Steps:
- In a blender or food processor puree strawberries. Pour into a large bowl and add half and half, sour cream, sugar and lemon juice. Stir until well combined. Chill.
- Serve with garnish of mint leaves
COLD STRAWBERRY SOUP WITH STRAWBERRY CREAM QUENELLES

- The Quenelles
- Place 1/4 cup of the heavy cream in the top of a double boiler. Sprinkle with the gelatin and let sit for 5 minutes.
- Meanwhile, puree the strawberries in a food processor with the sugar.
- Whip the remaining 3/4 cup of cream.
- Place the gelatin mixture over boiling water and stir until the gelatin melts (about 3 minutes).
- Place a mixing bowl over ice and combine the gelatin mixture in it with the strawberry puree. Fold in the whipped cream. Refrigerate for about 1-2 hours.
- Sliced Strawberries
- Combine the ingredients in a mixing bowl and marinate for at least 1 hour.
- The Strawberry Soup
- Puree the strawberries with the sugar and the lemon juice in a food processor. Chill.
- Assembly
- When ready to serve, divide the strawberry soup among 6 wide, shallow soup bowls.
- Working with 2 teaspoons, form ovals from the strawberry quenelle mixture. You should have about 18 quenelles. Place 3 quenelles in each bowl of strawberry soup, at 12 o'clock, 4 o'clock, and 8 o'clock. Garnish the bowls with the marinated strawberry slices and with fresh mint leaves.
- Wine Selection: Serve with young Asti Spumante or Moscato d'Asti.
CHILLED STRAWBERRY MOUSSE

- Cut a piece of foil or parchment longer than the circumference of a 6-cup/1.5-liter mold. Double it for stiffness. Wrap around the outside rim so that it rises at least an inch above the top of the dish, and tape to secure.
- Puree the berries with 1/4 cup/55 g sugar, the lemon juice and salt. Strain and reserve.
- Put the yolks in a nonreactive bowl with 1/4 cup/55 g sugar and 1/2 cup/125 g of the berry puree. (Reserve the remaining puree for another use.) Set the bowl over a saucepan of barely simmering water, making sure the bowl does not touch the water below, and whisk until the sugar dissolves and it is warm in the center. Remove the bowl from the saucepan and set aside.
- Put 1/4 cup/60 ml water into a ramekin, sprinkle the gelatin on top and let soften 5 minutes. Set the ramekin in the hot water in the saucepan (make sure the water does not come up over the edge of the ramekin) and let it melt, about 2 minutes. It should be translucent. Whisk this into the berry mixture, and let cool until it thickens slightly. Don't let it set too far.
- Beat the whites with the cream of tartar until foamy. Gradually incorporate the remaining 1/4 cup/55 g sugar, and beat to thick, shiny peaks like whipped cream. Whip the cream in a separate bowl. Stir a spoonful of the whites into the berry mixture to lighten it. Scrape the remaining whites and cream on top and fold together.
- Spoon into the prepared mold, cover and refrigerate until firm, about 4 hours.
- To serve, remove the collar and spoon into dishes. This is best eaten on the day it is made or the next day. After that, the gelatin starts to break down.
CHILLED STRAWBERRY SOUP
When I went on a cruise I discovered that I loved chilled fruit soups - this recipe is from the Cruise Cookbook (A Culinary Journey - Princess Cruises).

- In a blender or food processor puree the strawberries with the grape juice. Set aside 1/2 cup of the puree to serve as a garnish.
- Add the remainder of the soup ingredients (yogurt - nutmeg) to the blender and puree.
- Adjust seasonings and chill well. You may want to adjust seasonings again before serving.
- To serve: Serve the soup in a chilled bowl. Using a ring mold arrange the sliced strawberries in the center of the bowl. Fill the strawberry ring with creme fraiche. Pour the soup in the chilled bowls and garnish with drops of the reserved strawberry puree and more creme fraiche. Garnish with edible flowers, pink peppercorns and fresh mint.

- Line a 9x5-in. loaf pan with a double thickness of foil; set aside. In a large bowl, beat the cream cheese, sugar and sour cream until smooth. Fold in strawberries and whipped topping. Pour into prepared pan. Cover and freeze for several hours or overnight., In a small saucepan, bring the blueberries, sugar and water to a boil; cook and stir for 3 minutes. Cool slightly. Transfer to a blender; cover and process until pureed. Refrigerate until chilled., Remove dessert from the freezer 15-20 minutes before serving. Use foil to lift out of pan; remove foil. I got this recipe off of Allrecipes. I love strawberries and this is the ultimate. It can be used as a soup to start a summer meal, or as a very thick smoothie to be drank anytime. It is a very eye appealing dish, especially when topped with fresh strawberry slices and a swirl of whipped cream. Cook time is actually chill time.
