Here is another recipe from McCall's Cooking School; this one for chilled chicken breasts covered in a delicious tuna (tonnato) sauce. This makes a very pleasant make-ahead hot weather meal. It is a take-off of the more familiar vitello (veal) tonnato. Indeed, the delicious sauce, which could be described as a tuna mayonnaise, can also be used over poached veal, over turkey cutlets, even over cold hard-cooked eggs or as a dip for crudites. You'll probably think of other uses, as well. I used to poach the chicken as detailed in the recipe, but nowadays, I bake them in the style of Ina Garten (Recipe#234465). The meat is juicy and tender, perfect for this presentation. Tuna packed in olive oil will give the best flavor to the tonnato. Any leftover sauce will keep, refrigerated, for up to 5 days.

1 head iceberg lettuce
4 whole chicken breasts (1 lb. each)
1 large onion, sliced
1 stalk celery, sliced
1 carrot, pared and sliced
2 parsley sprigs
1 teaspoon salt
1/4 teaspoon dried thyme leaves
1 small bay leaf
1 (10 3/4 ounce) can condensed chicken broth, undiluted
1 cup water
1 (2 ounce) can anchovy fillets
1 (7 ounce) can tuna
1 cup mayonnaise
1/2 cup finely chopped celery
1/2 teaspoon salt
1 dash black pepper
1 tablespoon lemon juice
2 tomatoes, cut into 8 wedges
watercress leaf
kalamata olives (optional) or nicoise olive (optional)

Steps:

  • Cut out core of iceberg lettuce with pointed knife; discard core. Hold cut part of lettuce under cold running water to separate leaves. Drain well on paper towels, in colander or salad spinner. Refrigerate, stored in plastic bag in crisper or plastic container with tight fitting lid.
  • Wipe chicken breasts with damp paper towel. With sharp knife, split in half. In large 10-inch skillet, combine onion, celery stalk, carrot, parsley, 1 teaspoon salt, the thyme, bay leaf, undiluted chicken broth, and water. Over medium heat bring to boiling; add the chicken.
  • Bring to boiling; reduce heat; simmer, covered, 30 minutes, or until chicken is fork-tender. Remove skillet from heat; cool chicken breasts in broth 1 hour. Meanwhile make Tonnato Sauce: Drain anchovy fillets; with sharp kinfe, chop 2 fillets; reserve the rest for garnish.
  • Drain tuna; discard liquid. In blender or food processor, combine chopped anchovies with tuna, mayonnaise, chopped celery, salt, pepper and lemon juice. Blend until smooth. Turn into 2-cup container with tight-fitting lid; refrigerate, covered. Makes about 2 cups.
  • Remove cooled chicken breasts from broth; strain broth, and refrigerate, covered, to use another time. Remove and discard skin and bone from chicken breasts. With sharp knife, shred lettuce.
  • To serve: Cover a large round serving platter with shredded lettuce. Place one whole tomato, cut into 8ths and reassembled, in the very center of the plate. Arrange the 8 breast halves on lettuce in a circle around this tomato. Spoon tonnato over each breast, covering it completely. Garnish each breast with a whole reserved anchovy fillet. Place tomato wedges between breasts Garnish with watercress.

1 onion, halved across the equator
2 carrots, washed and cut in thirds
2 stalks celery, washed and cut in thirds
1 head garlic, cut in half across the equator
1 bay leaf
10 sprigs thyme
1/2 teaspoon black peppercorns

Steps:

  • To a large pot add the chicken, onion, carrots, celery, garlic, bay leaf, thyme, peppercorns and water to cover, about 14 cups. Bring to a simmer over medium-high heat. Skim the top of the broth of any impurities rise to the surface. Adjust the heat to maintain a gentle simmer. Simmer the broth, uncovered, for 1 hour, skimming as needed.
  • Remove the chicken to a plate. Continue to simmer the broth. Use tongs to handle and shred the meat of the chicken and set aside for another use. Return the bones and skin to the broth and continue to simmer for an additional hour.
  • Remove from the heat and strain the broth. Discard the bones and vegetables and allow the broth to cool. Refrigerate for up to 4 days or freeze for up to 3 months.

1 cup sliced white button mushrooms
1/2 cup diced carrot
1/2 cup diced celery

5 cups water
4 (6 ounce) boneless skinless chicken breast halves (each about 6 ounces)
8 ounces cooked angel hair pasta or 8 ounces cooked orzo pasta
2 ounces anchovies packed in oil
3 ounces tuna (preferably in oil)
1 large egg yolk
1 tablespoon dijon-style mustard
1 tablespoon fresh lemon juice (not the bottled junk)
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon Tabasco sauce
1/2 cup extra virgin olive oil
1 tablespoon drained capers
4 cups arugula leaves, washed and dried (loosley packed)
1 tablespoon drained capers
1 tablespoon minced fresh chives

Steps:

  • PREPARATION FOR THE CHICKEN:.
  • Combine the onion, leek, mushrooms, carrot, celery, salt, pepper, and water in a large saucepan (preferably stainless steel).
  • Bring to a boil, reduce the heat to medium-low, and boil gently for 5 minutes.
  • Add the chicken breasts, and cook them just until the broth returns to a boil, about 4 minutes.
  • Boil for about 15 seconds, then remove the pan from the heat, cover, and let the breasts stand in the broth for 12 to 15 minutes.
  • THE SAUCE:.
  • Set aside 4 of the anchovies for the garnish.
  • Put the tuna and the remaining anchovies in a food processor, along with the oil from both of the cans.
  • Add the egg yolk, mustard, lemon juice, water, salt, and Tabasco and process for a few seconds.
  • With the processor running, add the olive oil in a slow stream and process for a few seconds, or until it is well incorporated and the sauce is smooth.
  • At serving time, divide the arugula among four plates.
  • Remove the chicken breasts from the broth with a slotted spoon.
  • Cut each breast into 4 crosswise slices, and arrange the slices on top of the arugula.
  • Generously coat the breasts with the tuna sauce and top each serving with 1 of the reserved anchovy fillets.
  • Sprinkle on some capers and chives and serve at room temperature.
  • Reheat the broth and add angel-hair pasta or orzo, divide among four bowls, and serve with the chicken.
  • Enjoy!

Kosher or other coarse-grain salt
Freshly cracked black pepper
Chopped parsley leaves, for garnish

1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 cup chicken stock
1 cup dry white wine
1 (2 to 2 1/2-pound) veal roast from the leg or loin, boned and tied
1 cup chopped yellow onions
1/2 cup chopped carrots
1/2 cup chopped celery
1 large sprig fresh rosemary
2 bay leaves
1 teaspoon black peppercorns
2 (6-ounce) cans oil-packed solid white tuna, drained
8 anchovy fillets, drained and chopped
2 teaspoons capers, rinsed, plus extra for garnish
2 tablespoons white wine vinegar
1 large egg, at room temperature*
1 tablespoon fresh lemon juice
1 cup olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • In a large Dutch oven or casserole, combine the veal, chicken stock, wine, onions, carrots, celery, rosemary, bay leaves, and peppercorns. Add water as needed to cover the meat and bring to a boil. Reduce the heat to a simmer and cover tightly. Simmer, turning once, until the meat is tender and an instant-read thermometer registers 145 to 150 degrees F, about 50 minutes to 1 hour.
  • Transfer the veal to a platter and let cool. Strain and reserve the cooking broth. Wrap the veal tightly and refrigerate until well chilled (up to 24 hours).
  • To make the sauce, combine the tuna, anchovies, capers, white wine vinegar, lemon juice, and lemon zest in a blender or food processor and blend to a very smooth texture, about 2 minutes. Add the mayonnaise and process to blend thoroughly. Add 1 tablespoon of the reserved cooking broth. Add more, if desired, to taste or for a thinner consistency. Refrigerate in a tightly sealed container for at least 2 and up to 24 hours. (The sauce tastes best if made 1 day in advance and allowed to rest overnight).
  • To serve, thinly slice the meat and arrange on a platter. Drizzle the sauce over each slice, season generously with the kosher salt and black pepper. Garnish by sprinkling with additional capers and chopped parsley. Arrange the lemon slices around the platter and serve.
  • In a blender or food processor, combine the egg and lemon juice and process for 10 seconds. With the machine running, slowly pour in the oil through the feed tube and process until emulsified. Add the salt and black pepper and pulse to blend. Transfer to an airtight container and refrigerate for at least 30 minutes before using. (The mayonnaise can be stored in an airtight container in the refrigerator for up 24 hours).

Don't skimp on the veal, or the tuna, or the mayonnaise. They all mingle together to create something better than the sum of their parts.

2 pounds boned veal eye round
1 (7-ounce) container best-quality Italian tuna, shredded
1 medium yellow onion, peeled, chopped in quarters and stuck with 2 cloves
1 celery rib, roughly chopped
1 carrot, peeled and roughly chopped
1 parsley sprig
1 1/2 cups chicken broth, preferably low-sodium or homemade
½ teaspoon kosher salt
10 black peppercorns, ground
1 bay leaf
1 1/2 cups dry white wine
2 egg yolks
1 cup extra-virgin olive oil
1 (12-ounce) container best-quality Italian tuna in olive oil, finely chopped, with its oil
2 anchovies, rinsed, dried and minced
1 tablespoon caper brine
Lemon juice
Veal broth (see above)
Kosher salt, to taste

Steps:

  • If necessary, tie the veal with cotton string, so that it resembles a salami. Place the meat in a heavy-bottomed pot or Dutch oven and cover with tuna, onion, celery, carrot, bay leaf, parsley, wine, broth, salt and pepper, then heat over a high flame until it comes to a boil. Immediately reduce heat to very low, cover and simmer for 35 to 40 minutes, or until the internal temperature of the veal reaches 130 degrees.
  • Remove meat to a large, nonreactive bowl, strain the broth over it, cover and allow the meat to cool in the refrigerator. (Discard solids.)
  • Meanwhile, put yolks in a medium bowl. Beat together with a wire whisk. Begin to add oil as you beat, a very little at a time, adding more as each bit is incorporated. When a thick emulsion forms, then you can add oil a little faster, but not much faster. The entire process should take roughly 5 to 7 minutes. (You may not need all the oil.)
  • Add tuna, anchovies and caper brine to the mixture, then beat to incorporate. Add a few tablespoons of the veal broth to thin the sauce slightly. Taste and adjust seasoning, adding lemon juice or more broth to taste. The sauce should not taste overly mayonnaisey but should lurk in the neighborhood.
  • Remove the cooled veal from its broth, untie and cut across the grain into very thin slices. Arrange these neatly on a platter with the edges of the slices overlapping, and spoon the tuna sauce over the top. Cover and return to refrigerator overnight or until ready to use. Garnish with capers or fried capers, lemon, hard-cooked egg wedges or sprigs of parsley. Serve with copious amounts of bread and a green salad, lightly dressed.

16 ounces chicken breasts (4 oz each, skinned & boneless)
1 small onion (sliced)
1 bay leaf
4 black peppercorns
1 1/2 cups chicken stock

3 tablespoons lemon juice
1 red bell pepper (cut in thin Julienne strips)

Steps:

  • Put chicken breasts in a lrg saucepan in a single layer. Add onion, bay leaf, stock & peppercorns. Bring to a gentle boil, reduce heat, cover & simmer for about 12 min, or till tender.
  • Turn off heat, allow chicken to cool in the stock & then remove w/a slotted spoon. Slice ea chicken breast in medallions, but keep ea intact to be plated individually when served. Set aside.
  • Boil stock till reduced to approx 5 tablespoons Strain thru a fine sieve & allow to cool.
  • Put tuna, mayonnaise, lemon juice + 3 tbsp of the reduced stock into a blender or food proc & puree till smooth. (I will use my immersion blender for this step).
  • Stir in enough of the remaining stock to reduce the sauce to the thickness of double cream & spoon equally over ea chicken breast.
  • Arrange strips of red bell pepper in a lattice pattern over ea breast. Put a caper in the center of ea square. Chill in fridge for at least 1 hr & serve cold w/a mixed green salad that includes cherry tomatoes for color.

3 garlic cloves, minced and divided
24 ounces boneless skinless chicken breast halves

CHICKEN TONNATO SALAD

Many are familiar with tonnato (tuna) sauce: it is spooned over chilled veal or chicken breast slices to make a tasty meal. However in this version, it is the dressing which coats the salad ingredients and makes quite an impressive salad that is perfect for company. I received a new cookbook last week and this recipe plus 2 more leaped out at me "to try first." The book is "Easy Pasta" published by Ryland, Peters, and Small. Note that though the list of ingredients is long, the gremolata is actually made from many of the same ingredients as the dressing, but roughly chopped. If you are not a purist (I'm not!), you can also substitute rotisserie chicken for the chicken in the recipe. Be sure to zest your lemon before you juice it and use a well flavored tuna for this salad; tuna packed in oil generally has the best flavor. Cooling time for the chicken is not included in the timing. Prepare the chicken in the morning for afternoon service. This is the perfect salad for Memorial Day or Fourth of July.

3 canned anchovy fillets, rinsed and finely chopped
1 cup mayonnaise
1 pinch cayenne pepper
5 -6 canned anchovy fillets, rinsed and chopped
2 scallions, thinly sliced

Steps:

  • First, prepare the chicken. Pour the broth and wine in a large saucepan. Bring to a boil, add the onion, celery, bay leaf, lemon and peppercorns and simmer 5 minutes. Carefully lower the chicken breasts into the broth in a single layer, adding some boiling water, if needed, to cover them. Bring back to a boil, then turn the heat right down and simmer very slowly for another 5 minutes. Turn the heat off, cover the pan, and allow the chicken to cool in the broth. (This will take about 4-5 hours.).
  • When the chicken is cool, make the dressing. Put the tuna in a food processor with the capers, lemon juice, and anchovies. Process until you have a paste. Add the mayonnaise and cayenne and process again until smooth. Turn into a large bowl. Put all the ingredients for the gremolata in another bowl and mix them together to combine.
  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, or according to package directions. Refresh with cold water.
  • Once the chicken is cool, make the dressing. Put the tuna in a food processor with the capers, lemon juice, and anchovies. Process until you have a paste. Add the mayonnaise and cayenne pepper and process again until smooth. Turn into a large bowl. Put all the ingredients for the gremolata in another bowl and mix them together to combine.
  • Remove the chicken from the poaching liquid and cut into rough chunks. Add the chicken, pasta and gremolata to the dressing and toss lightly. Check the seasoning adding more lemon juice or cayenne to taste (you shouldn't need salt.).
  • To serve: arrange a handful of salad leaves on each plate, scatter over a few tomatoes, then spoon the salad on top. Arrange the artichoke hearts, if using, over the top and sprinkle with the roughly chopped parsley.

Two 12-ounce chicken breasts, boned and halved
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
4 cups arugula leaves (1 large bunch)
1 small carrot, peeled and finely chopped
1 rib celery, strings removed and finely chopped
1 small onion, peeled and finely chopped
1 medium clove garlic, finely chopped
1 cup dry white wine
3 fresh sage leaves
1 sprig rosemary
1/2 tablespoon capers, drained
One 6-ounce can light tuna, drained of oil
Salt and freshly ground pepper, to taste

Steps:

  • Heat oven to 425 degrees. Heat oil in ovenproof skillet over high heat. Season chicken with salt and pepper. Cook in skillet, skin-side down, until brown, 3 to 4 minutes. Flip; cook 1 minute. Remove chicken; add vegetables. Reduce heat to medium low; cook 5 to 6 minutes.
  • Add wine, and bring to boil. Stir in the herbs, capers, and tuna; add the chicken. Transfer skillet to oven, and roast until chicken is cooked through, about 15 minutes. Remove chicken; transfer to cutting board.
  • Discard herbs. Let tuna cool; puree until smooth. Add mayonnaise and juice. Slice chicken; arrange over arugula. Top with chilled sauce

1 1/2 cups dry white wine
1 stalk celery, roughly chopped
1 medium onion, peeled and cut into quarters
1 carrot, roughly chopped
1 leek, white part only, rinsed and chopped
4 sprigs marjoram
4 sprigs thyme
5 cloves garlic, peeled
2 to 2 1/2 pounds veal roast, top round, trussed (it should be no thicker than 3 inches
2 egg yolks at room temperature
Sea salt
2 1/4 cups extra virgin olive oil
5 tablespoons freshly squeezed lemon juice
1 7-ounce can tuna packed in oil
5 anchovy fillets
3 tablespoons capers, drained
Thin slices of lemon, pitted black olives sliced thinly, capers, parsley leaves or anchovy fillets, for garnish

Steps:

  • In a pot just large enough to fit veal, put wine, celery, onion, carrot, leek, marjoram, thyme and garlic. Add 3 inches of water, and bring to a boil. Add veal, and bring back to a boil. Immediately turn off heat, cover pot and let veal cool in its liquid 2 to 3 hours. When completely cool, thinly slice veal. Slices should be about 1/16 to 1/8 inch thick.
  • While veal cools, make sauce: In a large bowl, whisk together egg yolks and 1/4 teaspoon salt until pale yellow and the consistency of cream. Beginning a drop at a time, add 1 1/4 cups oil, whisking continually. As mixture thickens, you can add oil more quickly. When it gets quite thick, whisk in 1 tablespoon lemon juice. Continue adding oil until all of it has been absorbed and mayonnaise is quite thick and shiny. Whisk in another tablespoon of lemon juice.
  • Drain tuna, and put it in a food processor with anchovies, remaining cup olive oil, remaining lemon juice and capers. Process until you get a creamy, uniformly blended sauce. Scrape sauce into bowl with mayonnaise and fold to combine. Taste. It should be quite tangy and highly seasoned. Refrigerate until needed.
  • To assemble dish: remove 3/4 cup sauce, and reserve to serve alongside veal. Smear bottom of a large serving platter with some of the remaining tuna sauce. Place a layer of veal slices on top, meeting edge to edge without overlapping. Cover with sauce, then make another layer of meat and sauce. Repeat until all the meat is used. Leave yourself enough sauce to blanket top layer.
  • Cover with plastic wrap, and refrigerate for at least 24 hours. Bring to room temperature before serving. Garnish with some or all suggested ingredients. Serve with reserved sauce on the side.
