This Chili Rellenos Casserole is very easy to prepare and is loaded with flavor. Great for a busy week night, and good enough for company.

2 (7 ounce) cans whole green chile peppers, drained
8 ounces Monterey Jack cheese, shredded
8 ounces Longhorn or Cheddar cheese, shredded
2 large eggs, or more to taste
1 (5 ounce) can evaporated milk
2 tablespoons all-purpose flour
½ cup milk
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Evenly layer 1 can chile peppers in the bottom of the baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chile peppers.
  • In a bowl, mix together the eggs, evaporated milk, and flour. If too thick, feel free to add 1/2 cup regular milk. Pour over the top of the chilies.
  • Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes.
  • Sprinkle with remaining Jack and Cheddar cheeses, pop under the broiler for a few minutes, and serve.

1 1/2 cups shredded monterey jack cheese or 1 1/2 cups shredded mild cheddar cheese, divided
1 (4 ounce) can diced green chilies
2 tablespoons flour
1 1/2 cups milk
3 eggs, lightly beaten

Steps:

  • Preheat oven to 350 degrees.
  • Sprinkle 3/4 cup cheese into bottom of a lightly greased 8-inch square baking dish.
  • Top with chiles.
  • Add remaining cheese.
  • Place flour in medium bowl.
  • Gradually add milk, stirring until smooth.
  • Add eggs, stir until well blended.
  • Pour mixture over Cheese.
  • Bake 45 to 50 minutes or until knife inserted in center comes out clean.
  • Serve with Salsa, and desired toppings, such as sour cream, sliced ripe olives, chopped green onions.

1 (16 ounce) can fat-free refried beans
2 (4 1/2 ounce) cans chopped green chilies
1 cup preshredded colby-monterey jack cheese, divided
1 cup frozen whole kernel corn, thawed and drained
1/3 cup all-purpose flour
1/4 teaspoon salt
1 1/3 cups nonfat milk
1/8 teaspoon hot sauce
2 large eggs, lightly beaten
2 large egg whites, lightly beaten
red onion, slices (optional garnish)
chopped cilantro (optional garnish)

Steps:

  • Preheat oven to 350*F.
  • Cook turkey and onion in a nonstick skillet over medium-high heat until browned, stirring to crumble. Remove from heat; add cumin and next 5 ingredients (cumin through beans). Stir well; set aside.

1 pound ground beef
1 green pepper, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1/8 teaspoon garlic powder
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
2 cans (4 ounces each) chopped green chiles
4 large eggs, beaten
1 cup half-and-half cream
1 tablespoon all-purpose flour
1 can (8 ounces) tomato sauce
Additional shredded cheddar cheese, optional

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add the green pepper, salt, pepper, oregano and garlic powder. Cook until green pepper is tender. Combine cheddar and Monterey Jack cheeses; set aside. , In a 2-1/2-qt. baking dish, layer half each of meat mixture, chiles and cheese; repeat with remaining meat mixture, chiles and cheese. 1 cup chopped onion
1 3/4 teaspoons cumin
1 1/2 teaspoons oregano

1 cup colby-monterey jack cheese
1 cup corn, drained
1/3 cup flour

Steps:

  • Cook the chicken and onion in a non-stick pan over medium high heat until brown.
  • Combine chicken mixture with cumin, oregano, garlic powder, salt, pepper, and beans in a bowl.
  • Cut chilis in half, and arrange a layer on the bottom of a 9x12 baking dish.
  • Layer 1/2 of the cheese and 1/2 corn on top, leaving a small border.
  • Spread chicken mixture on top of cheese, also leaving a border, and repeat the layers.
  • Mix the flour and salt in a bowl.
  • Add milk and hot sauce.
  • Stir in eggs and whites.
  • Pour this mixture over the top of the casserole.
  • Bake at 350 degrees for 1 hour or until set.

4 eggs
1 1/2 cups milk
2 tablespoons all-purpose flour
1/2 teaspoon pepper
1/4 teaspoon salt
2 1/2 cups whole green chilies, split open and cut into big pieces
8 corn tortillas
4 cups shredded cheddar cheese (about a pound)
3 cups shredded montereyjack cheese

Steps:

  • Lightly grease 9x13 inch glass baking dish. I use my butter wrappers to grease.
  • Beat first 5 ingredients in medium bowl to blend.
  • Arrange1/3 chilies in prepared dish, covering bottom completely.
  • Sprinkle with 1/3 of each cheese, then cover with 1 layer of tortillas.
  • Repeat layering twice.
  • Pour egg mixture over cheese. Let stand 30 minutes.
  • You an prepare this a day ahead and cover and refrigerate at this point.
  • Otherwise, preheat oven to 350 and bake until casserole is slightly puffed in center and golden brown on edges, about 45 minutes.
  • Cool 20 minutes and serve.

I adopted this from the Recipezaar account. It was good as is, but I had to make a couple changes for it to work for me. Came out a little runny (maybe because I used skim milk), so may need some additional adjustment. I would probably change out the mozzarella for Monterey jack or a Mexican cheese next time also. Good served with sour cream.

2 whole green onions, minced

1/8 teaspoon salt
1/4 teaspoon black pepper
1 (7 ounce) can green chili salsa

It is a good alternative to higher fat, higher cholesterol recipes.

2 (4 ounce) cans chopped green chili peppers, drained
4 -6 ounces longhorn cheddar cheese, shredded
2 cups nonfat milk
1 cup biscuit mix (I use Baking Mix Aka "bisquick".)
1 cup egg substitute, or
4 eggs, lightly beaten
1 cup low fat cottage cheese
salsa (optional)
sour cream (optional)
plain yogurt (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a 2-quart baking dish by spraying with cooking spray.
  • Sprinkle the chopped chili and cheese over bottom of dish.
  • Combine the milk, biscuit mix, and egg substitute in a medium mixing bowl; using a wire whisk beat till smooth.
  • Stir in the cottage cheese and spoon mixture over the chili and cheese.
  • Bake uncovered approximately 45 minutes or until puffed and a knife insered near center comes out clean.

1 cup half-and-half
2 eggs
1/3 cup flour
3 (4 ounce) cans whole green chilies
1/2 lb monterey jack cheese, grated
1/2 lb cheddar cheese, grated
1 (8 ounce) can tomato sauce

Steps:

  • Beat Half& Half with eggs and flour til smooth.
  • Split open the chilies, rinse and remove seeds.
  • Wipe dry with paper towels.
  • Mix together the cheeses setting aside 1/2 cup cheese for the topping.
  • In a 1 1/2 quart casserole dish that is lightly greased layer the chilies, cheese mixture and egg mixture alternating till all is used.
  • Spoon the tomato sauce over the top and sprinkle the reserved cheese over the tomato sauce.
  • Bake uncovered for 1 hour at 375 degrees.

2 large fresh anaheim chilies or 2 large green sweet peppers
1 cup shredded monterey jack pepper cheese
3 beaten eggs
1/4 cup milk
1/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/2 cup Mexican blend cheese (2 ounces)
picante sauce (optional)
sour cream (optional)

Steps:

  • Quarter the peppers and remove seeds, stems, and veins.
  • Immerse peppers into boiling water for 3 minutes; drain.
  • Invert peppers on paper towels to drain well.
  • Place the peppers in a well-greased 2-quart square baking dish.
  • Top with 1 cup of Pepper Jack cheese.
  • In a medium bowl combine eggs and milk. Add flour, baking powder, cayenne pepper, and salt.
  • Beat until smooth with a rotary beater.
  • Pour egg mixture over peppers and cheese.
  • Bake, uncovered, in a 450 degree F. oven about 15 minutes or until a knife inserted into egg mixture comes out clean.
  • Sprinkle with the remaining 1/2 cup cheese. Let stand about 5 minutes or until cheese melts.
  • If desired, serve with picante sauce and sour cream.
