4 boneless, skinless chicken breasts (about 3 lbs. total)
8 ounces (about 1 cup) French, Russian or Catalina salad dressing
1 (14 ounce) can whole berry cranberry sauce
1 (1 ounce) packet dry onion soup mix seasoning
Zest from ½ of an orange

Steps:

  • Preheat oven to 375 degrees. Spray a 2-quart baking dish with cooking spray. Season chicken with salt and pepper, to taste.
  • Place chicken in the prepared dish. In a separate bowl, stir together salad dressing, cranberry sauce, dry onion soup mix seasoning and orange zest. Pour sauce over chicken.
  • Cover tightly and bake for 30 minutes. Remove the cover and return to the oven for 15 more minutes, or until the chicken reaches an internal temperature of 165 degrees F. Spoon sauce over chicken and serve.

2 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon all-purpose flour
1/4 teaspoon salt, divided
1/8 teaspoon pepper
1 tablespoon olive oil
3/4 cup reduced-sodium chicken broth
1 cup fresh or frozen cranberries, thawed
2 tablespoons brown sugar
1 tablespoon red wine vinegar
1-3/4 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • Flatten chicken to 1/2-in. thickness. In a shallow bowl, combine flour, 1/8 teaspoon salt and pepper. Coat chicken with flour mixture. In a nonstick skillet, cook chicken in oil for 4-5 minutes on each side or until a thermometer reads 170°. Remove chicken and keep warm. , In the same skillet, bring broth to a boil; scrape up any browned bits. Stir in the cranberries, brown sugar, vinegar and remaining salt. Combine cornstarch and water until smooth; gradually stir into cranberry mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Return chicken to the pan and heat through.

1 (16 ounce) can cranberry sauce
1 (8 ounce) bottle Russian-style salad dressing
1 packet dry onion soup mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. In a large bowl combine the cranberry sauce, salad dressing and soup mix and mix well. Coat chicken pieces with this mixture.

2 tablespoons butter
1 1/2 teaspoons dried thyme
Coarse salt and ground pepper
4 bone-in chicken breasts (8 ounces each)
1 medium onion, finely chopped (about 1 cup)
1/2 teaspoon dried sage
2 cups reduced-sodium chicken broth
1 cup cranberries
1/4 cup sugar
1 teaspoon cornstarch (mixed with 1 tablespoon water)

Steps:

  • Preheat oven to 450 degrees. In a small bowl, mix 1 tablespoon butter, 1 teaspoon thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Rub evenly under chicken skin. Place on a rimmed baking sheet; roast skin side up until skin is golden brown and meat is cooked through, about 25 minutes.
  • Meanwhile, melt remaining tablespoon butter in a large saucepan over medium heat. Cook onion, stirring occasionally, until golden, about 8 minutes. Add sage and remaining 1/2 teaspoon thyme; cook 1 minute. Add broth; simmer until reduced to 1 1/2 cups, 10 to 15 minutes. Strain mixture; return to saucepan.
  • Add cranberries and sugar; boil until berries burst, 5 to 8 minutes. Whisk in cornstarch mixture; return to a boil. Cook until slightly thickened, 1 to 2 minutes. Remove from heat (sauce will thicken as it stands). Season with salt and pepper. To serve, spoon sauce over chicken.

  • Combine one 12-ounce bag cranberries, the segments from 6 clementines, 1/2 cup each orange juice and cranberry juice, 3/4 cup sugar, 1 cinnamon stick and 1 star anise pod in a saucepan. Bring to a boil, then reduce the heat and simmer 20 minutes. Add 1 cup dried cranberries and simmer 15 more minutes, or until thickened.

I found this in Cooking Light magazine and just had to post it! I love this sauce over a roasted chicken. The magazine stated you can also just make the sauce and then use it to serve over sauteed chicken breasts for a quick weeknight meal.

1 roasting chicken (4 lbs)
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 clementine, quartered
1/2 cup orange juice, fresh from 2 oranges
1/2 cup fresh cranberries
2 tablespoons sugar
1/2 cup fat-free low-sodium chicken broth
1 1/2 teaspoons cornstarch
2 tablespoons water (or may substitute Madeira wine)
6 clementines, sectioned to equal 2 cups

Steps:

  • Preheat oven to 450°F.
  • Remove and discard giblets and neck from chicken. Rinse chicken with COLD water and pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers gently pushing between skin and meat.
  • Rub salt and pepper under loosened skin and sprinkle in body cavity; then place clementine QUARTERS in cavity.
  • Place chicken, breast side down, on a broiler pan. Insert a meat thermometer into meaty part of thigh, making sure not to touch bone.
  • Bake at 450F for 25 minutes. Reduce oven temperature to 350F and turn chicken breast side up; bake at 350F for 1 hour or until thermometer registers 180°F.
  • Cover chicken loosely with foil and let stand 10 minutes; then remove skin and discard.
  • Make the sauce by placing the orange juice, cranberries, and sugar in a medium saucepan. Cook at medium high for 5 minutes or until the cranberries pop. Then add chicken broth.
  • Combine the cornstarch and water (or wine if you choose) in a small dish and stir into the cranberry mixture. Bring to a boil and cook for 1 minute, stirring constantly.
  • Remove from heat and stir in the clementine sections.

1 (12-ounce) bag fresh cranberries
6 clementines, peeled and sectioned
1/2 cup orange juice
1/2 cup cranberry juice
3/4 cup sugar
1 cinnamon stick
1 star anise
1 cup dried cranberries

Steps:

  • In a small saucepan combine fresh cranberries, clementines, orange and cranberry juices, sugar, cinnamon stick, and star anise. Bring to a boil and reduce to a simmer. Simmer for 20 minutes. Add the dried cranberries and simmer for 10 to 15 more minutes, or until the sauce has thickened. Eat warm or at room temp.

  • Put all the ingredients in a saucepan and stir over a gentle heat until the sugar has dissolved. Increase the heat, cover and simmer for 5 mins until the cranberries have burst and the sauce has thickened. Transfer to a bowl and leave to cool, then remove the cinnamon and cardamom.
