These braised new potatoes basically take a bath in butter. French style. What results is the exact same rich taste and creamy texture of potatoes roasted with your favorite hunk of meat-but in only 30 minutes and on the stovetop.

18 ounces small potatoes
3 1/2 tablespoons canned chicken broth or homemade chicken stock
2 garlic cloves (unpeeled)
2 thyme sprigs
10 1/2 tablespoons (5 1/4 oz) unsalted butter
Sea salt and freshly ground black pepper

Steps:

  • Arrange the potatoes in a single layer in a Dutch oven or other wide, deep pan. Place the Dutch oven over medium heat and add the chicken stock, garlic, thyme, butter, and salt to taste.
  • Cover the pan with a lid and bring to a boil over mediumish heat. Reduce the heat and gently simmer, shaking the pan or stirring the potatoes often, until the potatoes are just tender, 12 to 20 minutes, depending on the size of the potatoes.
  • Remove the lid and continue to cook, turning occasionally and keeping an eye on the heat so the butter doesn't burn, until the potatoes take on browned splotches on all sides, 5 to 10 minutes.
  • Use a slotted spoon to transfer the potatoes to a dish and season with pepper. Devour immediately.

Easily prepared but intensely flavoured, Chinese beef stew with potatoes tastes tender, succulent and aromatic.

700 g beef, cut into chunks (about 1.5 lb, see note 1)
2 tbsp neutral cooking oil
2 onions, sliced
1 thumb-sized ginger, smashed
2 star anises
1 piece cassia cinnamon (Chinese cinnamon)
2 bay leaves
2 cloves
2 dry chilies (optional)
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp Shaoxing rice wine
600 ml hot water (about 2.5 cups)
¼ tsp salt (or to taste)
3 medium potatoes, peeled and cut into chunks (about 350g/12oz)
1 medium carrot, cut into chunks (about 120g/4oz)
Coriander (cilantro), chopped (optional)

Steps:

  • Put beef into a pot filled with cold water (enough to cover the meat completely). Bring the water to a full boil. Use a spoon to skim off the froth on the surface. Then drain well.
  • In a clean pot, fry onion in oil over medium-low heat until soft and lightly browned. Stir in ginger and all the spices. Fry until fragrant.
  • Add the beef, along with light soy sauce, dark soy sauce, Shaoxing rice wine and hot water. Bring it to a full boil then turn down the heat to low. Cover with a lid. Leave to simmer for about 1h30 until the meat becomes tender (see note 3 & 4). Give the broth a taste, add a little salt if necessary.
  • Put potato and carrot chunks into the pot. Add some water if it seems too dry. Leave to simmer without the lid for 10-15 minutes until the vegetables are fully cooked.
  • Turn the heat up to reduce the broth if you wish. However, this step is entirely optional. Garnish with coriander (cilantro) if using. Serve immediately with plain rice.

One doesn't usually think of braising as a technique for cooking potatoes, but one should. It's so easy, and yields the same comfort quotient of the mashed sort without all of the peeling, boiling and mashing. Onion, garlic and your choice of thyme or rosemary give them a little oomph. As with all potato dishes, don't forget to season well with salt.

Steps:

  • Scrub the potatoes, then cut potatoes into 1-inch chunks.
  • Heat 3 tablespoons butter in a deep skillet or broad pot over medium-high heat. Add potatoes, onions, garlic, a sprig of thyme or rosemary, and salt and pepper. Cook, stirring, until potatoes begin to turn golden, 10 minutes.
  • Add good stock to barely cover the potatoes (about 2 cups). Bring to a boil, reduce heat and simmer, stirring occasionally, until potatoes are tender and liquid is reduced, about 30 minutes.
  • Season to taste with salt and pepper, then serve garnished with thyme or rosemary.

Coarse sea salt & black pepper
1 ½ cups all-purpose flour
High-temp cooking oil (avocado oil)
2 tbsp butter
10 white mushrooms (sliced)
1 large sweet onion (diced)
5 minced garlic cloves
1 tsp salt
Ground black pepper
1 tbsp fresh rosemary (chopped)
1 tbsp fresh thyme leaves
3/4 cup red wine (such as Cabernet)
½ cup tomato paste
2 cups beef broth
1 cup beef broth (as needed)
Fresh thyme (for garnish)
1 recipe Butter Mashed Potatoes

Steps:

  • Pat the short ribs dry with a paper towel, if needed, and season generously all over with sea salt and black pepper. Use your hands to work in the salt. Place the flour into a large bowl and coat each short rib all over with flour; tap off any excess.
  • Preheat a large stainless-steel or cast iron frying pan over medium-high heat and add a drizzle of cooking oil. Once the pan is extra hot, add in 4 to 5 short ribs and brown them all over for 8 to 10 minutes, ensuring that all sides are well browned. Remove them onto a tray, clean the frying pan and then fry the second batch. Watch my video recipe to see how it's done!
  • Next, preheat a braising pan over medium heat and add the butter. To the melted butter, add the mushrooms and onion and sauté them for 4 to 6 minutes, until tender. Next, add in the minced garlic and cook for an additional minute. Season the mixture with salt, pepper and fresh herbs. Add in the wine and tomato paste and whisk everything together. Cook this mixture for a few minutes before adding the beef broth.
  • Bring the sauce up to a simmer over medium-high heat and then return the short ribs to the pan, placing the ribs with the meat side facing down. Allow the sauce to come up to a simmer again, then cover the braising pan with a tight-fitting lid and reduce the temperature to low.
  • Braise the beef short ribs for 3 to 3 ½ or even 4 hours, until the meat is extra tender and falls of the bone naturally. If the braising sauce reduces too much, add an additional ½ cup to 1 cup beef broth, as needed. Once the ribs are done, remove the pan from the heat and gently place the short ribs to one side of the pan. Tilt the pan slightly and use a large spoon to skim off the fat that has risen to the surface into a measuring cup. Allow this fat to cool, then dispose of it in a waste container.
  • When the short ribs have approximately 30 minutes of cooking time left, prepare my Creamy Butter Mashed Potatoes recipe.
  • For serving, place 1 large or 2 small ribs onto each plate, over a bed of mashed potatoes. Pour extra sauce over each rib and garnish with fresh thyme leaves.
  • Alternative cooking methods: a. Pressure Cooker: brown the short ribs first, then prepare the sauce in the pressure cooker and add the ribs. Cook on the 'High' Pressure setting for 60 to 70 minutes with Natural Release 15 minutes, or use the machine setting for 'short ribs'.b. Slow Cooker: prepare the recipe as written and place the sauce and ribs into the cooker. Cover and cook on the 'high' setting for 10 to 12 hours. Add an additional ½ cup to 1 cup beef broth halfway through, if needed.

1/2 to 1 teaspoon adobo seasoning

1/4 cup olives (pimento-stuffed Spanish Manzanilla, pitted)

8 ounces tomato sauce (canned, seasoned with peppers and onions)
1 cup chicken broth (or water)

Steps:

  • Gather the ingredients.
  • Season the chicken pieces with the adobo seasoning.
  • Heat the olive oil over medium heat in a heavy skillet or a Dutch oven .
  • Add the chicken pieces and brown them for about 5 minutes per side.
  • Add the potato cubes, tomato sauce, chicken broth, culantro, olives, cumin, Italian seasoning, bay leaf, achiote oil, and sofrito. Stir well and turn the chicken pieces to coat them with the sauce.
  • Cover the pot with a tight-fitting lid and reduce the heat to low. Simmer the chicken stew for 35 minutes or until a thermometer inserted in the thickest piece, away from the bone, reads 160 F.
  • Remove the bay leaf and the culantro leaf.
  • Serve hot and enjoy!

3 heads garlic, top 1/2-inch sliced off to expose the cloves
3 shallots, unpeeled
4 bay leaves
2 sprigs fresh thyme
6 sprigs Italian parsley
1/2 teaspoon white peppercorns
1 1/2 teaspoons kosher salt
3 tablespoons extra virgin olive oil
4 cups chicken broth, homemade or low-sodium canned

Steps:

  • Preheat the oven to 350 degrees. Place the potatoes and garlic in a 12-inch round casserole, at least 3 inches deep. Scatter the shallots, bay leaves, thyme, parsley and peppercorns over the top. Sprinkle with the salt and drizzle the olive oil evenly over the top. Pour in the chicken broth. Bake until the potatoes are tender, about 1 1/2 hours.
  • Turn the oven up to 450 degrees. Bake until most but not all of the liquid is absorbed, about 45 minutes longer. Discard the bay leaves and herbs. Serve, spooning a little of the remaining liquid over the top.

2 1/2 lbs beef ((e.g. chuck, shanks or brisket, cut into 2-inch pieces))
2 Tbsp olive oil
4 Tbsp butter
3 cups button mushrooms ((rinsed, whole))
4 carrots ((medium, peeled and cut into large pieces))
2 leeks ((white and light green parts only, sliced 1/4" thick))
1 vidalia onion ((large, peeled and chopped))
4 shallots ((peeled and cut in halves))
2 garlic cloves ((minced))
2 garlic heads ((optional))
1/3 cup all purpose flour
4 cups beef broth ((or beef stock, heated))
2 Tbsp red wine vinegar
Kosher salt ((to taste))
1/2 tsp black pepper ((plus more to taste))
1/4 tsp nutmeg
Chopped fresh herbs ((for garnish))

Steps:

  • Start preheating the oven to 350F.
  • If you like garlic and want to add a couple of full heads, it's a creamy deliciousness once cooked, do as follows. Remove as much loose skin as you can. Cut off about a quarter to one third from one end. Garlic heads will go in the braising pan later, while some of the cut off pieces can be used in this recipe in place of the two required garlic cloves and the rest can be saved for other uses.
  • Heat the olive oil with two tablespoons of butter in a braising pan over medium-high heat. Add the beef and brown on all sides. Remove the meat from the braising pan and set aside.
  • Add the onions, mushrooms, shallots, carrots and leeks. Saute until the vegetables are slightly softened, about 4-5 minutes. Add the minced garlic and continue sauteing for another minute.
  • Add the remaining two tablespoons of butter and let it melt, while constantly stirring. Turn the heat down to low. Have the broth ready. Add the flour and stir briskly until it is fully incorporated. Pour in the broth, turn the heat up to medium high and let the liquid mixture come up to a boil. Reduce heat to medium and simmer, constantly stirring, until the mixture starts to thicken. It shouldn't take long, less than a minute. Remove from heat.
  • Add the pepper and nutmeg, stir, then salt to taste. Stir in the red wine vinegar. The sauce may taste a little too tart right after you add the vinegar, but it will be perfect by the time it's done cooking.
  • Nestle beef pieces and garlic heads, if using, in the sauce, spreading them out evenly. If using, place the garlic bulbs cut side up. Garlic smell can be quite strong, so add those bulbs only if you love garlic and have a good ventilation in the kitchen. If you place it cut side down, the sauce will get infused with garlic too much.
  • Cover and braise in the oven at 350F for 3-4 hours. I think the beef only gets better if cooked a little longer.
  • Serve with freshly made mashed potatoes, garnish with chopped fresh herbs, and enjoy.

  • Add the potatoes, cover, and simmer until they can be pierced easily with the tip of a knife, about 15 minutes.
  • The time will vary with the type and size of the potatoes, so check a little before the 15 minute mark and then check frequently after it.
  • If you'd like to serve some of the cooking liquid with the potatoes, lift the potatoes from the pan with a slotted spoon; put them in a warm bowl and cover them; turn the heat up under the broth; cook the broth for a few minutes until it reduces slightly and the flavors are more concentrated.
