1 tablespoon vegetable oil
1 medium onion, chopped
1 lb lean ground beef
1 1/2 teaspoons dried oregano
3 tablespoons chili powder
1 teaspoon salt
2 (16 ounce) cans chili beans (pinto beans packed in chili sauce)
1 (28 ounce) can crushed tomatoes
25 ounces frozen cheese ravioli (or so)
4 ounces grated sharp cheddar cheese

Steps:

  • Heat vegetable oil in a wide deep skillet or dutch oven.
  • Add onion, and cook over medium-high heat for 5 mins until onion is translucent.
  • Add ground beef and, using a large spoon or fork to break up, cook until the meat is browned.
  • Add next 5 ingredients, rinsing out each can with a few tablespoons of water and adding the water to the pot.
  • Cook for 15-20 minutes to let the flavors blend.
  • Salt to taste.
  • As the chili simmers, bring a large pot of water to boil and salt the water.
  • When the water boils, add the frozen ravioli, and when the water returns to a boil, lower heat to simmer.
  • Cook 4 or 5 mins until ravioli is cooked through.
  • Place in serving bowls with chili over the top, sprinkled with grated cheese.

1/4 recipe Alton Brown's Meatloaf, recipe follows
1 tablespoon balsamic vinegar
3 tablespoons grated Parmesan
1/2 teaspoon dry oregano
Fresh Pasta Dough, recipe follows
1 egg mixed with 1 teaspoon water (eggwash)
2 tablespoons butter
1 tablespoon sliced sage
6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground sirloin
18 ounces ground chuck
1 1/2 teaspoons kosher salt
1 egg
3 cups all-purpose flour
2 large eggs
3 tablespoons water
1 teaspoon olive oil
1/2 teaspoon salt

Steps:

  • In a bowl, combine the Meatloaf, balsamic vinegar, Parmesan, and oregano, mix well, and set aside
  • Using the Fresh Pasta recipe, roll out your dough either by hand or by machine.
  • After you have rolled the pasta out into sheets, cut the sheet into an even amount of squares. Using a teaspoon fill the center of half with the filling. Brush around the filling with the egg wash and place the remaining squares on top. Press down around the seal to push out any air bubbles.
  • In half a gallon of rapidly boiling salted water add the ravioli in batches. Remove to a strainer.
  • In a separate pan over medium heat place the butter until it just starts to brown. Toss in 10 ravioli until coated. Sprinkle in the sage and toss again to evenly distribute.
  • In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
  • By Hand:
  • On a clean surface make a well with the flour. In a measuring cup mix the eggs, water and oil and salt. Pour the wet mixture slowly into the flour and mix with your 2 fingers until all of the wet is incorporated. Do not force the dough to take all of the flour. If you are going to use a pasta machine to roll out the dough you may at this point form the dough into a disk and cover with plastic wrap. Place in the refrigerator for 1 hour to rest. If you going to roll this by hand you should knead the dough on a floured work surface for 8 to 10 minutes.
  • By Food Processor:
  • In the bowl of your food processor combine the flour and salt and pulse 2 to 3 times. In a liquid measuring cup whisk the eggs, water and oil. While pulsing the machine pour this mixture in a continuous stream and continue running the machine until the dough begins to pull away from the sides of the bowl. Follow directions above for hand rolling or machine.

CRAB AND CHILE RAVIOLI WITH MORNAY SAUCE



Crab and Chile Ravioli with Mornay Sauce image

1 tablespoon butter
1 tablespoon olive oil
1 jalapeno, seeded, finely diced
1 Fresno chile, seeded, finely diced
1 large shallot, finely diced
Kosher salt and freshly ground black pepper
3 to 4 cloves garlic, grated or minced
1/4 to 1/2 cup sherry or dry vermouth
8 ounces lump crabmeat, picked through for shells
1/2 cup combined chopped fresh chives, oregano, parsley and thyme, some reserved for garnish
2 tablespoons butter
2 tablespoons flour
2 cups milk
Freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 cup grated Gruyere
4 sheets fresh pasta, cut into 12- to 14-inch pieces, covered with a clean dish towel until ready to use
Semolina, for dusting
Zest of 1 lemon, for garnish

Steps:

  • For the crab and chile filling: Heat the butter and olive oil in a medium skillet over medium-low heat. Add the jalapeno, Fresno chile and shallots; season with salt and pepper. Let sweat for about 5 to 7 minutes, adding the garlic during the last couple minutes. Raise the heat to medium, add the sherry (to deglaze the pan) and let bubble until almost evaporated. Remove from the heat and let cool to room temperature.
  • Add the crab, herbs and chile-shallot mixture to a medium bowl. Season generously with salt and pepper; set aside.
  • For the Mornay sauce: Melt the butter in a medium pot over medium heat. Sprinkle in the flour and mix with a wooden spoon for a few minutes to make a roux (it should look like wet sand). Whisk in the milk, making sure to scrape the corners of the pan. Bring to a simmer and cook for a few minutes. Season with nutmeg, salt and pepper, and then remove from the heat. Add the Gruyere and stir until fully melted and combined. Add about a 1/4 cup of the Mornay sauce to the crab mixture to bind.
  • For the ravioli: Place a sheet of pasta on a work surface. Fold it in half the wide/long way to make a slight crease down the middle, then lay back out flat. Place 1 to 2 tablespoon-size dollops of the crab mixture every few inches on one half of the pasta sheet. Brush a little water on the border of the pasta sheet and around each ravioli. Fold the top half of pasta sheet over to cover the filling, squeezing out as much air as possible (so they don't pop open in the water). Use a knife, pasta roller or ring cutter to cut out the ravioli. Dust with semolina and reserve on a parchment-lined baking sheet. Repeat with the remaining pasta sheets and crab mixture.
  • Bring a wide shallow pot of salted water to a boil.
  • Warm the remaining Mornay sauce in a large skillet over medium-low heat. Use pasta water to thin to the desired consistency as needed.
  • Cook the ravioli in the boiling water, in batches if necessary, until they float to the top, a few minutes. Transfer the ravioli straight into the skillet with the Mornay sauce and toss gently to coat. Place 3 to 5 ravioli on a plate and spoon a little more Mornay sauce on top. Garnish with the chopped herbs and lemon zest.

2 cups all-purpose flour, plus more for dusting
Kosher salt
2 large eggs plus 7 large egg yolks
Splash of extra-virgin olive oil
Semolina flour, for dusting
1 pound shrimp, peeled and deveined
4 small jarred Calabrian chiles, plus a teaspoon of chile oil
3 strips raw bacon, diced
Zest of 1 lemon
Kosher salt
1/4 cup fresh basil leaves
Extra-virgin olive oil, for cooking and drizzling
1 small shallot, diced
3 cloves garlic, minced
4 to 5 sprigs fresh thyme, leaves picked
1 1/2 cups cherry tomatoes, cut in half
Kosher salt and freshly ground black pepper
1/4 cup vodka
1 cup heavy cream
1/2 teaspoon jarred crushed Calabrian chiles
Juice of 1/2 lemon
6 fresh basil leaves, plus more for garnish
Grated Parmesan, for garnish

Steps:

  • For the pasta: Mound the flour on a work surface. Season with a pinch of salt. Make a deep well in the middle of the flour, about 6 inches in diameter. Combine the eggs, egg yolks, olive oil and a pinch of salt together in a mixing bowl and mix well. Slowly add the egg mixture to the well in the flour, using a fork to start grabbing bits of flour from the outside of the well to mix into the egg mixture in the middle. Keep incorporating the sides of the well into the center until a tacky dough ball is formed. Knead the dough ball by hand until all the flour has fully incorporated. Wrap the dough ball well and let rest in the refrigerator for about 1 hour.
  • For the filling: Combine the shrimp, Calabrian chiles, bacon, lemon and pinch of salt in a food processor. Puree for 10 to 15 seconds, then scrape down the sides and add the basil. Puree briefly until combined.
  • Using a pasta roller, roll out the dough into 2 sheets of pasta thin enough to where you can feel your fingers through them (usually a number 5 to 6 on the sheeter setting). Place one sheet of the pasta dough on a well-floured surface. If using a cutter to make ravioli shapes, gently mark on the pasta sheet to see where the filling should be piped. Brush the dough with water. Add dollops of filling spaced out evenly across the middle of the sheet, using the marks as a guide. Gently brush a little bit of water over the second sheet of pasta. Place the sheet, dampened-side down, over the one with the filling, gently lining up the edges. Using your fingers, press and seal around the filling, making the seal as airtight as possible. Use a ring cutter or knife to cut out ravioli. Use your fingers to gently seal the edges and remove any air pockets and transfer the ravioli to a baking sheet sprinkled with semolina.
  • For the sauce: Put a bit of olive oil in a large saute pan over medium-high heat. Add the shallots, garlic and thyme leaves, then add the tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes start to soften and burst, 7 to 10 minutes. Move the shallot mixture to one side of the pan, then remove the pan from the heat and deglaze with the vodka. Carefully ignite the vodka, slightly tipping the pan away from you. Once the flame subsides, return to the heat and cook at a simmer until the vodka has been reduced to 1 tablespoon, about 2 minutes. Add the cream, crushed Calabrian chiles, lemon juice and basil leaves and cook until the sauce is thickened and has reduced by about half, about 5 minutes.
  • Bring a large pot of salted water to a boil and drop the fresh ravioli in. Cook just until it floats, about 1 1/2 minutes. Take the ravioli out of the pot with a skimmer or slotted spoon and place in the saute pan with a splash of pasta water. Toss the sauce and ravioli together over low heat.
  • Using a large spoon, place the ravioli on plates and add more sauce over the top. Drizzle with olive oil and garnish with fresh basil leaves and grated Parmesan.

SPICY CHILI AIOLI

Originally inspired by a local sushi restaurant, I went through a number of different aioli recipes until I finally found a basic combination of ingredients, all of which have become the foundation for this and a couple of other recipes. We enjoy this on just about everything - crab cakes, fish tacos, sushi, vegetables, you name it... If you enjoy this, please also try my curry and saffron aioli recipes for a different twist... A couple of notes with respect to ingredients. Avoid substitutions where possible - I tried a number of different recipes before I arrived at this one, and some of them weren't so pleasant... Please consider using Hellman's original mayonnaise when making this recipe - avoid using Kraft, Miracle Whip, and sweet mayonnaises at all costs. If you use a low fat mayo, I also recommend Hellman's. Chili garlic oil can be found at just about any asian grocery - the main ingredients are garlic, chili, and oil. It is very thick in appearance and looks like the result of dried chilies, garlic, and oil being pureed in the food processor. This isn't to be confused with Sriracha or chili sauce. 2 -3 garlic cloves, pressed

  • Combine mayonnaise, and lemon juice with a wire whisk, mixing together until uniform.
  • Add pressed garlic and chili paste and continue to mix once again until uniform in texture.
  • Serve aioli in a small ramekin, bowl, or directly on top of food and garnish with a sprinkle of cayenne pepper. Serve cool to slightly below room temperature.

I got this recipe from an online OAMC blog (the author of the blog says it's adapted from a Sandra Lee recipe). It's different than most OAMC recipes I find, so I was eager to try it. Both my fiance and I really enjoyed it. It's richer than my usual fare, but don't mind making it every now and then as a little treat. The poultry seasoning is an interesting, but necessary addition; it's not an identifiable flavor in the finished sauce, but definitely adds a nice level of flavor.

1 (15 ounce) jar alfredo sauce
1 (14 1/2 ounce) can fire-roasted tomatoes, undrained

1/2 teaspoon poultry seasoning
shredded parmesan cheese

Steps:

  • Mix together the alfredo sauce, fire roasted tomatoes, chili powder, and poultry seasoning.
  • Split sauce in half and place in Ziploc bags; freeze flat.
  • Once frozen, place in larger Ziploc bags along with half of the ravioli per bag.
  • On cooking day, defrost sauce in fridge over night. Heat in a saucepan on the stove top.

3/4 cup part-skim ricotta cheese
1/4 cup grated reduced-fat mozzarella cheese
2 tablespoons grated parmesan cheese
1 egg
1/4 cup chopped fresh basil, plus additional
fresh basil, for garnish
1 garlic clove, finely chopped
1/8 teaspoon ground nutmeg
1 teaspoon sea salt
ground black pepper
24 wonton wrappers
2 1/2 cups tomato sauce

Steps:

  • In a medium bowl, combine the ricotta, mozzarella, Parmesan, egg, basil, nutmeg, and salt and pepper to taste.
  • Place 1 rounded teaspoon of filling in the center of each wonton wrapper.
  • Brush the edges of a wonton wrapper lightly with water.
  • Fold the wrapper in half, making sure all the filling remains inside.
  • Seal the edges by pinching.
  • Continue with the remaining filling and wrappers.
  • Add salt to large pot of boiling water.
  • Gently add the ravioli, and cook for about 3 minutes, or until tender, stirring gently.
  • Meanwhile, in a small pot over low heat, cook the tomato sauce.
  • Using a large slotted spoon, place the ravioli into 4 individual bowls.
  • Pour the sauce over each serving, and garnish with the additional basil.

  • Measure flour into a large bowl and make a well in the center. Crack eggs into the center. Beat eggs with a fork until blended. Use the fork to gradually draw in flour from the sides, mixing until all the flour is incorporated.
