
- Shake bag to spread marinade to all parts of chicken tenders.
- Thread tenders on skewers.
- Grill for 10-15 minutes or until chicken is cooked through.
