Chicken thighs with sun-dried tomato and basil sauce image

Chicken thighs cooked in a luscious, gluten-free creamy sun-dried tomato and basil sauce. Served with rice, it is the perfect fuss-free dinner.

Provided by Alida Ryder

Categories     Chicken     Dinner     Gluten free

Time 55m

Number Of Ingredients 10

8 chicken thighs
1 onion (thinly sliced)
3 garlic cloves (crushed)
½ cup sun-dried tomatoes (in olive oil, sliced)
1 cup basil leaves
1 cup chicken stock
1 cup cream
2 teaspoons corn flour mixed with 1 tablespoon milk
juice of ½ lemon
salt & pepper to taste

Steps:

  • Heat a large, deep pan over medium-high heat and add a splash of oil.
  • Brown the chicken thighs on both sides until they turn a deep golden brown and are cooked 3/4 way through.
  • Remove the chicken from the pan and set aside.
  • Add a bit more oil to the pan if necessary then saute the onion until soft and glossy.
  • Remove the stalks from the basil leaves and chop finely. Reserve the leaves for later.
  • Add the basil stalks and garlic to the onions and saute for 30 seconds before adding the sun-dried tomatoes. Saute for another minute then pour in the chicken stock and cream.
  • Allow to come to a simmer then place the chicken back in the pan and cover.

  • At this stage, the sauce will probably have reduced but if you want more sauce (to serve with rice, for example), add another cup of stock (and more cream if you wish) then add the cornflour and milk mixture. Allow to simmer for 10 minutes until thickened.
  • Slice the basil leaves and add them to the chicken along with the lemon juice, salt and pepper before serving.

GARLIC BASIL CHICKEN WITH TOMATO BUTTER SAUCE

Garlic Basil Chicken with Tomato Butter Sauce image

Garlic Basil Chicken - you won't believe that this easy real food recipe only requires 7 ingredients like basil, garlic, olive oil, tomatoes, and butter.

Provided by Pinch of Yum

Categories     Dinner

Time 50m

Yield 4

Number Of Ingredients 8

1 lb. boneless skinless chicken breasts
salt and pepper
1/4 cup olive oil
5-6 roma tomatoes, diced
3 cloves garlic, minced
one handful fresh basil, loosely packed, cut into ribbons
1/4 cup LAND O LAKES® European Style Super Premium Salted Butter
8 ounces pasta, like spaghetti, linguine, or bucatini

Steps:

  • Cover the chicken with plastic wrap and pound each piece to an even thickness, about one inch or so in the thickest parts (this just helps it cook faster and more evenly). Remove the plastic and sprinkle each piece of chicken generously with sea salt and freshly ground pepper.
  • Prep the tomatoes, garlic, and basil and set aside. Make the pasta according to package directions.
  • Heat the olive oil in a large heavy skillet until a drop of water sizzles across the top. Add the chicken and pan-fry for several minutes on each side - the goal here is to get the chicken cooked AND get a nice browning on the outside. When the chicken is done, set aside.
  • Give the oil a few minutes to cool, add the tomatoes, and return to heat (if you add the tomatoes to the hot oil it will be a splatter-fest). Simmer to cook the tomatoes down into a chunky-sauce-like-mixture. Add the garlic and butter and stir to combine until the butter is melted. Add the chicken back in to soak in the sauce for a few minutes.
  • Just before serving, stir in the basil. Top servings of pasta with the chicken and the sauce.

ONE-PAN CHICKEN AND GNOCCHI IN TOMATO-BASIL SAUCE

One-Pan Chicken and Gnocchi in Tomato-Basil Sauce image

Provided by Bev Weidner

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 8

1 tablespoon extra-virgin olive oil
1 1/4 pounds boneless skinless chicken thighs
2 tablespoons dried Italian seasoning
Coarse salt
1 medium zucchini (about 1/2 pound), cut into rounds, and again into half moons
One 24-ounce jar tomato-basil sauce, such as Classico® Organic Tomato & Basil Sauce
1 pound dried gnocchi
Freshly grated Parmesan and fresh basil leaves, for garnish

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle both sides of the chicken with the dried Italian seasoning and a good pinch of salt. Arrange the chicken in the pan, cover and sear for 5 minutes. Flip, cover and sear the chicken another 5 minutes. (It won't be cooked all the way through, but that's okay! We'll finish in a bit.) Remove the chicken from the pan.
  • Add a splash of water to the pan to deglaze, if needed, and use a wooden spoon to scrape up the browned bits. Add the zucchini to the pan in a single layer. Season with a pinch of salt and sear for 2 minutes. Flip and sear until nicely charred on both sides, another minute or two. Add the chicken (and its juices) back to the pan, and bring the heat down to medium-low. Add the tomato sauce, along with about 1/3 cup water swirled in the jar, along with the gnocchi. Using tongs, nestle the gnocchi down in the sauce, so that it's all covered. Cover with a lid and bring the heat up to medium. Simmer until the gnocchi is tender, 5 to 6 minutes.
  • Divide the dish among dinner bowls, and use forks to shred the chicken a little, if you want. Garnish with freshly grated Parmesan and fresh basil leaves.
  • Serve immediately!

  • Preheat oven to 200°c | 400°F. Heat the oil in a large, deep ovenproof cast iron skillet/or pan (over 30 cm or 12-inches). Add the chicken, skin side down; sear for 3-4 mins on medium-high heat. Turn each thigh and sear until golden all over. Transfer the chicken onto a warm plate.
  • Add the garlic; fry until fragrant (about 30 seconds). Add the onion and red peppers / capsicum; fry for about 3 minutes or until and onion is transparent. Stir in the sun dried tomatoes, rice, crushed tomatoes and chicken broth (stock). Season with salt, pepper and dried basil. Bring to a simmer and allow the rice to soak up all the tomato flavours.
  • Place chicken thighs, skin side up, over rice. Bring to the boil; rotate the chicken in the tomato sauce to coat; cover with foil; transfer to preheated oven and allow to bake for about 40 minutes, or until the rice has softened and absorbed the liquid and the chicken is cooked through. Stir through an extra 1/4 cup of water to the rice ONLY if needed (if rice hasn't cooked fully).
  • Remove cover; change oven settings to broil / grill on medium heat for a further 8-10 minutes or until the chicken is crispy and golden.

  • Cover the chicken with plastic wrap and pound each piece to an even thickness all around, about one inch or so in the thickest parts. This will help the chicken cook faster and more evenly. I like to use the bottom of a sauce pan to pound the chicken. Once done, sprinkle each side with a little salt and pepper.
  • Add 1 tablespoons of the olive oil to a large skillet, until warm. Add the chicken and pan fry each side for several minutes until browned.
  • Once the chicken is cooked through and browned remove it from the skillet and set aside on a separate plate for the time.
  • Using the same skillet add the rest of the olive oil and being sautéing the onion until it becomes soft, about 5 minutes. Then add the garlic and sautee for another minute or so. Add the tomatoes and basil to the skillet and season with the salt, pepper, and red pepper flakes.

  • Cut the chicken in half lengthwise so you have 4 thinner cutlets. Sprinkle them with the garlic powder and salt & pepper. Coat the chicken in flour.
  • Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the chicken and cook it for about 4-5 min/side until the chicken is nice and golden. Remove the pan from the heat, and take the chicken out of the pan and set it aside.
  • Add the garlic, Dijon mustard, and chicken broth to the pan and return it to the heat. Let it bubble for about 30 seconds, while stirring to scrape up the brown bits from the bottom of the pan and incorporate the mustard.
  • Add in the cream, tomatoes, Italian seasoning, and basil. Once it starts to bubble, add the chicken back in and cook it for another 5 minutes or so (sauce will thicken up a bit and the chicken will cook through). You may need to reduce the heat if it's boiling too furiously. Season with extra salt & pepper as needed. You can serve this dish with some parmesan cheese grated over top if you wish.
