CHICKEN, ARTICHOKE AND SUN-DRIED TOMATO PASTA RECIPE
Chicken, Artichoke and Sun-Dried Tomato Pasta: this delicious Italian pasta recipe is filled with chicken, artichoke hearts, sun-dried tomatoes and goat cheese.

Steps:
- In a large skillet over medium heat, add 2 tablespoons olive oil. Add onion, cook for 4 to 5 minutes, until translucent. Add garlic and cook for 30 seconds.
- Add chicken and sauté until chicken is no longer pink on outside (Chicken will not be cooked through at this point - you are just cooking the outside.)
- Set a large stock pot of water over high heat to bring to a boil. Continue with the rest of the recipe while the water comes to a boil.
- Add chicken stock, white wine, artichoke hearts, sun-dried tomatoes, thyme, Italian seasoning, salt and pepper. Bring to a simmer, cover and cook until chicken is cooked through, about 8 minutes.
- While chicken cooks, add a tablespoon of salt to boiling water and add pasta. Cook pasta according to package directions, until al dente.
- Drain pasta and toss in 2 tablespoons olive oil. Transfer pasta to a large bowl or individual plates.
- Spoon chicken and sauce mixture over top of the pasta and sprinkle with goat cheese. Serve immediately.

Steps:
- In large non-stick skillet sauté Chicken Breasts in Olive Oil until browned and cooked through.
- Cover them to keep them warm and set them aside.
- Pour Alfredo Sauce into skillet.
- Slice Artichoke Hearts and Chicken Breasts into bite sized pieces.
- Add Artichoke Hearts, Chicken Breasts, Sun-Dried Tomatoes, and Prosciutto to sauce.
- Heat at medium heat, stirring occasionally until warm.
- Pour over Angel Hair Pasta and serve.

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and desired crispness is reached, 6 to 10 minutes. Drain bacon on paper towels.
- Add chopped chicken thighs, garlic salt, and cantanzaro herbs to skillet and cook until chicken is no longer pink in the center and the juices run clear, about 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken to a plate.
- Melt butter in a saucepan over medium heat until a pinch of flour sprinkled into the oil just begins to bubble. Whisk in flour to form a thick paste the consistency of cake frosting. - Pre-heat saute pan on medium high for 2 to 3 minutes. Cut chicken into 1 inch chunks, place in bag. Add flour and shake to coat.
- Place oil in pan, add chicken and cook 2 - 3 minutes or until chicken begins to brown.
- Stir in wine, reduce heat to medium - low and cook until wine has slightly reduced.
- Squeeze juice of 1/2 lemon over chicken and then stir in artichoke hearts, sun-dried tomatoes, butter, salt, and pepper.
- Cover and cook an additional 2 - 3 minutes until chicken is done.
- Remove chicken from heat and stir in thyme then sprinkle with cheese and serve.

I first had this dish at a wonderful Italian restaurant that would eventually become my favorite place to eat. My request for the recipe was, of course, denied. Over the months, as I got to know the servers, I questioned the ingredients of this dish. This is extremely close to the restaurant dish. You may use your choice of alfredo sauces and pasta. recipe #76 appears very close to the restaurant style alfredo. I like this with fettuccine but some like angel hair pasta. Your choice. :-)

- If using dried sun dried tomatoes, dice and place in a cup of water to soak. If using oil packed sun dried tomatoes, rinse off oil and dice.
- Place olive oil in a large skillet. Add chicken and garlic and saute until chicken is tender.
- Place artichoke hearts, sun dried tomatoes, oregano, red pepper and alfredo sauce in large saucepan. Heat through but do not bring to a boil.
- Stir chicken into artichoke mixture.
- Serve over your choice of pasta.

- Preheat oven to 375 degrees F (190 degrees C).
- Season chicken with Italian seasoning, salt, and pepper. Place chicken in a baking dish and cook in preheated oven for about 20 minutes.
- Meanwhile, fill a small saucepan halfway with water and bring to a boil. Cook sun-dried tomatoes in the boiling water until soft, 7 to 10 minutes. Remove the tomatoes from the water and puree in a food processor until smooth.

- First, broil the chicken (4-6 minutes each side) depending on your oven. When it is white all the way through, take it out of the oven and let it cool.
- Boil water, and once water is boiling, add box of penne pasta and cook until al dente.
- While the water is heating up/pasta is cooking -- Dice the squash and the onion. Melt 2 tablespoons of butter in a large pan and add the squash and onion. Right before they are finished, add garlic. Sautee until both are softened.
- When the chicken is cooled down, tear into strips and add to the squash and onion mixture. Add the can of Rotel tomatoes & the jar of sun dried tomato alfredo sauce. Stir and add salt and pepper to taste.
- Drain the penne pasta and toss it with the other 2 tablespoons of butter, add to the sauce, mix the sauce into the pasta well, and then grate fresh cheese on top.
- I like to serve with Pillsbury crescent rolls -- Enjoy!

My husband loves fettucine alfredo and I love artichokes, but I have very little time to make it from scratch. This is great to make if you have leftover chicken to serve it with. Also, you can buy all of the ingredients in advance and make it when you have time.

- Cook fetticine in boiling water 2 tablespoons olive oil.
- Meanwhile, drain artichokes hearts in a large colander and leave to drain (do not rinse).
- Warm up alfredo sauce in a large saucepan - add garlic and lemon pepper and 1 teaspoon olive oil.
- When alfredo sauce is cooked, drain over artichoke hearts - this will warm and cook artichoke hearts perfectly.
- Slightly rinse noodles and drain thoroughly.
- Add noodles and artichokes to the alfredo sauce and mix completely.
- Warm on stove for about 15 minutes.
- Optional: For added flavor and taste, add 1-2 cups chopped and cooked chicken to the mix.
- Serve warm.
SPICY SUN-DRIED TOMATO CHICKEN ALFREDO
A flavourful all-in-one pasta dish with a bit of a kick. This is one of my 20 minute wonder meals that pleases anyone that I have served it to. It takes a bit to get the timing perfected, depending on the noodles you use but once you have it down-pat, it's great. If you're not into the spices, just omit them and it's still excellent. My kids always ask for seconds.

- Put on a large pot of salted water on to boil.
- In a skillet or frying pan, somewhere between medium to maximum (depends on the stove-top), put the olive oil.
- Saute the onions, garlic, jalepeno and chicken meat for 10 minutes.
- By this time, the water should be boiling. Add in the rotini noodles.
- Add the sun-dried tomatoes to the pasta water.
- Add tandoori spice, hot pepper and seasoning salt. Saute for a couple more minutes and then reduce heat to minimum.
- Remove the sun-dried tomatoes from the pasta water and chop finely. Set aside.
- In the last 2 minutes of the cooking time for the pasta, add the frozen vegetables.
- Drain the pasta and vegetables and return to the large pot.
- Stir in pasta sauce.
- Mix in chicken, onion, garlic.
- Serve.

- -Coat chicken w/ blackening spice, saute both sides and place in oven and cook through and then slice.
- -In frying pan, add extra virgin olive oil, garlic and saute. Add sundried tomatoes & sliced chicken. Add wine & then cream and increase to a low boil and reduce cream, until a bit thickened-add parmesean and salt and pepper to taste. Add/Garnish w/ green onions.

- Heat olive oil in an oven-proof skillet, over medium-high heat. Dry, then salt and pepper the chicken. Add chicken to the hot pan, skin side down and cook until golden brown, 6-7 minutes. Flip chicken over and cook 3-4 minutes on the other side. Remove chicken to a plate. Add garlic to pan and cook, stirring, until starting to brown. Remove pan from heat. Return chicken to the pan (skin side uand distribute the artichokes around the chicken. Transfer skillet to pre-heated oven.
- Roast chicken and artichokes for 10 minutes or so, if boneless or 15-20 if bone-in, or until chicken is cooked through (165° when tested with an instant read thermometer). Remove pan from oven, then remove chicken to a plate. Place skillet on stove-top over medium-high heat (mind the hot handle!). Add the white wine and allow to cook off a bit, until the smell of alcohol disappears, about 1 minutes. Add the chicken broth, heavy cream, slivered sun-dried tomatoes and a bit of salt and pepper. Allow sauce to cook down until thickened. Return chicken to pan to re-heat. Serve!
