- Wash peanuts in several changes of water to get rid of residual dirt. Add peanuts to 3 quart saucepan with enough water to barely cover. Add soy sauce, sugar, salt, cinnamon, star anise, cloves, and dried chili.
- Place pot over high heat and bring to boil. Lower heat to steady but not rolling boil and cook for 3 to 5 hours, depending on how tender you like your peanuts. Check on pot every hour to make sure liquid doesn't dry out. Refill with water, if needed, so that level of liquid just covers peanuts. Alternatively, place water, peanuts, and seasonings in a slow cooker and cook overnight.
- With slotted spoon, retrieve peanuts from braising liquid and serve warm or tepid. Store leftover peanuts in their stewing liquid in the refrigerator.

- Wash peanuts until water is clear. Add water to cover peanuts and soak overnight. Put weight on so that peanuts are soaking.
- Drain and rinse several times until water is clean.
- Add star anise; cover and boil for 30 to 45 minutes, testing to see that peanuts are cooked, but not soft. Do not overcook. Turn off heat, add salt and mix.
- Cover and let stand for approximately 30 to 45 minutes.

- Put peanuts, spices, salt, and roughly 1/4 cup soy sauce in a pot and cover with water. Cover pot and bring to boil. Let simmer for 30-40 minutes, stirring every 7-10 minutes (if you don't, the peanuts floating on top won't cook through). When done (peanuts should be a little crunchy yet smushy in your mouth, and taste done), leave peanuts to soak in the brine while they cool. When cool, drain pot and discard spices; toss peanuts with a little more soy sauce and sesame oil (2 teaspoons each max) and serve cold.

- In a clean wok, add in the air-dried peanuts and enough oil to just cover the peanuts. Then turn on the heat to medium low. Gently and slowly push the peanuts around to heat them evenly and prevent burning.
- You’ll first see small bubbles forming in the oil, and then some steam as the moisture in the peanuts cooks off. Then you’ll begin to hear small popping noises coming from the peanuts. They should be done once that popping sound stops and the pink skins on the peanuts turn a mahogany brown. Because the peanuts can burn easily, it’s a good idea to turn off the heat for the last 1-2 minutes of cooking. This allows the peanuts to continue to cook in the hot oil without the risk of burning.
- Turn off the heat, strain the peanuts out, and spread them out on a baking sheet to cool completely. Sprinkle with salt, and serve.
