SPICY-SWEET GLAZED SHRIMP

Spicy-Sweet Glazed Shrimp image

Chili sauce and honey are all you need to build major flavor in this shrimp recipe. The glaze caramelizes on the grill for even more complexity. Feel free to try it with bone-in chicken pieces or beef kebabs, too.

CHILE-GARLIC MARINATED AND GRILLED SHRIMP

Chile-Garlic Marinated and Grilled Shrimp image

This quick marinade is a cheater's version of Vietnamese nuoc mam cham, which is a mixture of Asian fish sauce, lime juice, sugar and chiles. Using crushed red pepper flakes rather than the fresh variety means less chopping, and finely grating the garlic into the marinade ensures it doesn't burn on the grill.

Provided by Food Network Kitchen

Time 45m

Yield Serves 4

Number Of Ingredients 9

3 large limes (about 10 ounces)
2 large cloves garlic
2 tablespoons fish sauce
2 tablespoons canola oil
1 tablespoon sugar
1/4 to 1/2 teaspoon crushed red pepper flakes
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced
1/4 cup lightly packed cilantro leaves

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and about 1/4 cup juice) and add to a medium glass bowl. Finely grate the garlic and add to the bowl along with the fish sauce, canola oil, sugar, red pepper flakes and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, grill the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Transfer to a large plate.
  • Top with the sliced scallions and cilantro and serve with the lime wedges.

GRILLED SHRIMP WITH KAHLUA-CHIPOTLE CHILE GLAZE

Grilled Shrimp With Kahlua-Chipotle Chile Glaze image

Recipe by Bon Appetit Chef de Cuisine - Jonathan Lindenauer. We have yet to try these out but they are on my list!!! Bon Appetit magazine, "Fiesta of the Senses" November 2009 edition. Am posting it here for safekeeping. :) Chef Jonathan says "the spices used in the glaze for the shrimp are a signature of Mexican cuisine. The heat they bring and the sweetness of the dish are offset by this bubbly Kahlua cocktail - 2 oz Kahlua Coffe Liqueur in a highball glass and club soda as needed.- a wonderful drink for a holiday toast!" ;)

Categories     Asian

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

1/2 cup Thai sweet chili sauce (Mae Ploy)
2 tablespoons lime juice
1 tablespoon asian fish sauce (nuoc mam or nam pla)
2 tablespoons fresh cilantro, chopped
1 lb fresh shrimp, shelled deveined and rinsed (30 - 35 count)

Steps:

  • Mix chili sauce, lime juice, fish sauce, and cilantro; set aside.
  • Divide shrimp into 4 equal portions. Lay each portion of shrimp in a neat row with tails pointed in the same direction. Thread 2 thin wood or metal skewers (8 to 10 inches long) about 1 1/2 inches apart through center of each row of shrimp, pushing the shellfish close together.
  • Place shrimp on an oiled grill above a solid bed of hot coals or high heat on a gas barbecue (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill.
  • Cook, turning once, until shrimp are pink, 2 to 3 minutes a side.
  • Brush tops of shrimp with the chili sauce mixture, turn over, and cook just until glaze bubbles and browns slightly, about 30 seconds (watch closely; glaze burns easily). Brush tops with more chili mixture, then turn glaze down and cook just until it darkens slightly, about 30 seconds more.
  • Transfer shrimp to plates or a platter. Season to taste with remaining chili mixture and juice from lime wedges.
