- Note: Tomato should contain basil, garlic, and oregano. Look for the canned version.
- Preheat oven to 375°.
- Cook pasta according to package directions but OMIT salt and fat. Drain well.
- Heat the oil in a large heavy pan over medium high heat. Add onion and pepper then sauté 5 minutes. Add garlic to pan then sauté 2 minutes or until onion is tender.
- Stir in tomatoes and bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally.
- Add spinach to pan then cook, stirring frequently, for 30 seconds or until it wilts. Remove from heat.
- Add cooked pasta and 3/4 cup cheese to tomato mixture, tossing well to combine.
- Spoon pasta mixture into an 11 x 7 baking dish lightly coated with cooking spray.
- Sprinkle evenly with remaining 1/2 cup cheese.
- Bake at 375° for 15 minutes or until cheese melts and begins to brown.
- A note: Vegan subs may not act like normal cheese instead watch the time.
- For Vegan use the soy cheese.

Steps:
- 1. Warm large pan over medium high heat. Mix the sausage, onion and garlic in pan. Sauté for 1 minute or til sausage is cooked through, stirring to crumble; drain. Stir in undrained tomatoes. Simmer for 10 minutes or til sauce thickens slightly, stirring occasionally. Stir in the pesto. Season with salt and pepper.
- 2. Preheat oven to 375. Coat a 9 x 13 inch baking dish with small amount of oil Fill large pot with salted water and bring to a boil over high heat. Add ziti. Cook til al dente; drain. Mix ziti, spinach, mozzarella cheese, and 1/3 cup Parmesan cheese in large bowl. Stir in tomato mixture. Remove to baking dish. Sprinkle remaining 2/3 cup Parmesan cheese over ziti mixture.
- 3. Bake for 30 minutes or until sauce bubbles and cheese melts. Makes 4 servings.

- Heat heavy large saucepan over medium-high heat. Add sausage, onion and garlic and sauté until sausage is cooked through, breaking up meat with back of spoon, about 10 minutes. Add tomatoes with juices to pan. Simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Stir in pesto. Season sauce with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before continuing.)
- Preheat oven to 375° F. Lightly oil 13 x 9-inch glass baking dish. Combine pasta, spinach, mozzarella and 1/3 cup Parmesan cheese in large bowl. Stir in hot tomato sauce. Transfer mixture to prepared baking dish. Sprinkle remaining 2/3 cup Parmesan cheese over. Bake until sauce bubbles and cheeses melt, about 30 minutes.

This recipe lasts my family of four for at least three meals when served with a dinner salad and crusty Italian bread. It is wonderful Italian comfort food.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside.
- Meanwhile, heat a large skillet over medium heat. Cook and stir ground beef, onion, and 1/2 of the garlic in the hot skillet until beef is until browned and onion is wilted, 5 to 7 minutes. Add spaghetti sauce and simmer for 15 minutes.
- While the meat sauce is simmering, heat oil in a skillet over medium heat. Add remaining garlic and cook until fragrant, about 1 minute. Add spinach and cook, tossing occasionally, until wilted, about 2 minutes. Remove from the heat.
- Mix ricotta cheese, 1/4 cup Parmesan cheese, and wilted spinach in a bowl. Season with salt.
- Place 1/2 of the ziti in the bottom of a 9x13-inch baking dish and layer with 1/2 of the meat sauce. Spread provolone cheese on top to form a flat surface. Spread spinach mixture over top, then cover with remaining ziti and meat sauce. Top with 2 tablespoons Parmesan and sprinkle mozzarella over top.
- Bake in the preheated oven for 30 minutes. Remove from the oven and let firm up for at least 10 minutes before serving.

CREAMY BAKED ASIAGO-GOUDA FETTUCCINE
Let your taste buds experience the very flavorful combination of Asiago and smoked Gouda cheeses, which team up to make this dish extra-special. The pasta sauce is a bit liquidity before baked, but it reduces down to a thicker sauce consistency. This fettuccine is rich, creamy and tastes wonderful. It is filling enough for a meatless dinner. It is quick enough for a weekday meal, but delicious to serve to company. Pair it with steamed veggies or a salad. Steps:
- Cook fettuccine in large pot of salted water until tender but firm to the bite, about 10 minutes; drain well.
- While pasta is cooking, in small skillet, saute shallots and garlic in 1 T butter over medium heat until tender; set aside.
- After fettuccine is done cooking, drain well in colander and then pour back into the same pot.
- Add the 6 T melted butter and coat pasta well.
- Next add the shallot mixture, parsley flakes, cayenne pepper and ground nutmeg; stir well.
- Next, add 1 cup grated Asiago cheese and 1 cup grated smoked Gouda cheese and combine well.
- Next, add the half-and-half and milk and combine well.
- Let the fettuccine sit for about 15 minutes so that the pasta soaks up the flavors of the sauce mixture.
- Bake, uncovered, at 350 degrees F for about 25 minutes, stirring occasionally.
- Enjoy!
- Let sit for about 5 minutes and serve.
