With spaghetti and mushroom sauce, and light and dark meat chicken with bell peppers, Ree Drummond's casserole is like two meals in one. Cooking the spaghetti in the same liquid as the chicken infuses it with flavor, and the Cheddar thickens the sauce so it coats each piece of meat.

1 whole raw chicken, cut into 8 pieces
1 pound thin spaghetti, broken into 2-inch pieces
2 1/2 cups shredded sharp Cheddar
1/4 cup finely diced green bell pepper
1/4 cup finely diced red bell pepper
1 teaspoon seasoned salt
1/8 to 1/4 teaspoon cayenne pepper
Two 10 3/4-ounce cans cream of mushroom soup
1 medium onion, finely diced
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of water to a boil. Add the chicken pieces to the boiling water and boil for a few minutes, then return the heat to medium-low and simmer, 30 to 45 minutes.
  • Remove the chicken and 2 cups of the chicken cooking broth from the pot. When the chicken is cool, remove the skin and pick out the meat (a mix of dark and white) to make 2 generous cups.
  • Cook the spaghetti in the same chicken cooking broth until al dente. Do not overcook. When the spaghetti is cooked, combine with the chicken, mushroom soup, 1 1/2 cups cheese, the green peppers, red peppers, onions, seasoned salt, cayenne, and sprinkle with salt and pepper. Stir in 1 cup of the reserved chicken cooking broth, adding an additional cup if needed.
  • Place the mixture in a casserole pan and top with the remaining 1 cup cheese. Cover and freeze up to 6 months, cover and refrigerate up to 2 days or bake immediately until bubbly, about 45 minutes. (If the cheese on top starts to get too cooked, cover with foil).

2 cups Progresso™ chicken broth (from 32-oz carton)
1/4 cup heavy whipping cream
1 clove garlic, finely chopped
2 cups baby spinach leaves
1/4 cup shredded Parmesan cheese
1/2 teaspoon fresh lemon juice

Steps:

  • In small bowl, toss chicken, Italian seasoning and pepper flakes. In 4-quart saucepan, melt butter over medium-high heat. Add chicken; cook 2 minutes without moving, until browned on first side. Stir; add mushrooms, and cook 4 to 6 minutes longer, stirring frequently, until mushrooms soften.
  • Add spaghetti, broth, whipping cream and garlic. Heat just to boiling over high heat. Reduce heat to medium; cook 12 to 16 minutes, stirring frequently, until pasta is cooked. Stir in spinach and Parmesan cheese. Remove from heat; let stand 1 minute. Stir in lemon juice.

I'm not real sure where I got this recipe from, but it looked so good I clipped it. I finally made it and boy, was it a hit. The whole family loved it! Next time I make it I'm going to add veggies so I have a one-dish meal.

3 cups cooked chicken
1 (12 ounce) package thin spaghetti
3 tablespoons butter or 3 tablespoons margarine
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon chopped pimiento
1 (28 ounce) can cream of chicken soup
1 cup milk
1 1/2 cups Velveeta cheese (or similar product)
salt and pepper
cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees.
  • In a large saucepan, cook chicken in boiling water until done.
  • Drain, saving water.
  • Chop chicken into small pieces.
  • Add spaghetti to chicken water and cook until done, following directions on package.
  • In another pan, melt butter and sauté celery and onion.
  • Stir in pimento.
  • Add chicken, soup, milk, Velveeta, salt and pepper.
  • Drain spaghetti and add to chicken mixture.
  • Pour into a greased 9-by-13 inch baking dish.
  • Sprinkle Cheddar on top.
  • Bake for 20 minutes.

My mother and grandma used to make this all the time when I was a kid. I loved it then, and I still love it today. *This is practically the same as Darlene Summers' recipe, I didn't notice until after I had posted the recipe. Didn't want to steal any of her credit... :P

3 stalks celery, chopped
1/2 medium yellow onion, chopped
1 (14 1/2 ounce) can diced tomatoes (Ro-tel tomatoes, preferably)
1 (10 3/4 ounce) can cream of mushroom soup (or cream of chicken if you don't like mushrooms)
3 medium boneless skinless chicken breasts
1/2 lb Velveeta cheese, cubed
3 tablespoons extra virgin olive oil
1/2 lb spaghettini

Steps:

  • First, place the chicken breasts in a pot with enough water to cover them.
  • Boil the chicken until completely cooked.
  • Remove from heat, pour chicken stock into a bowl and set aside for later.
  • Set chicken breasts aside to cool and chop the vegetables.
  • By the time you're finished chopping, the chicken should be cool enough to pull apart.
  • Separate it all into small pieces and set aside for later.
  • Warm the olive oil in a large saucepan over medium heat.
  • Add the celery and onion and sauté until onions are clear.
  • Then, add the soup and diced tomatoes, and mix together.
  • Start with 1 cup of the chicken stock, and slowly add it to the mixture until the sauce is liquified.
  • Let that simmer for around 15 minutes.
  • Then add the 1/2 pound of cubed Velveeta.
  • Let that dissolve into the mixture, and then add your chicken pieces.
  • You might have some left over, depending on how meaty you prefer your sauce.
  • Cover the saucepan and let the mixture simmer over low heat for 45 minutes to an hour, stirring occasionally.
  • Put your water on to boil for the spaghetti, and add the 1/2 lb spaghetti when the water comes to a rolling boil.
  • Some people like their pasta al dente, but I wouldn't recommend it for this dish, because you combine the sauce with the pasta once the spaghettini is drained.
  • Drain your spaghetti, and add the sauce to the pasta.
  • Mix thoroughly and serve immediately.
  • The sauce is very versatile and can be used on any sort of pasta.
  • A friend of mine loved it with penne rigate, and another one even preferred it over orzo pasta or as a sort of risotto.

  • Stir over medium heat until mixture again starts to thicken.
