Stir fries require very little cooking time and you can pretty much use any vegetables you like, but the star of this one is the ginger. This dish is quick and easy to make, but get all of your ingredients together (including mixing the sauce) before you start cooking because everything happens fast! Serve with rice, and garnish with sliced green onions.

3 tablespoons vegetable oil, divided
1 pound boneless, skinless chicken breasts, thinly sliced
1 red bell pepper, cored and sliced
1 cup vertically sliced onion
3 ounces snow peas, trimmed, cut in half
⅓ cup water
¼ cup hoisin sauce
¼ cup soy sauce
¼ cup sherry
2 ½ tablespoons minced fresh ginger root
2 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon oyster sauce
1 tablespoon sugar
1 ½ tablespoons cornstarch
2 cloves garlic, minced

Steps:

  • Heat 2 tablespoons vegetable oil in a wok or large skillet over high heat. Add chicken to the wok, and stir-fry until chicken is opaque on all sides, about 3 minutes. Remove to a plate.
  • Heat the remaining 1 tablespoon vegetable oil in the wok. Add bell pepper, onion, and snow peas; stir-fry until vegetables start to soften, 3 to 4 minutes. Reduce heat to medium-low.
  • Whisk together water, hoisin sauce, soy sauce, sherry, ginger, rice vinegar, sesame oil, oyster sauce, sugar, cornstarch, and garlic in a bowl. Add sauce to the wok, stirring constantly until sauce starts to thicken. Add chicken back to the wok, stir, and reheat, 1 to 2 minutes.

1/2 lb sliced boneless chicken breast
1/2 sliced red bell pepper
1/2 sliced green bell pepper
1 medium french cut white onion
8 -10 medium mushrooms (baby bella recommended)
2 tablespoons green onions
1 cup white rice
2 -3 tablespoons olive oil
2 tablespoons soy sauce (kikkoman recommended)
1/3 cup marsala wine
1/4 teaspoon dried cilantro
1/8 teaspoon garlic powder
1/8 teaspoon dried ginger
salt and pepper

Steps:

  • Saute sliced chicken in hot oil until one side is cooked and then add white onion while turning chicken.
  • Cook until onions are very soft.
  • Toss in red and green peppers, mushrooms and green onion and continue sauteing over med/high heat.
  • Stir in Cilantro, garlic powder, ginger, salt and pepper.
  • (If you use a very salty soy sauce you might not want to add salt)
  • Continue cooking until red and green peppers are soft.
  • Once peppers are soft stir in Marsala wine and soy sauce, continue cooking over med/high heat until almost all of the liquid has evaporated and you are left with a thick sauce.
  • Pour over a bed of rice and serve.
  • NOTE*It is very important to keep cooking until nearly all of the liquid has evaporated because you want the flavor of the soy sauce and wine on the vegetables NOT on the plate in a puddle.
  • If you prefer extra sauce for the rice just use more soy sauce and wine but make sure you burn off most of the excess water or your dish will lack flavor and be too liquidy.
  • Adding a little extra olive oil will always help to thicken the sauce.

1 cup sliced celery
1 cup carrot, cut into strips
2 cups sugar snap peas

Steps:

  • Heat 1 teaspoon of oil in a large frying pan over medium heat. Add the broccoli and cook for approximately 3-4 minutes or until broccoli is tender.

1 lb. boneless, skinless chicken breasts, thinly sliced (may substitute chicken thighs)
1½ Tbsp. Thrive Culinary Algae Oil, divided
⅓ cup coconut aminos
Juice of 1 orange
2 tsp. orange zest
2 Tbsp. water
2 cloves garlic, minced (may substitute 1 tsp. garlic powder)
1 tsp. freshly grated ginger (may substitute ½ tsp. dried ground ginger)
1 small head broccoli, cut into florets (about 4 cups)
½ cup sliced onion
3 medium carrots, peeled and thinly sliced
1 bell pepper, any color, thinly sliced
2 green onions, white and green parts thinly sliced

Steps:

  • Combine coconut aminos, orange juice, zest, water and garlic, and ginger if using the dried form, (if using fresh, reserve for later) in a small bowl. Set aside.
  • Heat ½ Tbsp. oil in a large sauté pan, wok, or skillet over high heat (medium-high if using a cast iron skillet).
  • Add half of the chicken and cook until no longer pink in the center. Remove chicken to a plate and repeat with another ½ Tbsp. oil and remaining chicken.
  • Wipe pan clean (if desired) before adding ½ Tbsp. oil. When the pan is hot, add onions and carrots and stir-fry for 3-4 minutes.
  • Add broccoli and peppers, continue to stir for another 3-4 minutes, then add fresh garlic and ginger, if using, and cook another 30 seconds or until fragrant.
  • Add chicken back to the pan with the vegetables then pour sauce over everything. Stir to coat, add green onions and cook for an additional 1-2 minutes until meat is warmed through and vegetables are tender to your liking.
  • Top with toppings of choice.

½ - 1 cup cashews
1 pinch chili powder

1 zucchini, julienned
2 stalks celery, thinly sliced
2 green onions, sliced
3 cloves garlic, large, minced
2 tbsp ginger, fresh, minced
1 tbsp cornstarch

2 tbsp hoisin sauce
2 tbsp rice wine vinegar
1 tbsp canola oil
½ cup chicken broth
1 tsp hot red chili pepper flakes

Steps:

  • Slice chicken into ½ inch wide (1 cm) strips, then into bite-size lengths. Toast nuts by spreading out in a frying pan set over medium heat and stir often until they just start to brown, 4 to 6 minutes. Turn onto a plate. Toss with a generous pinch of salt and chili powder.
  • Prepare remaining ingredients before starting to cook. Thinly slice pepper, then cut into bite-size lengths. Cut zucchini into julienne strips. Thinly slice celery and the white part of the green onions. Thickly slice the green portion.
  • Mince garlic and ginger. In a small bowl, stir cornstarch with sherry until dissolved. Then stir in soy, hoisin and rice wine vinegar.
  • To cook, heat canola oil in a large frying pan or wok over medium-high heat. Add chicken and stir constantly until it loses its pink color, about 3 minutes. Add garlic, ginger, chicken broth, 1 tsp (5mL) chili powder, red chili pepper flakes and ½ tsp (5 mL) salt. Stir occasionally for 2 minutes. Add all the vegetables and stir another 2 minutes.
  • Pour in the cornstarch mixture and stir almost constantly until vegetables are done as you like and sauce is coating chicken, about 3 minutes. Mix in half the cashews. Then spoon over rice and scatter with remaining nuts.

Steps:

  • Cut chicken into 1/2 inch cubes
  • Prepare marinating sauce and add to chicken cubes.
  • Sit in refrigerator for at least 2 hours
  • Heat the vegetable oil in a large skillet or wok.
  • Drain chicken keeping the juice.
  • Stir fry the chicken for 4 minutes over high heat.
  • Push the chicken to the side and add onion, celery, bell pepper and ginger.
  • Add reserved marinating juice
  • Cook, stirring constantly for 5 minutes.
  • Add Bok choy; cook another 2 minutes,
  • Add the sprouts and stir-fry another 2 minutes.
  • Serve while sprouts are still crisp.
  • Cooking time does not include marinating time.
