CHICKEN CHASSEUR FOR A CROWD

This recipe feeds a lot of people so you will need large frying pans and ovenproof dishes. It may be easier to cook it in batches.

125g/4½oz plain flour
sea salt and freshly ground black pepper
7.5kg /9lb 13oz chicken thighs, skinned and bone removed and cut into 3cm pieces
150ml/5fl oz sunflower oil
875g/1lb 15oz button mushrooms
5 onions, sliced
2.8 litres/5 pints chicken stock
150ml/5fl oz tomato purée
25g/1oz fresh tarragon, half left as sprigs, half finely chopped
5 x 400g/14oz tins chopped tomatoes
small bunch curly parsley, finely chopped

Steps:

  • Preheat the oven to 180C/350F/Gas 4.
  • Place the flour into a bowl and season with salt and freshly ground pepper. Dredge the chicken in the flour, shaking off any excess.
  • Heat a large, deep frying pan and add the oil. Fry the chicken pieces skin-side down for 1-2 minutes until golden-brown, turn over and brown on the other side. Remove the chicken from the pans and set aside.
  • Add a little more oil if the pans are dry then add the mushrooms and fry for 2-3 minutes. Add the onion and cook for a further five minutes.
  • Place the chicken back in the pans and add the stock, tomato purée, whole tarragon sprigs and tomatoes. Bring to the boil and transfer the chicken to ovenproof dishes. Cover with aluminium foil and place in the oven for 45 minutes, or until the chicken is cooked through.
  • Adjust the seasoning if necessary then add the parsley and the chopped tarragon.

12 ounces wide egg noodles
3 tablespoons unsalted butter
1 small onion, chopped
4 ounces white or cremini mushrooms, sliced (about 2 cups)
1 1/4 pounds skinless, boneless chicken thighs, cut into chunks
2 tablespoons all-purpose flour
1 teaspoon paprika, plus more for topping
Freshly ground pepper
1 cup fat-free low-sodium chicken or mushroom broth
1 tablespoon Worcestershire sauce
1/2 cup sour cream, plus more for topping
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain. Meanwhile, melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion and cook until slightly soft, about 2 minutes. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining 1 tablespoon butter, the chicken, flour, paprika, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken browns, about 3 minutes. Add the chicken broth and Worcestershire sauce and bring to a gentle simmer; cook until thickened, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering gently until the chicken is cooked through, about 2 more minutes. Divide the noodles among plates. Top with the chicken mixture, parsley, some sour cream and paprika.

2 large chicken breasts, ((cut in half horizontally to make 4 fillets))
1/2 teaspoon EACH garlic powder, onion powder and paprika
1/2 teaspoon salt
1/4 teaspoon fresh cracked black pepper
3 tablespoons flour
2 tablespoons butter,
1 tablespoon olive oil
3 tablespoons butter
1 large onion, (chopped)
3 cloves garlic, (crushed or minced)
1 pound (500 grams) brown mushrooms, (sliced)
2 teaspoons dijon mustard
1 teaspoon paprika,
1/2 cup dry white wine, ((substitute with chicken stock/broth))
1 tablespoon flour
2 cups low sodium chicken stock/broth
1 tablespoon Worcestershire sauce
Salt and pepper, (to taste)
1/2 cup sour cream
Fresh chopped parsley or chives, (to serve)

Steps:

  • Season chicken all over with garlic powder, paprika, salt and pepper. Dredge each chicken breast in flour. Set aside.
  • Heat the butter and oil in a large skillet over medium heat. Sear the chicken until browned, (about 4 minutes each side). Transfer to a plate, set aside.
  • Melt the remaining butter in the pan. Sauté the onions until transparent. Add the garlic and sauté until fragrant (about 30 seconds), then add mushrooms and cook until golden, about 4 minutes. Scrape any browned bits from the bottom of the skillet (=flavour). Add in the mustard and paprika, mixing well to coat mushrooms.
  • Pour in the wine (or stock) to deglaze the pan, and let reduce for about 3 minutes while stirring occasionally to mix all of the flavours through.
  • Add flour and cook, stirring, for 1 minute, then add the broth/stock and Worcestershire sauce. Mix well to incorporate and let simmer while stirring occasionally, until the sauce begins to thicken slightly, about 2-4 minutes
  • Reduce heat to medium-low and stir in sour cream. It may 'look' split, but the sour cream will melt through the sauce while it heats through. Let simmer until sauce is smooth and creamy, about 3-4 minutes, then season with salt and pepper.
  • Return chicken breasts along with juices on the plate to the pan. Simmer for a further 2 minutes until the chicken is completely cooked through. (If sauce is too thin, simmer for a minute or 2 longer until the sauce thickens from the floured coating on the chicken.) Remove from heat.
  • Garnish with parsley or chives. Serve over noodles, pasta, mashed potatoes or rice.

2 cups low-sodium chicken broth
1/4 cup all-purpose flour
1 tablespoon tomato paste
One 1-ounce package dry onion soup mix
Kosher salt and freshly ground black pepper
8 ounces button mushrooms, quartered
6 boneless, skinless chicken thighs (about 1 3/4 pounds)
12 ounces egg noodles
4 tablespoons butter, cut into pieces
4 ounces cream cheese, at room temperature
Chopped fresh parsley, for serving

Steps:

  • Whisk together the broth, flour, tomato paste, onion soup mix, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl until combined. Add to a 6-quart slow cooker and top with the mushrooms and chicken. Cover and cook on high for 4 hours.
  • When ready to serve, bring a large pot of water to a boil; salt the water generously. Add the noodles and cook until al dente according to the package directions. Drain and toss in a large bowl with the butter until the butter is melted and the noodles are completely coated.
  • Transfer the chicken to a small bowl and shred with 2 forks. Whisk the cream cheese into the sauce until completely incorporated; stir in the chicken and noodles. Top with parsley before serving.

1 roasting chicken
2 tablespoons olive oil
1 ounce butter
1 large onion, peeled and finely chopped
6 garlic cloves, peeled and finely chopped
1 tablespoon sweet paprika
1 tablespoon hot paprika
1 tablespoon smoked paprika
1 tablespoon flour
1 cup chicken stock
handful flat leaf parsley, chopped
2 red peppers, seeded and cut into 1cm strips
4 tomatoes, chopped
1 cup sour cream

Steps:

  • Joint the chicken (or get your butcher to do it). Rub the meat with salt, then brown in the oil and butter and set aside.
  • In the same pan, sweat the onions and garlic for about 5 minutes Add the paprika, then the flour, and stir till blended. Don't burn it!
  • Add most of the stock and stir for 5 mins to make the thick gravy base then add the chicken pieces. Add the rest of the stock (and then some boiling water) if it looks a bit dry.
  • Mix in half the parsley and bring to the boil then add the red pepper. Simmer for 10 mins, add the tomatoes then cook over a low heat for about an hour.
  • When the chicken is cooked, add the sour cream and the remaining parsley. Adjust the seasoning to taste.

Steps:

  • Wipe the mushrooms with a damp cloth and finely slice. Melt 2tbsp butter and 2 tbsp olive oil in a heavy non-stick frying pan and gently cook the onion for 10 minutes, until soft and translucent.
  • Add mushrooms and cook for 5 minutes. Add sea salt, pepper, paprika and wine and bring to the boil. Reduce the heat and cook for 5 minutes until the wine is absorbed. Add the tomato paste and stock and simmer, stirring, for 5 minutes.
  • Lightly bash the chicken thighs flat and cut across the grain into thin strips. Heat the remaining butter and oil in a second pan and cook the chicken in batches over medium heat until lightly golden.
  • Tip the chicken and any pan juices into the mushroom suace, add the sour cream, mustard and dill, and simmer gently, stirring, for 5 minutes. Scatter with parsley and serve with rice or buttered noodles.
