1 1/2 pounds pork fatback, cubed, frozen
3 1/2 pounds pork shoulder, cubed
1/4 cup pickled jalapenos, finely chopped
5 ounces frozen sharp Cheddar, grated
1 heaping tablespoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon ground allspice
1/4 teaspoon ground mace
1 teaspoon ground black pepper
1/4 bunch fresh thyme leaves
Sausage casings, for stuffing
1 onion, diced
2 cloves garlic, diced
Olive oil
1 bay leaf
2 heaping teaspoons chili powder
Half 14-ounce bottle ketchup
1/4 cup yellow mustard
1 handful salt
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons white vinegar
Pinch sugar
Pinch celery seed
Kosher salt and freshly ground black pepper
2 limes, zested, plus the juice of 1 lime
1 Savoy cabbage, cut into chiffonade
2 scallions, sliced
2 tablespoons finely chopped fresh cilantro
4 hot dog buns

Steps:

  • For the sausage: Mix together the pork shoulder and fatback in a bowl and run twice through a meat grinder, first using the medium grinder-plate and again using the small grinder-plate. Set aside one-third of the mixture for the chili.
  • Transfer the remaining ground meat to a large mixing bowl. Add the pickled jalapenos, Cheddar, salt, garlic powder, onion powder, allspice, mace, black pepper and thyme. Mix well.
  • Using a sausage stuffer, stuff the meat mixture into the casings. Twist into links and cut to separate.
  • Bring a pot of water to a boil; add the sausage links, making sure they're submerged. Turn down the heat and simmer the sausages until cooked through, about 10 minutes. Remove from the pot and dry on paper towels. Set aside.
  • For the sausage chili: In a pan over low heat, sweat onions and garlic in some olive oil, about 5 minutes. Raise the heat to medium high, add the reserved ground sausage mixture and cook until browned, another 5 minutes.
  • Add the bay leaf, chili powder, ketchup, mustard and salt; mix well. Turn down the heat and simmer for 20 minutes. Turn off the heat and set aside.
  • For the slaw: In a mixing bowl, combine the mayonnaise, sour cream, vinegar, sugar, celery seed, some salt and pepper, and the lime zest and juice. Mix well.
  • In another mixing bowl, combine the cabbage, scallions and cilantro. Pour the dressing over and mix well. Set aside.
  • To assemble: Grill the sausages until nicely golden brown. Place a sausage link into a bun, top with chili and then with the slaw.

1 tablespoon vegetable oil
2 pounds Andouille, or other spicy, smoked link sausage, cut into 1/2-inch pieces
2 cups chopped yellow onions
1 tablespoon minced garlic
2 tablespoons chili powder
1 tablespoon Essence, recipe follows
2 teaspoons ground cumin
1 (12-ounce) bottle dark beer
1 (28-ounce) can whole tomatoes, crushed, and their juices
1 (28-ounce) can whole tomatoes, crushed, and their juices
3 tablespoons tomato paste
1 teaspoon sugar
6 cups cooked red kidney beans, drained and rinsed
Salt and freshly ground black pepper
1 cup grated cheddar cheese, garnish
1 cup finely chopped green onions, garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a large heavy pot, heat the oil over medium-high heat. Add the sausage and brown on all sides, about 5 minutes. Add the onions, garlic, chili powder, Essence, and cumin and cook, stirring often, until soft, about 4 minutes. Deglaze the pan with the beer and cook until the foam subsides, about 1 minute.
  • Add the tomatoes, tomato paste, sugar, and kidney beans to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally to prevent the chili from sticking to the bottom of the pot. Season with salt and freshly ground black pepper, to taste.
  • Remove from the heat and transfer to a thermos. To serve, ladle into bowls or thick cups. Sprinkle each serving with grated cheese and green onions, and serve hot.
  • Combine all ingredients thoroughly.

I've added pork to ground beef in chili before, but I've never tried it with all Italian sausage, and I loved the results. We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

1 tablespoon olive oil
1 ¼ pounds hot Italian sausage, casings removed
1 ¼ pounds mild Italian sausage, casings removed
1 onion, chopped
salt to taste
2 tablespoons ancho chile powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground black pepper
½ teaspoon chipotle chile powder
½ teaspoon dried oregano
2 ½ cups water, or as needed
1 cup tomato puree
2 (15 ounce) cans cannellini beans, drained and rinsed
1 red bell pepper, diced
1 green bell pepper, diced

Steps:

  • Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
  • Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.
  • Pour water and tomato puree into sausage mixture, bring to a simmer, reduce heat to medium-low, and cook on a steady simmer until sausage is tender, about 45 minutes. Add water as necessary and skim any fat that floats to the top.
  • Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer until vegetables are tender, about 30 minutes. Season with salt to taste.

3/4 cup water
1 cup onion, diced
1 cup green bell pepper, diced

  • Brown& crumble sausage in large skillet.
  • Add onion and cook till tender and sausage is no longer pink, carefully drain off excess drippings.

2 packages regular flavor pork sausage (works well with deer sausage or one package reg and one hot)
2 chopped onions
1 (15 ounce) can tomato sauce
2 (15 1/2 ounce) cans pinto beans
1 cup water
1/2 cup chili powder
2 alarm chili seasoning mix (everything except the Masa)

Steps:

  • In large saucepan, cook sausage and onions over medium high heat, stirring frequently until meat is thoroughly cooked and no longer pink.
  • Add remaining ingredients; bring to a boil.
  • Cover and reduce heat to low; simmer for 30 minutes, stirring occasionally. If you are in a hurry and don't want to wait for it to thicken up, use the Masa from the 2 Alarm box.
  • Add salt and pepper to taste.
  • Makes 6-8 servings.

1 pound bulk pork sausage
4 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (10 ounces each) diced tomatoes and green chiles, undrained
1 large onion, chopped
1 medium green pepper, chopped
1 envelope taco seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
Shredded cheddar cheese, optional
Chopped red onion, optional
Sour cream, optional

Steps:

  • In a large skillet, cook beef and sausage over medium heat until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. , Cover and cook on high for 4-5 hours or until vegetables are tender. If desired, serve with shredded cheese, chopped onion and sour cream. , Freeze option: Before adding toppings, cool chili. Freeze chili and toppings separately in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Sprinkle with toppings.

Most chili recipes contain the usual meats such as ground beef, chicken or venison. I decided to try and create a new recipe for chili by using smoked sausage. If I do say so myself, ;) it turned out pretty good. This serves two very hungry people. If you like, top each serving with shredded sharp cheddar cheese. Submitted to "ZAAR" on December 27th, 2007.

2 tablespoons canola oil
1/2 cup finely chopped white onion
1/2 lb smoked sausage, cut into 1/4 inch slices, then cut into quarters
1/4 cup chili seasoning mix (I used Chili Seasoning Mix)
1 (15 ounce) can kidney beans, undrained
1 (14 1/2 ounce) can peeled chili ready diced tomatoes, undrained
1/3 cup dry elbow macaroni
1/2-3/4 cup water

Steps:

  • In a dutch oven over medium heat, add oil heat until hot but not smoking.
  • Add chopped onion and smoked sausage; cook until onion is soft and sausage is browned.
  • Then add chili seasoning, beans, and tomatoes.
  • Stir until seasonings are blended well.
  • And macaroni and water; turn heat down and simmer for 20 minutes or until pasta is al denté (you might need more water to get the pasta to your desired doneness).
  • Serve and enjoy :)!

Steps:

  • Brown ground beef, set aside.
  • Cook sausage whole, lightly burning the skin on all four sides.
  • Remove sausage from pan, Slice into relatively thick (1 cm) slices, and then slice those in half. Return to pan and cook until each piece is lightly burnt.
  • Saute onions and garlic until onions are slightly wilted.
  • Add all ingredients to a large stew pot, simmer for 2 hours, stirring occasionally.
  • Serve with cheddar cheese, sour cream, and fritos as desired.
