4 skinless chicken thighs
1 onion, minced
1 cup chicken broth
3 tablespoons dry sherry
1/2 teaspoon nutmeg
1 pinch cayenne pepper
salt and pepper
1 tablespoon parsley, minced
3/4 cup skim milk
2 tablespoons flour

Steps:

  • Put the chicken in a non-stick frying pan.
  • Cook slowly over moderate heat with no fat added until well browned.
  • Drain off melted fat.
  • Add the onion, broth and sherry.
  • Sprinkle with seasonings.
  • Cover and simmer over very low heat until nearly tender, 40 to 50 minutes.
  • Uncover. Tip pan and skim fat form the liquid with a bulb-type baster.
  • Continue to simmer uncovered until the liquid is reduced by half.
  • Whisk milk and flour together and stir into the pan.
  • Cook and stir until sauce is bubbling and thick.

Being a new mom on a small budget, I've been experimenting with chicken recipes. I actually wanted to make another dish but didn't have all the ingredients, so I substituted a few and came up with this recipe.

6 to 8 chicken pieces, skin removed
2 tablespoons butter
1/4 cup chopped onion
1/4 cup minced fresh parsley
2 can (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
1/2 cup milk
1 tablespoon ground nutmeg
1/4 teaspoon rubbed sage
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
Additional ground nutmeg

Steps:

  • In a large skillet, brown chicken in butter. Remove chicken and set aside. , In the same skillet, saute onion and parsley until onion is tender. Add the soup, sour cream, milk, nutmeg, sage, thyme and rosemary; mix well. Return chicken to the skillet an spoon sauce over pieces. , Simmer, uncovered, for 25-30 minutes or until chicken is no longer pink, basting occasionally. Sprinkle with additional nutmeg.

1 whole chicken, about 4 lbs. (roaster)
1 teaspoon orange zest, finely minced
1 teaspoon ground nutmeg, divided
1 tablespoon unsalted butter, softened
1 tablespoon extra virgin olive oil
1/2 teaspoon salt, divided
2 tablespoons orange juice, freshly squeezed
2 tablespoons fresh lemon juice
ground black pepper

Steps:

  • Preheat oven to 375º F.
  • Remove excess fat from cavity of chicken.
  • Combine orange zest, half of the nutmeg, butter, olive oil and half of the salt.
  • Combine citrus juices and set aside.
  • With fingers, gently loosen skin from breast and thigh/leg area. Put butter mixture under loosened skin, patting skin back into place to spread butter. Season with half of remaining nutmeg and salt.
  • Place an oiled roasting rack in roasting pan. Place chicken (trussed if desired) breast side down. Roast 40 minutes. Carefully turn chicken breast side up and baste with cooking juices.
  • Pour citrus juice over top of chicken and season with remaining salt and nutmeg, and pepper.
  • Roast without basting another 40 minutes, or until internal temperature in leg/thigh area reaches 180ºF.
  • Remove to cutting board and let rest 10 minutes before carving.

1/4 cup EVOO (extra-virgin olive oil), 4 times around the pan
1/3 pound thick-cut (1/4-inch thick) pancetta, cut into sticks (see Notes)
2 pounds boneless, skinless chicken, breasts and thighs, cut into large chunks
Salt and black pepper
Flour, for dredging
1 large onion, thinly sliced
4 garlic cloves, crushed
14 to 16 dried black mission figs, quartered
1/3 bottle Rosso di Montalcino wine (eyeball it)
1 cup chicken stock plus up to 1/2 cup more if needed
1/4 cup fresh flat-leaf parsley, a generous handful, chopped
Zest of 1 lemon
1 tablespoon chopped fresh thyme, 4 sprigs
1 12- to 16-ounce package fresh or frozen gnocchi
3 tablespoons unsalted butter
1/4 teaspoon freshly grated nutmeg (eyeball it)
3 tablespoons chopped or snipped chives, 10 blades

Steps:

  • Place a pot of water on the stove to boil for the gnocchi.
  • Heat a deep skillet over medium-high heat. Add the EVOO and the pancetta. Brown the pancetta, 3 to 4 minutes, then remove it with a slotted spoon and reserve.
  • While the pancetta browns, season the chicken chunks with salt and pepper and dredge them in a little flour. After removing the pancetta from the pan, add the chicken. Brown the pieces for a few minutes on each side over high heat, then scoot the meat to the edges of the pan and add the onions, garlic, and figs. Sauté 5 minutes, combine the chicken with the onions and figs, then add the wine and cook it down for 5 minutes or so until only about 1/3 cup of liquid remains. Add 1 cup of the chicken stock, the parsley, lemon zest, and thyme to the chicken and stir to combine. Reduce the heat to a simmer and cook for another 10 minutes, while you make the gnocchi.
  • Add salt and gnocchi to the boiling water and cook them according to package directions, 4 minutes for fresh gnocchi, 6 minutes for frozen. Drain. Heat a medium nonstick skillet over medium-low heat. Melt the butter and brown it. Add the drained gnocchi to the browned butter. Raise the heat to medium high and lightly brown the gnocchi. Season the gnocchi with salt, pepper, and nutmeg, turn to coat, and add the chives, toss, and remove from the heat.
  • Adjust the seasonings on the chicken with figs. If you would like a little more sauce, add another half cup of stock to the pan. Serve the chicken and figs in shallow dishes, the gnocchi piled in the center of the bowl on top of the chicken. Garnish it with the crisp pancetta sticks.

  • Look for plump, tender dried figs in the bulk section of the market or buy the figs in packages. Check for tough stem tops and trim them off if necessary.

1/2 cup dark brown sugar, packed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon cornstarch
1 tablespoon water
1/4 teaspoon rum flavoring
8 chicken thighs
2 garlic cloves, crushed, minced
1/4 cup onion, grated
1/4 teaspoon salt, to taste
1/8 teaspoon pepper, to taste
1/4 cup soy sauce
1/4 teaspoon pepper sauce
1/2 cup nutmeg syrup
1/4 teaspoon ground ginger

Steps:

  • FOR THE NUTMEG SYRUP: In a saucepan, combine the 1 cup of water along with the sugar, cinnamon & nutmeg. Mix thoroughly & bring to a boil, then reduce heat & cook, stirring for 2-3 minutes.
  • In a small container combine cornstarch & water & mix thoroughly, before stirring it into the syrupy mixture, & blending well.
  • Simmer the syrup for another 5 minutes or so until thickened somewhat.
  • Remove from heat & stir in the rum flavoring, then set aside.
  • FOR THE CHICKEN: Preheat oven to 400 degrees F.
  • Place chicken thighs in a 13"x9" baking dish
  • In a small container combine garlic, onion, salt & pepper, mixing well, then spread this mixture over the chicken thighs.
  • Bake thighs for 15 minutes, then remove from oven.
  • While chicken is baking, in a bowl, combine soy sauce, pepper sauce, Nutmeg Syrup & ground ginger, mixing well.
  • After the 15 minutes of baking, remove chicken from the oven & turn the temperature down to 350 degrees F.
  • Baste the thighs with the Nutmeg Syrup mixture & return them to the oven to bake for at least 60 minutes, basting frequently.
  • Serve hot with additional syrup mixture, if desired.

1/3 pound thick-cut (1/4-inch) pancetta, cut into sticks

Flour, for dredging
1 large onion, thinly sliced
4 cloves garlic, crushed
14-16 dried figs, halved (look for plump, tender dried fig varieties in bulk section of market.)
1/3 bottle dry red wine, eyeball it (recommended: Rosso di Montalcino)
1 to 1 1/2 cups chicken stock
1/4 cup, a generous handful, chopped flat-leaf parsley
1 lemon, zested
1 tablespoon chopped thyme, 4 sprigs
1 package, 12 to 16 ounces fresh or frozen store bought gnocchi (potato pasta)
3 tablespoons butter
1/4 teaspoon freshly grated nutmeg, eyeball it
2 to 3 tablespoons chopped chives, 10 blades

Steps:

  • ** This dish uses Rosso di Montalcino wine (an affordable, younger version of Brunello -- I call it "Baby Brunello") but you can substitute any dry red wine you like.

  • Adjust the seasonings on the chicken with figs. If you would like a little more sauce, shake another half cup of stock into the pan. Serve the chicken and figs in shallow dishes, the gnocchi piled in the center of the bowl on top of the chicken. Garnish with crisp pancetta sticks.
