When I was sick, my mom would make me this heartwarming chicken noodle soup. It was soothing when I had a cold, but this soup is a bowlful of comfort on any chilly day. -Anthony Graham, Ottawa, lllinois

Number Of Ingredients 10

1 tablespoon canola oil
2 celery ribs, chopped
2 medium carrots, chopped
1 medium onion, chopped
8 cups reduced-sodium chicken broth
1/2 teaspoon dried basil
1/4 teaspoon pepper
3 cups uncooked whole wheat egg noodles (about 4 ounces)
3 cups coarsely chopped rotisserie chicken
1 tablespoon minced fresh parsley

Steps:

  • In a 6-qt. stockpot, heat oil over medium-high heat. Add celery, carrots and onion; cook and stir 5-7 minutes or until tender., Add broth, basil and pepper; bring to a boil. Stir in noodles; cook 12-14 minutes or until al dente. Stir in chicken and parsley; heat through.

Number Of Ingredients 16

1 tablespoon olive oil
1 onion, diced
3 carrots, peeled and diced
2 celery ribs, diced
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon minced lemongrass
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh rosemary
5 cups chicken stock
2 bay leaves
1 pound boneless, skinless chicken thighs
3/4 cup uncooked ditalini pasta
Juice of 1 lemon
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh chives

Steps:

  • Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in garlic, ginger, lemongrass, thyme and rosemary until fragrant, about 1-2 minutes. Whisk in chicken stock, bay leaves and 1 cup water; bring to a boil. Add chicken; reduce heat and simmer. Cook, covered, until the chicken is cooked through, about 10-12 minutes. Remove chicken and shred, using two forks; set aside. Stir in pasta and cook until tender, about 8-10 minutes. Stir in chicken and lemon juice; season with salt and pepper, to taste. Serve immediately, garnished with chives, if desired.

1 ¾ pounds diced chicken breast meat
2 green bell peppers, diced
2 red bell peppers, diced
1 onion, diced
½ cup frozen corn kernels
4 (15 ounce) cans kidney beans with liquid
2 (14.5 ounce) cans diced tomatoes
1 (15 ounce) can tomato sauce
2 cups water
2 teaspoons chili powder
1 tablespoon dried parsley
1 teaspoon garlic powder
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin

Steps:

  • Coat a large pot with cooking spray and place over medium-high heat. Cook and stir chicken, bell peppers and onion until chicken is brown and peppers are just tender. Stir in corn, beans, tomatoes, tomato sauce and water. Season with chili powder, parsley, garlic powder, cayenne and cumin. Reduce heat, cover and simmer 30 minutes.

4 medium potatoes, cut to medium pieces
1/2 large onion
2 large carrots
1 (14 ounce) can chicken broth
1/3 cup thin pasta
2 tablespoons instant rice
1 (6 ounce) can chicken meat
salt & pepper

Steps:

  • Boil fast in a little water add margarine, potatoes, onion,& carrots until 10 minutes from being done.
  • Add chicken broth or buillion, pasta,& rice.
  • Add chicken.
  • Salt& Pepper.
  • Cook about 10 minutes.
  • Until pasta and rice are done.

  • Put chicken into pot and cover with water.
  • bring to rapid boil.
  • after boiling skim fat off the top and reduce to low boil.
  • add diced onions, carrots, celery, bay leaf and salt and pepper.
  • let cook on low boil for an hour or until ready to serve.
  • when ready to serve, take out chicken and cut into pieces, add peices back into soup and enjoy.
  • Note: you make also cook noodles or rice and add once ready to serve.
