This recipe is sooooooo good and quite easy to make. Chicken pieces dipped in buttermilk, coated with tortilla chip crumbs, and baked. Ta dah!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Pour buttermilk into a shallow dish or bow. Place tortilla chip crumbs in a large, resealable plastic bag. Dip chicken pieces in buttermilk, then place in bag, seal tightly and shake to coat thoroughly. Place coated chicken in a lightly greased 9x13 inch baking dish.
- Bake at 350 degrees F (175 degrees C) for about 35 minutes, or until chicken is cooked through and juices run clear.

CHICKEN TO DIE FOR
My sister-in-law gave me this recipe. My family loves my chicken to die for. They would eat it all the time if they could. When I crush the ritz I found that my food processor works the best to get the crackers small enough to coat the chicken. I use pie pans for the melted butter and crushed ritz's.

Steps:
- Pound chicken flat to about 1/4 inch thick.
- Place chicken in melted butter to coat competely.
- Then put coated chicken into ritz's to coat evenly.
- Put in 13 x 9 pan then place cheese slice on one end of chicken then fold over.
- Sprinkle with dried onion and garlic powder to your desire.
- Bake at 350* for 30 minutes.

GARLIC CHICKEN TO DIE FOR
I got this recipe from my mom and I think she got it from a friend at work. It is so good, I've modified it a little. I've made this with boneless pork chops too and they come out oh so tender. It's definitely a keeper for us! The important part of this recipe is the marinade so you need to plan ahead at least 4 hrs...if not overnight. Trust me it is worth the extra time!

Steps:
- Combine egg yolks, chopped garlic, and chicken breast portions or pork chops into zipper style plastic bag. Press out as much air as possible and seal. Massage the bag to make sure the chicken pieces are all well coated with egg and the garlic is well distributed. Refrigerate at least four hours, up to overnight.
- After mixture has marinated for at least 4 hours: Preheat the oven to 400°F Place melted butter in a sprayed 9x13 glass baking dish, tipping dish until bottom of pan is coated with butter. In a small mixing bowl, combine breadcrumbs, cheese, parsley, salt and pepper. Dredge meat in this mixture so they are coated well on all sides. Lay pieces in the baking dish in a single layer. Pour any remaining egg mixture over the top.
- Bake for 30-40 minutes or until no pink remains in the chicken and the juices run clear.

CORONATION CHICKEN TO DIE FOR.
This is one of my most requested recipe's. I always serve it at buffets (I wouldn't dare not) and it is always the first to go. This is an extremely simple version and anyone can make it.

Steps:
- Heat oil in saucepan, add the chopped onion, cover and saute gently for 5 minutes until the onion is soft but not brown.
- Stir in the curry powder and cook for another two minutes, this will help bring out the flavour.
- Add the stock, tomato puree, lemon juice and chutney.
- Stir until bubbling, then cook for 5 minutes and the mixture reduces and thickens.
- Allow to cool for half an hour or so, then stir in the mayonnaise and cream.
- Add chicken (which should be chopped into reasonable sized chunks) and mix throughly.
- Serve over cold rice.
- Excellent buffet dish.
- Enjoy.
CHICKEN BREASTS "TO DIE FOR"
Every time I serve this very rich, delicious chicken dish my guests request the recipe, often saying it's "to die for". The sauce is so creamy and rich, it can handle creativity and still come out delicious. Some variations I've tried include adding mushrooms and frozen baby peas. I've also tried it with broccoli pieces to create a one-dish casserole.

Steps:
- Preheat oven to 350 degrees.
- Clean chicken breasts and add pepper to taste (no salt needed!); place in baking dish.
- Cut one stick of butter into 8 pieces and place in saucepan on low heat. Once butter is nearly melted, pour in chicken broth and raise the heat to medium.
- Add both cans cream of chicken soup and stir till thoroughly combined.
- Pour the heated mixture over the chicken breasts.
- Cut remaining stick of butter into 8 pieces and place on chicken pieces.
- Cover tightly with foil and bake in 350 degree oven for 45-50 minutes, depending on size of breasts.
- During the last 15 minutes of baking, cook the noodles according to directions.
- Place noodles on large platter.
- Place chicken breasts on top.
- Stir sauce to incorporate the chicken juices and butter, and pour over platter -OR- Pour sauce into gravy boat and serve on the side.

- Place breast in stock pot and cover with water. Just about a gallon and a half.
- place on stove on medium heat and raise to ALMOST simmering. Turn down heat to simmer.
- As the water warms to simmer, you will see the blood and other fluids from the meat come to the top of the pot and float. Use a big table spoon, or any large serving spoon and carefully skim off all the brown foam. This might take 30 minute of careful watching.DO NOT LET BOIL! Believe me it's worth it! Removing all this "dirt" as my Grandma used to call it really "cleans" the taste of the soup.
- After all the skim has been removed, try to leave the yellow fat pools on top of the soup, thats where the flavor is.
- Add your peeled and sliced carrots, sliced celery and quarterd onion to stock and bring to a full boil for 20 minutes.
- reduce to simmer, add boulion cubes and Dill, cover and simmer for another 30 minutes.
- Add salt and pepper to taste.
- Cook your favorite noodles and serve.

CHICKEN TO DIE FOR (LOW CARB)
Steps:
- Melt butter in your largest skillet. Place half the chicken thighs in the pan. (The chicken will be cooked in two batches.) Sprinkle chicken generously on both sides with garlic powder, Mrs. Dash, and seasoned salt. Sprinkle with pepper to taste.
- Cook until well browned, and remove chicken and brown bits to a bowl. Cook the rest of the chicken the same way. When the 2nd batch is done, dump the first batch back into the skillet, so that all the chicken is now in the pan.
- Heat 3/4 cup water in microwave and dissolve the 3 chicken bouillon cubes in it. Add the Worcestershire sauce, wine and sour cream and stir well. Add the minced onions. Pour the wine mixture over the chicken. Make sure the onions are submerged in liquid. Simmer for about 1 hour, until liquid is almost gone.
