CHICKEN WITH DRIED CRANBERRIES AND TARRAGON

Chicken With Dried Cranberries and Tarragon image

My son just brought me a bottle of verjuice. I wasted the last one, so went to the web to find out how to use this bottle. It seems you can just try using it in place of vinegar, lemon or fruity wine. This recipe is good,it's from a Canadian site.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

3 tablespoons all-purpose flour
salt and pepper
4 boneless chicken breasts, skin on
2 tablespoons oil
3/4 cup verjuice or 3/4 cup fruity white wine
2 large shallots, finely chopped
1 garlic clove, finely chopped
1 1/2 cups chicken stock
1/2 cup light cream
1 cup dried cranberries
1 teaspoon lemon juice
1 teaspoon chopped fresh tarragon

Steps:

  • Heat the oil in a large skillet over medium high heat.
  • Combine the flour salt and pepper and dredge the chicken breasts in this, shaking off any excess.
  • Add the chicken breasts skin side down to the skillet, cook until golden brown, turn over and repeat.
  • Transfer the chicken to a baking dish, place in oven and bake for 12-15 minutes.
  • Drain the skillet and return to the heat-reducing it to medium.
  • Deglaze the pan with half the verjuice, scraping the bottom with a wooden spoon.
  • Add the shallots, garlic, stock and cream, and simmer until reduced to a consistency that coats the back of a wooden spoon.
  • Add the remaining verjuice, dried cranberries and lemon juice.
  • Stirring with a whisk, reduce sauce a bit more, then season with salt and pepper and add the chopped tarragon.
  • To serve, slice the chicken breasts on an angle, and fan out onto a plate.
  • Top each breast with a generous amount of the sauce.

CHICKEN TAGINE

Chicken Tagine image

A relatively easy to prepare dish that adds a twist to your diet. Use a dutch oven if a tagine is unavailable.

Provided by lamarb

Categories     Chicken Thigh & Leg

Time 2h20m

Yield 1 serving(s)

Number Of Ingredients 19

1 chicken leg, quarter
2 teaspoons white wine vinegar
1/4 teaspoon cinnamon
1/4 teaspoon saffron
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon paprika
1/2 teaspoon cumin
1 tablespoon olive oil, plus to oil tagine (a Dutch oven will suffice)
2 slices onions, chopped
2 garlic cloves, sliced
1/2 cup chicken broth
6 kalamata olives, pitted
2 -4 slices lemons, heavily salted
2 dried apricots
6 dried cherries
2 tablespoons dried cranberries
2 teaspoons cornstarch
4 tablespoons dry cracked bulgur wheat or 4 tablespoons couscous

Steps:

  • Wash the chicken and pat dry. Pour the vinegar into the palm of your hand and rub all over the chicken. Mix the spices with the olive oil. Cover the chicken with the mix, place in a plastic bag, and refrigerate over night.
  • Preheat the oven to 325 degrees.
  • Oil the bottom of your tagine and brown the chicken on all sides. Add the onions and garlic and sweat to translucence. Add the broth and bring to a boil. Cover and place in the oven for 1 ¾ hours.
  • Spread the wheat out on a lipped cookie sheet and spritz liberaly with water and a pinch of salt. Let rest for 1 hour, sprizting frequently, as it swells up. Line a colander with a clean, damp dish towel and place over a simmering pot of water. Don't let the water touch the towel. Scrape the swollen couscous into the towel and fold the towel over. Let it steam for 15 minutes.
  • After the 1 ¾ hours add the fruits to the chicken and cook for 15 more minutes.
  • Make a paste out of the corn starch. Remove the chicken and fruits and add the paste, stirring until the sauce thickens. Place the chicken back into the sauce to re-heat, if necessary.
  • Plate the chicken on a bed of the couscous and flank with the fruits. Pour the sauce on top and serve.

CHICKEN TAGINE WITH DRIED CRANBERRIES

Chicken Tagine with Dried Cranberries image

I just bought a Moroccan tagine and had to try it out. After browsing online for recipes, I ventured to prepare something and ended up with my own recipe for chicken tagine with dried cranberries. You can also make this in a slow cooker, see the footnote below. It came out yummy! Enjoy over rice or couscous.

Provided by Milly Suazo-Martinez

Time 4h

Yield 6

Number Of Ingredients 17

4 tablespoons lemon juice
½ cup extra-virgin olive oil, divided, or as needed
1 ¼ teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon black pepper
1 (3 1/2) pound whole chicken, cut into pieces
1 cup thinly sliced carrots
1 large onion, halved lengthwise, then cut crosswise into 1/4-inch-thick slices
2 cloves garlic, minced
4 medium red potatoes, cut into thin slices
2 medium tomatoes, peeled and chopped
1 medium yellow bell pepper, cut into chunks
½ cup dried cranberries
¼ cup chopped fresh parsley
1 tablespoon chicken bouillon granules
¼ cup dry white wine

Steps:

  • Mix lemon juice, 2 tablespoons olive oil, salt, cinnamon, ginger, and pepper together in a large glass or ceramic bowl. Add chicken pieces and toss to coat. Cover and let sit in a refrigerator for 2 hours, up to overnight.
  • When ready to start, line a tagine with sliced carrots.
  • Heat another 2 tablespoons olive oil in a heavy skillet over medium heat until hot, but not smoking. Brown 1/2 of the chicken pieces, skin-side down, turning over once, 5 to 7 minutes. You are just browning it, not cooking it through. Take out of the skillet and place on top of the carrots, then brown the remaining pieces of chicken. Once those are browned, but not cooked through, arrange on top of the carrots also. The idea is that the chicken does not touch the bottom of the tagine, only the carrots.
  • Add onion to the same skillet and saute over medium-high heat until soft, about 5 minutes. Reduce heat to medium. Add garlic; saute for 30 seconds. Stir in potatoes and saute, 1 to 2 minutes. Add tomatoes, bell pepper, cranberries, and parsley; stir well and keep sauteing over medium heat until hot and bubbly. Sprinkle the chicken bouillon granules over the mixture while it cooks.
  • Pour the mixture over the chicken and carrots. Place the tagine over low heat, making sure any open flames do not touch the bottom of the pot. Drizzle remaining olive oil over top. Pour wine over top and cover.
  • Cook over low heat until potatoes are soft and chicken is no longer pink in the center, about 1 hour. Turn off the heat and let sit for 10 minutes before serving.
