You only need 5 ingredients and 10 minutes to prepare this easy dinner recipe for Dump-and-Bake Chicken Stuffing Casserole!

2 lbs. boneless, skinless chicken breasts (I used 2 very large chicken breasts, which I cut in half lengthwise so that they would be thinner)
1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted (I used Campbell's Healthy Request)
2 cups (8 ounces) grated mozzarella cheese
8 ounces (about 4 cups) Pepperidge Farm Herb Seasoned Classic Stuffing
½ cup (1 stick) butter, melted

Steps:

  • Preheat oven to 375 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Place chicken in the bottom of the prepared baking dish. Season both sides of the chicken with salt and pepper, to taste. Spread condensed soup over the chicken. Sprinkle cheese over top.
  • In a large bowl, stir together melted butter and dry stuffing mix. Spread buttered stuffing mix on the top of the casserole.
  • Cover with foil and bake for 30 minutes. Remove foil, return dish to the oven, and continue baking for 10 more minutes (or until chicken reaches an internal temperature of 165 degrees F and the topping is golden brown). If you are using thicker chicken breasts, you may need to increase the baking time by at least 10-20 more minutes. If the topping starts to get too dark while you wait for the chicken to cook through, cover the dish loosely with foil.

2 packages (6 ounces each) chicken stuffing mix
2 cans (10-1/2 ounces each) condensed cream of mushroom soup, undiluted
1 cup 2% milk
4 cups cubed cooked chicken
2 cups frozen corn
2 cans (8 ounces each) mushroom stems and pieces, drained
4 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°. Prepare stuffing mixes according to package directions. Meanwhile, in a large bowl, combine soup and milk. Spread stuffing into two greased 8-in. square baking dishes. Layer with chicken, corn, mushrooms, soup mixture and cheese. , Cover and bake until cheese is melted, 30-35 minutes. , Freeze option: Cover and freeze unbaked casseroles for up to 3 months. Remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 350°. Bake, covered, 1-1/2 hours. Uncover; bake until heated through, 10-15 minutes longer.

1 (6 ounce) box seasoned stuffing mix
1 (10 3/4 ounce) can cream of chicken soup
1/2 small vidalia onion, sliced into thin rings (optional)
1 tablespoon white wine
1/2 teaspoon garlic powder
1 tablespoon milk
6 slices swiss cheese
1/4 cup butter, melted
salt and pepper

Steps:

  • Pre heat oven to 350 degrees.
  • Par boil chicken breasts for about 20-30 minutes in water or chicken stock in large pot.
  • Cool& slice chicken into cubes.
  • Place into a greased 9x13 pan.
  • Place slices of onion (optional) and cheese over entire pan of chicken.
  • Mix soup, milk, wine,& garlic powder and pour over chicken.
  • Top with stuffing.
  • Pour melted butter over stuffing and bake for 30-40 minutes.

I also like to make this with Thanksgiving leftovers, but it's good any time of year you have leftover poultry. I also improve the nutritional value by using low-fat, low-sodium, and whole-grain products whenever possible or by substituting homemade ingredients.

4 cups cooked boneless skinless chicken breasts, cubed (about 4 large breasts)
2 (6 ounce) packages Stove Top stuffing mix (low-sodium preferable)
1/2 cup unsalted butter (low-fat if possible)
1 cup skim milk
1 cup water or 1 cup low sodium chicken broth
3 cups frozen vegetables (broccoli, cauliflower, green beans, peas, carrots, corn, or your favorite frozen veg. blend)
2 (10 1/2 ounce) cans cream soup (mix or match celery, chicken, or mushroom)

Steps:

  • Preheat oven to 350 degrees F.
  • Evenly cover bottom of ungreased 13x9-inch pan with cubed chicken.
  • Layer frozen vegetables evenly over chicken.
  • In a mixing bowl, combine cans of soup with milk, mixing well, and pour evenly over vegetables.

1 (3 pound) whole chicken
8 ounces dry bread stuffing mix
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 ¼ cups chicken broth (from boiling the chicken)
1 cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer.
  • In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center.

1 (8 ounce) package Stove Top stuffing mix (Long grain and wild rice flavor)
1/2 cup butter
1 cup sour cream
1 (14 ounce) can chicken broth
1 (10 ounce) cream of chicken soup
2 chicken breasts, cooked and diced

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a 13x9 pan.
  • Sprinkle with 3/4 of the package of dry stuffing mix.
