2 teaspoons Dijon mustard
2 teaspoons honey
8 slices challah bread, about 1/2-inch thick, toasted
6 ounces brie cheese, sliced
4 cooked chicken breast halves, sliced into thin strips
1 granny smith apple

Steps:

  • In a small saucepan, whisk together vinegar, mustard and honey.
  • Set pan over medium-high heat and bring to a simmer.
  • Simmer until liquid reduces to 1/4 cup, about 3 minutes.
  • Spread mixture on toasted or grilled challah bread slices
  • Top with Brie and then chicken.
  • Using a vegetable peeler, shave apple into thin slices and arrange over chicken.
  • Top with second slice of bread.

This is a great sandwich to have for a light lunch , even kids will like it. I found this in a Canadian living mag. last year and just found the recipe again in a box of papers. Hope that you enjoy it as much as I did.

1 boneless chicken breast, skin removed
1/4 cup finely diced peeled apple
1 green onion, finely diced
1/4 cup mayonnaise
1 teaspoon lemon juice
1/4 teaspoon curry powder (optional)
salt and pepper
6 slices bread
2 tablespoons butter, softened

Steps:

  • Pour water in pan to 3/4 in and bring to simmer.
  • Add chicken , cover and poach over med/low heat for about 12 -15 minutes.
  • Put on a plate and refrigerate till cool enough to handle. Then finely dice.
  • In a bowl stir all remaining ingredients including the chicken.
  • Butter the bread with the softened butter and spread 1 slice with the mixture. Top with remaining slice of bread. Trim the crust and cut the sandwich into triangles or squares for little hands.
  • If you want to make ahead , place on a baking sheet and cover with a damp cloth and cover tightly with plastic wrap for up to 24 hours.

  • Place the chicken breasts on a cutting board. Using asharp knife, slice the breasts from the side (creating a top and bottom) almostall the way through. Open each breast at the slit. Divide the apple slicesevenly amongst the four breasts and spread across the surface of one side(leaving the other half empty to fold over the filling). Top the apple sliceswith the Brie. When all four breasts are topped on one side, fold the emptyhalf over the filling and press down to make a stuffed breast. Sprinkle eachstuffed breast on both sides with salt, pepper, and thyme.
  • In a large skillet, add the oil and bring overmedium-high heat. Working in batches of two at a time so as not to crowd thepan, add the stuffed chicken breasts to the pan and cook for about 1-2 minute(s)until the bottoms are seared golden.
