GRILLED T-BONES WITH CHIPOTLE CHILI RUB AND CILANTRO-LIME COMPOUND BUTTER

Grilled T-Bones with Chipotle Chili Rub and Cilantro-Lime Compound Butter image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 29m

Yield 4 servings, plus extra reserved compound butter

Number Of Ingredients 7

2 sticks butter
3 tablespoons finely chopped cilantro leaves
1 lime, juiced and zested
2 tablespoons steak seasoning blend for the grill (recommended: Montreal Seasoning by McCormick)
1 tablespoon chipotle (smoky) ground chili powder or dark chili powder
1 tablespoon sweet paprika
4 T-bone steaks, 1 1/2 inch thick

Steps:

  • Preheat a two-burner grill pan over high heat or a table-top electric grill to high or preheat the outdoor grill.
  • Cut butter into chunks. Place butter in a bowl. Place bowl in microwave and cook on high for 15 seconds. To chop herbs super-fine, hold the tip of your knife on a cutting board and move the back of your knife up and down very fast going over the herbs again and again. Stir in chopped cilantro and lime zest and juice into the butter using a rubber spatula. Transfer the butter onto a large strip of plastic wrap.
  • Gather the ends of the plastic wrap in on 1 hand and use a straight edge, like a small cookie sheet pan, to push the butter back and away from your body making the butter take on a log shape. Gently roll the log wrapped in plastic back and forth on the countertop to evenly round out the shape. Twist up the extra wrap on the ends and place the compound butter log into the freezer to make the butter cold enough to slice again.
  • Remove the steaks from the refrigerator and unwrap.
  • Combine the steak seasoning blend with hot chipotle pepper and sweet paprika. A tablespoon is about a palm full of powdered or ground seasonings. Rub the seasoning blend into the steaks, distributing the spices evenly among them. Go wash up. Using tongs, place steaks on screaming-hot grill, carefully place the thin tip of 1 steak facing the wide end of the next so that all 4 steaks fit onto the grill pan or grill grate at the same time. Cook steaks 6 to 7 minutes on each side for medium doneness. Remove steaks and let them rest so that the juices can redistribute, 5 minutes.
  • When ready to serve, top steaks with disks of sliced compound butter and serve with salad or vegetables on the side. The smashed cheesy potatoes and sauteed sliced vegetables make especially tasty side dishes for these steaks.

GRILLED CORN WITH CHILI LIME BUTTER

Grilled Corn With Chili Lime Butter image

Chili lime butter adds a delicious finishing touch to grilled corn on the cob. Perfect to accompany any barbecue gathering, large or small. The butter can be flavored one day ahead and then brought to room temperature before serving.

Provided by Chef Kate

Categories     Corn

Time 30m

Yield 6 ears of corn

Number Of Ingredients 7

6 tablespoons butter, softened
1/4 teaspoon chili powder
1/2 teaspoon lime zest
1 teaspoon fresh lime juice
1/2 teaspoon jalapeno, minced (or to taste)
salt
6 ears corn, in the husks

Steps:

  • Place the butter in a small bowl, add the chili powder, lime peel, lime juice, jalapeño and salt and mix well.
  • Shape the butter into any form you like, cover and place in the refrigerator until shortly before ready to serve, at which time allow butter to soften.
  • Heat grill to medium-high.
  • Place corn (in husk) on the grill, rotating the corn so you cook on all sides, for approximately 15 minutes total.
  • Remove from grill and cool slightly (so you are able to peel the husk) and peel. Place corn back on grill over the same flame for about 4 minutes, once again rotating the corn for even grill marks.
  • Serve the corn immediately with the chili lime butter.
  • Cooking option: Place the corn (in the husk) on a plate and microwave for 5 minutes (21/2 minutes per side); when ready to grill, remove the husks and grill over a medium-high flame for about 2 minutes per side.

GRILLED PORTERHOUSE STEAK WITH CILANTRO LIME COMPOUND BUTTER

Grilled Porterhouse Steak With Cilantro Lime Compound Butter image

These steaks are great on their own! But even better with the compound butter. Note: Cooking time varies depending on the thickness of the steak, and how you like it cooked. Helpful hint: Go to www.omahasteaks.com, on the bottom of the page click on resources and cooking charts, then steaks. Other uses for compound butter: add to baked potato or mashed potatoes; spread on crusty bread; shrimp (top on shrimp and bake).

TORN POTATOES OF MANY COLORS WITH CHILE-LIME BUTTER

Torn Potatoes of Many Colors With Chile-Lime Butter image

Sure, you could use just one kind of potato for this side dish, but we think the more, the better. Look for different varieties of potatoes that are around the same size for even roasting. Once roasted, tear them into pieces, dot them with a make-ahead cilantro, lime, and chile compound butter, and scatter pomegranate seeds over-and you may never want to serve sweet potato casserole again.

Yield 10-12 servings

Number Of Ingredients 8

1 serrano chile, coarsely chopped, seeds removed if desired
2 cups cilantro leaves with tender stems (about 1 bunch)
1 cup (2 sticks) unsalted butter, room temperature
2 tsp. finely grated lime zest
2 tsp. kosher salt
5 lb. potatoes of mixed colors and similar sizes (such as sweet, purple sweet, russet, and/or Yukon Gold), scrubbed
1 1/2 cups pomegranate arils (from 2 pomegranates)
Lime wedges and flaky sea salt (for serving)

Steps:

  • Pulse chile and cilantro in a food processor until finely chopped. Add butter, lime zest, and kosher salt and pulse until smooth. Transfer to a sheet of parchment paper and roll into a 6"-long log. Chill until firm, at least 2 hours and up to 3 days.
  • Preheat oven to 375°F. Arrange potatoes in an even layer on a rimmed baking sheet and cover tightly with foil. Roast 40 minutes. Remove foil (save for later!), turn potatoes, and continue to roast, uncovered, until largest potato is very tender when pierced with a paring knife or fork, 20-30 minutes.
  • Unwrap chile-lime butter and thinly slice crosswise. Using two forks, tear potatoes (including skins) into 3"-4" pieces. Transfer to a large (preferably warmed) platter. Using your hands, crumble and scatter butter over potatoes (yes, use all of the butter). Cover with reserved foil and let sit until butter is mostly melted, 3-4 minutes. Top with pomegranate arils, squeeze lime juice over, and sprinkle with sea salt.

CHILI GARLIC LIME COMPOUND BUTTER FROM PLATTERS AND BOARDS

Chili Garlic Lime Compound Butter from Platters and Boards image

Reprinted from Platters and Boards by Shelly Westerhausen and Wyatt Worcel with permission by Chronicle Books, 2018. Compound butter is just a fancy way to refer to flavored butters. These can be served soft, right out of the food processor, in a small dish, or rolled in parchment paper and firmed up in the refrigerator before being served by the slice. These butters have a great texture and color that will add depth to any presentation. They go great on fresh vegetables, crackers, or bread slices.
