1 tablespoon vegetable oil
2 pounds chicken breast tenders (not breaded)
2 packages (10 ounces each) frozen broccoli spears, thawed and drained
1 can (8 ounces) sliced water chestnuts, drained
1 can (10 3/4 ounces) condensed cream of chicken soup
1/2 cup reduced-fat mayonnaise
1 teaspoon lemon juice
1/2 cup milk
1/2 teaspoon curry powder, if desired
1/2 cup shredded reduced-fat Cheddar cheese (2 ounces)
1/2 cup dry bread crumbs
1 can (2.8 ounces) French-fried onions
1/4 cup slivered almonds

Steps:

  • Heat oven to 350°. Heat oil in 12-inch skillet over medium-high heat. Cook chicken in oil 5 to 6 minutes, stirring occasionally, until chicken is no longer pink in center. Layer broccoli spears, water chestnuts and chicken in ungreased rectangular baking dish, 13x9x2 inches.
  • Mix soup, mayonnaise, lemon juice, milk and curry powder; pour over chicken and broccoli. Sprinkle with cheese, bread crumbs, onions and almonds.
  • Cover and bake 30 minutes. Uncover and bake about 15 minutes longer or until broccoli is tender.

6 chicken breasts
10 1/2 ounces condensed cream of mushroom soup
1 cup mayonnaise
1/2-1 cup thinly sliced celery
5 ounces sliced water chestnuts
1 small onion
6 ounces seasoned stuffing mix
1/2 cup butter or 1/2 cup margarine

Steps:

  • Precook chicken with sliced onion, salt and pepper at 350°. If using boneless it is about 30 minute 5 minutes longer for bone-in chicken.
  • Cool, remove from bone, discard skin. Cut into bite sized pieces, including the onion. Set aside.
  • In a large bowl combine soup, mayonnaise, celery and drained water chestnuts. Add chicken and mix together.
  • Spread in a greased 9x13 baking pan.
  • Combine stuffing mix with melted butter/margarine. Spread over chicken mixture and bake 45 minutes at 350° until lightly brown and bubbly at the edges.
  • (I use Bell's stuffing mix. I have used others and it has been fine, but Stove Top is not the type to use.I have used light mayo and reduced fat soup but it's not as tasty).

1 1/2 cups celery, choppd
1 cup water chestnut, drained & sliced
1/2 cup Miracle Whip
10 ounces cream of mushroom soup
1 cup mushroom, sliced
6 ounces seasoned stuffing mix
1/2 cup margarine

Steps:

  • Mix all ingredients (except stuffing and margarine) together in a 2 quart casserole.
  • Top with stuffing mix, combined with 1/2 cup margarine.
  • Bake at 350 for 1/2 hour or until bubbly.

2 cups cubed cooked chicken
1-1/2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3/4 cup mayonnaise
1 can (8 ounces) sliced water chestnuts; drained
1/2 cup sliced almonds
2 tablespoons chopped onion
Salt and pepper to taste
TOPPING:
1 tablespoon butter, melted
1/2 cup crushed cornflakes
Sliced almonds, optional

Steps:

  • In a skillet, saute celery in butter until tender. Remove from the heat; add the next nine ingredients. Spoon into an ungreased 2-1/2-qt. baking dish. , Combine melted butter and cornflakes; sprinkle on top of casserole. Sprinkle with almonds if desired. Bake, uncovered, at 350° for 30 minutes.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

1 can (8 ounces) sliced water chestnuts, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
2/3 cup shredded Swiss cheese
1 tube (8 ounces) refrigerated crescent rolls
1/2 cup sliced almonds

Steps:

  • In a large saucepan, saute celery in 1 tablespoon butter until tender. Stir in the soup, mayonnaise, sour cream, onion, chicken, water chestnuts and mushrooms. Cook and stir over medium heat just until mixture begins to boil. Transfer to an ungreased 13-in. x 9-in. baking dish. 4 chicken breasts
1 tablespoon onion, minced
1 chicken bouillon cube
1 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 (8 ounce) can sliced water chestnuts
1 (7 ounce) can sliced mushrooms
1 cup shredded cheddar cheese
27 Ritz crackers (1 package)
2 teaspoons poppy seeds
3/4 cup of melted margarine

Steps:

  • Boil chicken,onion, boulion cube in enough water to cover chicken, until done.
  • Cool and remove meat from bone and break into small pieces-put aside.
  • In large mixing bowl, combine the soups, sour cream, water chestnuts and mushrooms.
  • Add chicken meat and mix all ingredients well.
  • Line a large casserole dish with part of the whole Ritz crackers.
  • Pour soup mixture evenly over crackers.
  • Sprinkle cheese over mixture, then crumble remaining crackers over this. Sprinkle poppy seed on top of crackers.
  • Sprinkle melted butter over entire mixture and place dish in a pre-heated 400 degree oven.
  • Heat until recipe is bubbly hot.

2 (15 ounce) cans Veg-All, drained
2 (8 ounce) cans water chestnuts, drained
1 large onion, diced
3/8 cup unsalted butter
1 (10 3/4 ounce) can cream of mushroom soup
1 cup Miracle Whip
1 (10 ounce) package shredded cheddar cheese
2 cups cooked chopped chicken, may be added
12 ounces regular Ritz crackers, from a 16oz box (crushed)
1/3 cup unsalted butter, melted

Steps:

  • Saute Onion in 3/4 stick of butter until translucent.
  • add all ingredients except topping and mix well.
  • Pour mixed ingredients into a large greased casserole.
  • Mix topping ingredients together and sprinkle over casserole.
  • Bake at 350 degrees for 45 minutes to 1 hour.
