Chicken Tikka Masala is an Indian one pan dinner highlighted with yogurt marinated chicken that is simmered in a creamy spiced tomato sauce.

1 ½ pounds boneless (skinless chicken breasts cut in 1-inch pieces)
Salt
Pepper
1 teaspoon cumin
1 teaspoon coriander
½ cup plain yogurt
2 tablespoons butter
1 medium red onion (chopped)
2 garlic cloves (chopped)
1 1-inch piece of ginger root, peeled and chopped
1 tablespoon Garam Masala
1 15 - ounce can diced fire roasted tomatoes
1 teaspoon sugar
1/4 cup half and half
A handful of chopped cilantro (plus extra for serving)
4 cups cooked basmati rice
2 cups frozen green peas (thawed and warmed)

Steps:

  • Preheat oven to broil and place the oven rack in the highest position. Line a baking sheet with foil and set aside.
  • Place the chicken in a medium sized bowl and season with salt, pepper, cumin and coriander. Add yogurt and toss with the chicken so that it is completely coated. Place the chicken in a single layer on the prepared baking sheet and broil for 7 - 10 minutes or until the chicken is just cooked through and the edges are blackened. Remove from oven.
  • Heat a large sauté pan over medium high heat and add the butter. When it has melted and just begins to foam, add the red onion, garlic and ginger root. Sauté for 8 - 10 minutes or until the onions begin to soften and the edges are starting to brown. Stir in the Garam Masala and cook for about 30 seconds to release the oils in the spices. Add the tomatoes, sugar, and chicken. Stir to combine and simmer for 5 minutes.
  • Slowly add the half and half and stir to fully incorporate it into the sauce. Sprinkle in the cilantro and gently stir to combine. Season to taste with salt and pepper and remove from the heat.
  • Serve over basmati rice and green peas and sprinkle with fresh chopped cilantro.

This is my own take on one of my top three favorite dishes of all time. I like mine fairly mild, so feel free to add more ground red pepper or diced jalapeño if you prefer.

1 1/2 lbs chicken breasts
2 cups plain nonfat yogurt
1/4 cup lemon juice
1 tablespoon cumin
1/4 teaspoon ground red pepper
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon butter
4 garlic cloves, finely minced
3 (8 ounce) cans tomato sauce
2 tablespoons ground coriander
2 tablespoons ground cumin
2 tablespoons paprika
2 tablespoons garam masala
1 cup heavy whipping cream
1/2 cup fresh cilantro, finely chopped
1 tablespoon butter
1/4 cup sliced green onion
1/2 cup onion, diced
1 garlic clove, minced
2 cups jasmine rice
3 1/2 cups water
1 teaspoon garam masala
1 teaspoon cumin
1 teaspoon paprika
1/4 teaspoon ground red pepper
4 -5 whole cloves
1/2 teaspoon salt

Steps:

  • Trim fat from chicken breasts and discard or add to chicken stock bag.
  • Cut chicken breasts into 1 inch cubes.
  • Place in medium bowl with marinade ingredients. Mix together well and refrigerate 1 hour.
  • For sauce, heat butter in large skillet on medium heat.
  • Saute garlic.
  • Add tomato sauce and spices. Stir together and reduce heat to low, allowing to simmer for 5 minutes.
  • Stir in heavy whipping cream, allow to simmer.
  • Thread marinated chicken cubes onto skewers.
  • Grill or broil chicken, turning occasionally, until cooked thoroughly, roughly 8-10 minutes.
  • Add chicken and chopped cilantro to sauce, simmer for additional 5 minutes, then serve over rice or with Naan bread.
  • Rice:.
  • In medium sauce pan, briefly saute green onions, onions and garlic in butter.
  • Add rice and seasonings, allow rice to cook 1-2 minutes.
  • Add water and bring to a boil.
  • Reduce heat, cover, and simmer for 20 minutes.
  • Turn off stove, allow to stand covered for additional 10 minutes.
  • Remove whole cloves before serving.

Spiced Roast Chicken With Fragrant Jasmine Rice image

I got this recipe out of a Dish Magazine. It is beautiful! Prep time included time to marinate. I sometimes marinate over night.

1 chicken
3 garlic cloves, roughly chopped
2 tablespoons ginger, chopped
1 red chili pepper, seeded and chopped
3 tablespoons brown sugar
1/2 teaspoon Chinese five spice powder
2 tablespoons fish sauce
2 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon peanut oil
1 teaspoon sesame oil
2 tablespoons peanut oil
1 onion, chopped finely
3 garlic cloves, crushed
1 tablespoon ginger, grated
5 cardamom pods, lightly crushed
1 tablespoon black mustard seeds
2 cups jasmine rice, washed and drained
900 ml chicken stock
1 teaspoon salt
1 teaspoon cornflour
2 teaspoons water
2 limes
fresh herb (to garnish)

Steps:

  • CHICKEN: Use kitchen scissors to cut down both sides of the back bone and remove.
  • Open the chicken out like a book and snip through the wishbone to enable the chicken to lie flat.
  • Slash the skin several times and place the chicken in a large dish.
  • Pound the garlic, ginger, chilli and sugar to paste in a mortar and pestle or blend in a small food processor.
  • Add the remaining ingredients and mix well.
  • Pour the marinade over the chicken and rub into the meat.
  • Cover and marinate in the refrigerator for 2-3 hours if possible.
  • Preheat the oven to 200°C.
  • Heat a little oil in an over proof saute pan over a medium heat.
  • Take the chicken out of the marinade, letting the excess drip back into the dish.
  • Place the chicken in the pan, skin side down and allow to brown.
  • Turn the chicken over and pour over the marinade.
  • Roast the chicken in the over 50-60 minutes, basting a couple of times during cooking.
  • Transfer the chicken to a plate and rest, lightly covered, for 5 minutes.
  • Tip the pan juices into a small pot.
  • Mix the cornflour with the water and stir into the juices.
  • Simmer for 2 minutes then add a good squeeze of lime juice and pour into a serving jug.
  • RICE: Heat the oil in an oven-proof saute pan or pot with a lid.
  • Add the onion, garlic, ginger, cardamom pods and mustard seeds and gently fry until tender.
  • Add the rice, stock and salt and bring to the boil.
  • Cover and place back in the oven for 25 minutes.
  • Stir the rice once during cooking.
  • Remove from the oven and sit covered, for 5 minutes before serving.
  • TO SERVE: Spoon the rice onto a platter.
  • Cut the chicken into serving pieces and place on top.
  • Scatter fresh herbs over the chicken and garnish with lime wedges.
  • Bowls of thick plain yoghurt, roasted chopped peanuts and crispy shallots are nice accompaniments.

A very classic Tikka Masala that you would get in many restaurants in London. This variation uses cream instead of yogurt. Which gives a creamy texture that does not break and is amazing with jasmine rice.

2 tablespoons butter
1 yellow onion, Fine dice
4 garlic cloves, chopped fine
2 teaspoons garam masala
2 teaspoons curry powder
1 (8 ounce) can tomato sauce or 1 (8 ounce) can crushed tomatoes
1 cup heavy cream
2 tablespoons oil (vegetable)
6 chicken tenders or 3 boneless chicken breasts, cut in 1 inch pieces
1 tablespoon curry powder
1 teaspoon salt
3 cups cooked jasmine rice

Steps:

  • Sauce:.
  • In a sauce pan add the butter and the onion, sweat over medium heat until translucent about 5-7 minutes. Add the garlic and cook for 1 minute.
  • Add the Garam and Curry and mix will with the onions. Cook over medium heat for 1 minute.
  • Add the tomato sauce and cook for 2-3 minutes. Add the cream and cook over med to med-low heat until thickened. About 12-17 minutes.
  • Chicken:.
  • Mix together the Cury and salt, evenly coat the pieces of chicken.
  • In a large skillet/frying pan over medium high heat add the oil and the chicken pieces. Cook the chicken until cooked through with no pink inside.
  • Mix:.
  • Add the cooked chicken to the thickened sauce and mix well, season to taste.
  • Serve overtop cooked jasmine rice.

4 boneless skinless chicken breast halves
2 inches fresh ginger (peeled)
8 cloves garlic
4 teaspoons water
1 cup plain yogurt
2 tablespoons vegetable oil
1 lemon, juice of
1/2 teaspoon ground cumin
1/4 teaspoon ground mace
1/4 teaspoon grated nutmeg
1/4 teaspoon ground cardamom
salt & pepper
2 lbs ripe tomatoes (seeded and finely chopped)
1/2 lb green bell pepper (stemmed, seeded and chopped)
1/2 inch ginger (peeled)
4 cloves garlic
2 teaspoons water
1/2 cup unsalted butter
1/2 cup heavy cream
2 teaspoons honey
salt
1/4 teaspoon garam masala, spice mixture (available in Indian or Specialty Markets)

Steps:

  • CHICKEN RECIPE: In a large bowl, combine yogurt, vegetable oil, lemon juice, 4 teaspoons of the ginger/garlic paste that you made in the blender, cumin, mace, nutmeg, cardamom, salt and pepper and mix well.
  • Rub the chicken breasts thoroughly with this mixture and place in a glass baking dish, cover and refrigerate for 4 hours.
  • Preheat oven to 350 degrees.
  • Remove chicken breasts from marinade and discard remaining marinade.
  • Place the chicken in a baking dish.
  • Roast for 8 to 10 minutes, basting with vegetable oil and pan drippings at least twice.
  • When the chicken is tender and cooked through and its juices run clear, remove from the oven and keep warm.
  • Just before serving, slice the cooked chicken and place it in the simmering masala sauce for a few minutes, until heated through.
  • Serve hot.
  • MASALA SAUCE RECIPE: About half an hour before you finish marinating the chicken, start the masala sauce.
  • Place tomatoes and green bell peppers in a saucepot.
  • Add 2 cups water and bring to a boil.
  • Boil for 20 minutes, or until the tomatoes are thoroughly cooked.
  • While the tomatoes and peppers are cooking, cut the half inch piece of ginger into several smaller pieces and place in blender.
  • Add garlic cloves and water and puree.
  • When tomatoes and peppers are nearly done, reduce heat to medium, add 2 teaspoons of the ginger/garlic paste and cook for about 2 minutes.
  • Reduce heat to low, stir in the garam masala and salt and cook 5 to 6 minutes, or until the liquid is the consistency of a thick puree.
  • Remove pan from heat, strain and return sauce to the pot and bring to a boil.
  • Reduce heat to low, stir in butter, cream and honey and simmer gently until ready to add the chicken and serve.
