These delicious flaky filo parcels are filled with crumbly feta and spinach. Baked until golden and crisp, serve with a fresh side salad and you'll have a tasty meal in no time.

1 tablespoon olive oil
1 finely sliced leek
250 gram thawed frozen spinach
1 1/2 cup cooked, shredded chicken
200 gram crumbled feta
2 lightly beaten eggs
1 teaspoon finely grated lemon zest
12 sheets filo pastry
mixed salad, lemon wedges, to serve

Steps:

  • Preheat oven to moderate, 180°C. Lightly grease an oven tray.
  • Heat oil in a large frying pan on medium. Saute leek 4-5 minutes, until tender. Remove from heat and stir spinach through.
  • Transfer leek mixture to a bowl with chicken, feta, eggs and lemon zest. Mix well. Season to taste.
  • Working with 2 sheets of filo pastry at a time, layer on a clean surface, spraying each with oil. Fold in halves.
  • Spoon one-sixth of chicken mixture into centre of pastry. Fold sides over and roll up to form a parcel. Place, seam-side down, on tray. Spray with oil. Repeat with remaining pastry and filling.
  • Bake 25-30 minutes, until pastry is crisp. Serve with salad and lemon wedges.

Easy and super tasty chicken filo parcels.

1 Tbsp olive oil
1 onion, sliced
6 cloves garlic, crushed
1 bag of baby spinach (130g)
500g cooked chicken breast, chopped
150g feta
2 eggs
12 sheets of filo pastry
2 Tbsp sesame seeds

Steps:

  • Preheat oven to 190.C fanbake.
  • Heat a large frypan over medium heat, add olive oil and sauté sliced onion for 5 minutes until softened. Stir in crushed garlic then add baby spinach.
  • Keep stirring until the spinach has wilted then add the chicken.
  • Turn off the heat and crumble in the feta and then crack in the eggs.
  • Season well with salt and pepper then stir everything to combine.
  • Set aside to cool slightly before wrapping in the filo.
  • Place one sheet of filo onto a board and spray with oil. Layer over another sheet of filo and spray again.
  • Place 1/2 cup of chicken mixture in a line 5cm from one end, fold in the sides and then roll up the filo, spraying oil in between each fold. Roll up the remaining filo parcels. Spray the top with oil and sprinkle over sesame seeds.
  • Bake for 30 minutes until golden and cooked through.
  • Serve hot with a fresh garden salad.

4 boneless chicken breast fillets , skin on
85g frozen leaf spinach , defrosted
85g feta cheese , crumbled
2 tbsp olive oil
2 tbsp pine nut

Steps:

  • Loosen the skin from the chicken. Drain the spinach in a sieve and press out as much water as possible. Mix with the feta and a little black pepper, then stuff between the flesh and skin of the chicken, smoothing the skin back over the stuffing. Season the chicken all over with a little salt and pepper.
  • Heat the oil in a frying pan with a lid. Add the chicken, skin-side down, and fry until the skin is browned. Turn it over and cook on the other side, then add the pine nuts and fry until lightly toasted. Add 6 tbsp water, then cover for 15-20 mins until the chicken is cooked through.

200g bag spinach leaves
175g jar sundried tomato in oil
100g feta cheese, crumbled
2 eggs
125g filo pastry

Steps:

  • Put the spinach into a large pan. Pour over a couple tbsp water, then cook until just wilted. Tip into a sieve, leave to cool a little, then squeeze out any excess water and roughly chop. Roughly chop the tomatoes and put into a bowl along with the spinach, feta and eggs. Mix well.
  • Carefully unroll the filo pastry. Cover with some damp sheets of kitchen paper to stop it drying out. Take a sheet of pastry and brush liberally with some of the sundried tomato oil. Drape oil-side down in a 22cm loosebottomed cake tin so that some of the pastry hangs over the side. Brush oil on another piece of pastry and place in the tin, just a little further round. Keep placing the pastry pieces in the tin until you have roughly three layers, then spoon over the filling. Pull the sides into the middle, scrunch up and make sure the filling is covered. Brush with a little more oil.
  • Heat oven to 180C/fan 160C/gas 4. Cook the pie for 30 mins until the pastry is crisp and golden brown. Remove from the cake tin, slice into wedges and serve with salad.

Man! For someone who isn't usually particularly inspired or successful in the kitchen, these were easy and delicious.....even if I do say so myself! Hope this reads ok, it was all guess work really!

1 large kumara, cubed
1 teaspoon chicken stock
2 cups water
1 small onion, chopped
2 cups frozen spinach
1 teaspoon garam masala
1 tablespoon sesame seeds
10 olives, sliced
100 g feta cheese, crumbled
3 sheets phyllo pastry
sesame seeds, for sprinkling (optional)

Steps:

  • Heat oven to 180 degrees.
  • Cut the kumara into very small cubes. place in a saucepan containing the chicken stock and water and cook until tender.
  • Place the cooked Kumara into a large bowel.
  • Retain the stock from the kumara and to it add chopped onion and frozen spinach. Simmer for 2-3 minutes until the spinach has defrosted.
  • Remove from heat and pour spinach and onion mixture into a seive to allow excess water to be squeezed out.
  • Add the spinach and onion to the kumara. Add Garam Masala and 1 tblsp sesame seeds. Mix together.
  • Take 3 sheets of Filo and lay on top of each other. (Use a clean, dry, flat surface).
  • Into the middle of the filo place half the kumara and spinach mixture.
  • Sprinkle over half the sliced olives and half the crumbled feta.
  • Fold the filo like a parcel, sealing the edges with a brush of milk.
  • Brush milk over top af parcel and sprinkle sesame seeds (optional).
  • Place in oven for 30 minutes or until the Filo is Golden brown.
  • I served this with tomato and chive salad.

500g spinach , any coarse stalks removed
115g butter
1 tbsp olive oil
½ small onion , finely chopped
2 garlic cloves , crushed
4 spring onions , finely chopped
8 dates , stoned and finely chopped
½ small bunch of parsley , leaves finely chopped
8 mint sprigs, leaves torn
25g toasted pine nuts
150g feta , crumbled
1 medium egg , lightly beaten
250g pack filo pastry sheets
black sesame seeds , for sprinkling

Steps:

  • Put the spinach in a pan with 2 tbsp water over a low-medium heat and cover. Stir the spinach a couple of times until wilted, about 4 mins, then drain. When cool enough to handle, firmly squeeze the excess water from the spinach with your hands, then roughly chop.
  • Heat 10g of the butter and all of the oil in a large frying pan. Add the onion and cook over a medium-low heat until pale and softened. Add the drained spinach and garlic, season and cook for about 5 mins, stirring occasionally. Leave to cool.
  • Transfer the spinach mixture to a bowl, then mix in the spring onions, dates, parsley, mint, pine nuts, feta and egg. Season.
  • Heat the oven to 190C/170C fan/gas 5. Unroll the filo pastry and cut it into strips 9-10cm wide. Melt the rest of the butter, then brush one strip with some of it before putting another strip on top and brushing that too. Keep the remaining pastry covered with a tea towel as you work. Put two heaped teaspoonfuls of the filling at the end of the strip nearest to you. Fold the bottom corner of the pastry diagonally over the filling, so that what was the bottom edge now meets the right-hand edge of the pastry. Fold over the filled triangle and keep going like this with the whole strip, brushing with butter as you go, until you have a neat triangular filo package. Repeat the process with all the pastry and filling. Brush the top of each one with butter, then put onto baking sheets. Sprinkle with the black sesame seeds and bake for 25-30 mins, or until the pastry is golden brown.

1 (250 g) package frozen spinach
250 g cottage cheese
100 g feta cheese, crumbled
1/2 cup toasted pine nuts
1 egg
2 garlic cloves, crushed
1 pinch nutmeg
salt and pepper
16 sheets phyllo pastry
50 g melted butter

Steps:

  • Squeeze spinach dry.
  • Combine spinach, cottage and feta cheeses, pine nuts, egg, garlic and nutmeg in a bowl. Mix well.
  • Season with salt and pepper.
  • To make each 'parcel', place a sheet of phyllo on a flat surface.
  • Brush with melted butter, Top with another sheet of phyllo, brush again with melted butter, then fold in half to make a rectangle.
  • Spoon spinach mixture along one narrow end of the pastry.
  • Fold edges in and roll up to encase filling.
  • Place parcels on an oven tray brushed with butter.
  • Brush parcels with remaining butter.
  • Bake at 190°C for 12-15 minutes until golden.

1 medium onion, chopped
10 ounces spinach, fresh
1 teaspoon lemon, zest of
1/4 cup feta cheese, crumbled

1 lb boneless skinless chicken breast

Steps:

  • In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes.
  • Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Set aside.
  • Divide spinach mixture between chicken breasts.
  • Roll up and secure with toothpicks.
  • Sprinkle with remaining salt and pepper.
  • In same skillet, heat remaining oil over medium-high heat.
  • Cook chicken, turning occasionally, until golden brown and cooked through, about 10 minutes.
