Simple seasones and pan-seared cube steaks are cooked in a skillet then covered with a sweet, spicy, and savory chili-lime sauce. A fast family meal bursting with flavor.

2 limes, (zested and juiced)
2 Tablespoons chili paste ((recommended: Gourmet Garden))
1 Tablespoon honey
1-1 1/4 lbs. cube steaks ((4 steaks about 4-5 oz. each))
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon olive oil
Additional lime slices, cilantro, and sliced scallions for garnish, if desired

Steps:

  • In a small bowl, whisk together the lime juice and zest, chili paste, and honey. Set aside.
  • Season the cube steaks with salt, pepper, and garlic powder.
  • Heat a 10-inch cast iron skillet over high heat. Add the olive oil and swirl to coat the pan.
  • Carefully place steaks in the pan. Depending on the size of your pan and steak, you may need to do this in two batches. Sear for about 3-4 minutes, or until browned, then flip over and sear the other side for another 3-4 minutes.
  • If you seared the steaks in batches, return all steaks to the pan and pour the chili-lime sauce over the steaks. Let reduce and thicken for a minute or two, turning the steaks to coat them completely in the sauce.
  • Remove from the pan and serve immediately. Garnish with additional lime slices, chopped cilantro, and/or sliced scallions, if desired.

1/4 cup lime juice
6 garlic cloves, minced
4 teaspoons chili powder
4 teaspoons canola oil
1 teaspoon salt
1 teaspoon crushed red pepper flakes
1 teaspoon pepper
2 beef flank steaks (1 pound each)

Steps:

  • In a small bowl, mix the first seven ingredients; spread over both sides of steaks. Place in a large resealable plastic bag; refrigerate 6 hours or overnight, turning occasionally., Grill steaks, covered, on a greased grill rack over medium heat or broil 4 in. from heat 6-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let steaks stand 5 minutes. Thinly slice across the grain.

½ lb top sirloin steak
pico de gallo, or salsa of your choice
4 corn tortillas
1 ripe avocado
⅓ cup fresh cilantro
3 tablespoons lime juice
⅔ cup water
salt, to taste
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 clove garlic, minced
2 tablespoons lime juice, or 1 lime

Steps:

  • Place the avocado, cilantro, lime juice, water, and salt in a blender or food processor. Blend until smooth and set aside.
  • In a small bowl, combine the chili powder, cumin, oregano, salt, pepper, garlic, and lime juice.
  • Rub the chili lime rub all over the steak in a thin, even layer.
  • Grill the steak on either a grill or stove-top grill pan. To get the "X" grill marks, sear the steak for 1 minute, then adjust about 90 degrees and grill for another minute. Flip the steak when you've achieved desired grill marks and repeat the process on the other side.
  • Allow the steak to rest for 5-10 minutes once taken off the heat.
  • Slice the steak thinly, against the grain of the meat.
  • Prepare the tacos by topping the corn tortillas with a few strips of meat, salsa, the avocado cilantro lime sauce, and cilantro, and serve.
  • Enjoy!

As we head into grilling season, this is something you should definitely add to the rotation. New York strip steaks are dry-brined with a chili rub, grilled to perfection, and topped with a rich garlic-lime butter providing a flavor profile similar to that of a bowl of chili. Serve with a cold potato salad, baked or barbecued beans, or a green salad if desired.

2 teaspoons chili powder
½ teaspoon ground cumin
½ teaspoon ground chipotle powder
1 teaspoon freshly ground black pepper
3 pinches cayenne pepper
2 (10 ounce) New York strip steaks
1 ½ teaspoons kosher salt
1 clove garlic, sliced
1 pinch salt
2 tablespoons salted butter, softened
1 medium lime, zested
1 teaspoon vegetable oil
grated lime zest for garnish

Steps:

  • Mix chili powder, cumin, chipotle powder, pepper, and cayenne for rub together in a small bowl.
  • Place steaks on a large plate. Sprinkle kosher salt generously on both sides, then sprinkle rub over the salt.
  • Twist 3 pieces of foil into 1/2-inch diameter rolls and place them under the steaks to act as a rack and lift the steaks up from the plate. Pop steaks into the fridge and leave uncovered to dry-brine for 3 to 12 hours.
  • Meanwhile, place garlic and salt for garlic-lime butter in a mortar. Grind to a paste with a pestle. Add butter and lime zest and stir with a small spoon to combine. Set aside.
  • Preheat a charcoal grill for high heat. Remove steaks from the refrigerator and brush with vegetable oil on both sides.
  • Place steaks on the preheated grill and cook until firm and reddish-pink and juicy in the center and meat gently springs back to the touch, about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium-rare.
  • Remove from the grill and top with garlic-lime butter.

CHILI-LIME FLANK STEAK

Give your flank steak a sweet and spicy kick with a delicious rub made from a blend of different chili powders, cumin, brown sugar and thyme. Finish it off with a squeeze of fresh lime when it comes off the grill.

1 lime, plus wedges for serving
1 tablespoon chili powder
1 tablespoon packed light brown sugar
2 teaspoons chopped fresh thyme
1 teaspoon ground cumin
1 teaspoon chipotle chile powder
Kosher salt and freshly ground pepper
1 1 1/2- to 2-pound flank steak
Vegetable oil, for the grill

Steps:

  • Grate the zest of 1 lime; cut the lime in half. Combine zest with the chili powder, brown sugar, thyme, cumin, chipotle powder, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Squeeze the zested lime over the steak and use the lime halves to rub the juice into the meat. Rub the spice mixture on both sides of the steak. Let stand at room temperature, 30 minutes.
  • Meanwhile, preheat a grill to medium high. Brush the grates with vegetable oil. Grill the steak until well browned, about 8 minutes. Flip and grill until a thermometer inserted sideways into the center registers 130 degrees F to 140 degrees F, 5 to 7 more minutes for medium rare (the thinner edges of the steak will be cooked to medium).
  • Transfer to a cutting board and let rest 10 minutes. Season with salt and thinly slice against the grain. Serve with lime wedges.

this is my creation. I wanted something different, and I wanted to use up my bottle of chili sauce. The great thing about this dish is the fact that you can make it as mild or as firey as you wish! Its great tasting, and simple. Don't let the time it takes fool you! It's made in a dutch oven over low heat, so basically you can walk away and let it cook.

4 -5 cube steaks
1 (2 1/2 ounce) package onion soup mix (dry)
1 cup water
1 teaspoon minced dried onion
1/2 teaspoon penzy's beef roast seasoning
1 (8 ounce) can tomato sauce
salt and pepper, to taste
2 tablespoons bottled. chili sauce
2 -3 tablespoons oil
1 (8 ounce) can sliced mushrooms

Steps:

  • Put the oil in a dutch oven, and fry steaks over high-medium heat til browned.
  • Add soup mix, water, minced onion,pepper,salt if desired,and cover with lid. turn heat to low and let simmer for 30 minutes. Check on it occassionally.
  • Add rest of ingredients, and cook another 30 minutes.
  • Can be served over noodles,if desired.
