CRISPY CHICKEN SANDWICH RECIPE
These Chicken Sandwiches are crispy on the outside with a juicy center. We're sharing all of our best tips for making flavorful fried chicken breast with a thick and shaggy crust that crunches when you bite into it.

Steps:
- Pound chicken cutlets between 2 sheets of plastic wrap and pound to an even 1/2" thickness so they cook more evenly.
- In a large mixing bowl, whisk together marinade ingredients. Add Chicken, turning to coat then cover and refrigerate for 2-4 hours or overnight.
- In a separate shallow bowl, whisk together breading ingredients: flour, salt, pepper, baking powder, paprika, onion powder and garlic powder. Remove a piece of chicken from the marinade, letting excess drip off and dip chicken into flour mixture, pressing it on with your hands to coat well. Transfer to a wire rack.
- Heat 1 " oil in a soup pot or dutch oven to 350˚F. Just before frying chicken, dip it into the seasoned flour again for a thick and shaggy exterior.Add chicken, 2 pieces at a time for a smaller pot so you don't crowd and reduce the temperature of the oil too quickly.
- Place chicken into the oil one by one. Adjust the flame to keep the oil temperature at 300-325˚F. Cook 3-4 minutes on the first side or until browned and crisp then flip and cook another 2-3 minutes on the second side or until cooked through and chicken is browned and crisp all over.
- Transfer to a wire rack set over a baking sheet. The internal temperature will continue to rise as it rests. The final resting temperature of the chicken should reach 165˚F.
- Lightly butter and toast the cut sides of your buns and build your crispy chicken sandwiches with desired toppings.

CHICKEN CUTLET SANDWICHES

- If you can't find cutlets in the store, you can make them. Put a boneless, skinless chicken breast on your work surface. Using a sharp knife, carefully cut the chicken breast like you'd cut a bagel, so you end up with two pieces of chicken that are the same width and length as the original, just half as thick. Repeat with remaining chicken breast.
- Place the egg in a shallow bowl and combine the breadcrumbs with the cheese on a plate. Dip the cutlets into the beaten egg, and then into the breadcrumb mixture to coat. Press the crumbs gently onto the chicken so they will stay.
- Melt the butter in a large skillet over medium heat. Sauté the breaded cutlets, turning once, for 6 to 9 minutes until thoroughly cooked. The chicken should be cooked to 165 F for food safety reasons. Move the chicken to a plate and cover with foil to keep warm.
- Toast the hoagie buns, if desired. Spread the mayonnaise on one half and mustard on the other half of the bread. Make sandwiches with the hot chicken cutlets, tomato, and lettuce. Serve immediately, so you get the contrast of hot chicken and cool veggies.

EGG LETTUCE TOMATO (ELT) SANDWICH
Great alternative to the traditional BLT if your house runs a plenty with eggs, but bacon isn't always around or as easy to hard boil, ha!

Steps:
- Toast bread, let cool.
- Spread mayonnaise on one side of each piece of bread.
- Top one slice of bread with 2 slices of tomatoes, season per preference with both sea salt and pepper.
- Arrange eggs evenly over tomato slices.
- Top eggs with lettuce and place other slice of bread on top.
- While lightly pressing sandwich together from top down, cut sandwich in half.

Steps:
- Toast bread partly (not completely, since you will later finish warming it on the stove).
- Slice tomato (thick slices taste best) and lay out on 1 slice bread.
- Grill chicken (be sure the chicken is fully cooked before-hand; right now you are just adding flavor) on stove using oil and Italian seasoning (and any other seasonings that you enjoy).
- Take chicken off of stove (turn stove to a small heat to use for later) and chop into smaller pieces and then put chicken on top of the tomato.
- Tear lettuce into smaller pieces (small shreds or into 2 pieces so it fits on the bread) and lay onto of bread.
- Top with 2nd slice of bread.
- Turn stove back to normal heat.
- Lay entire sandwich on pan and grill until the sandwich is warm and then turn over and do the same to the other side.
- If you desire, while grilling, spray bread with extra oil and Italian seasoning on both sides for additional flavor (keep in mind that your hands will get a little bit oily while eating).
- Enjoy!
