Steps:
- Mix chicken, cream cheese, 1/2 cup salsa and bacon; spread over tortillas. Roll up tightly; wrap in plastic. Refrigerate at least 1 hour. Just before serving, unwrap and cut tortillas into 1-in. slices. Serve with remaining salsa.

- In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
- To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

CHICKEN SALSA ROLL-UPS
I just threw this together for a party last night. It was a huge hit!!! I've seen other variations and I made this with what I had on hand. My DH and his friends devoured them so I'm sure they'll be requested again! Also, I used low-fat cream cheese and ranch dressing and no one knew! Oh, and feel free to add in other things like diced black olives, green onions, etc.

Steps:
- Finely chop chicken (I used my food processor, but you can do it by hand.).
- Mix together cream cheese (should be softened), salsa, ranch, garlic powder. (I also used my food processor to get a smooth consistency.).
- Fold chicken into cream cheese mixture.
- Spread mixture pretty thin onto tortillas, leaving 1" of the edge uncovered.
- Sprinkle your favorite cheese on top.
- Roll up and wrap individually in plastic wrap.
- I let mine chill for a couple of hours & sliced with a serated edge knife before serving.

BROCCOLI CHEDDAR CHICKEN ROLLUPS RECIPE BY TASTY

- In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
- On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
- Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
- Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
- Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
- In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
- Put the flour into a medium bowl.
- Whisk the eggs in another medium bowl.
- Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
- Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
- Let the chicken cool slightly, then remove the toothpicks.
- Enjoy!

- Flatten chicken to 1/4-inch thickness.
- Place a slice of ham and cheese on each piece of chicken.
- Roll up from a short side and tuck in ends; secure with a toothpick.

- In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. - Pre heat oven to 350 degrees.
- Sautee chicken in butter and lemon juice, then add seasonings. Remember to go light with the cayenne pepper for flavor unless you want it spicy.
- In a separate bowl, mix the salsa and sour cream. Add the chicken and blend together until the chicken is thoroughly coated.
- Spread mixture in center of tortilla and add some shredded cheese on top, as much as desired and roll tortilla. I use a bit of sour cream on the side to make it stick together better.
- Place rolled tortillas in a casserole dish. I use glass. Spread more shredded cheese on top covering each tortilla thoroughly.
- Bake at 350 degrees for 15 minutes.
- When done, take one rolled tortilla out and put it on a plate and let it cool. When cooled, cut into small sections about 1 inch wide. * use tooth picks if desired for each piece.
- Suggestions: you can have salsa and sour cream out for dipping if more sauce is desired.

- Preheat oven to 375 degrees.
- Pound chicken breast halves until they are about 1/4 inch thick.
- In a medium mixing bowl, combine the low-fat ricotta cheese, 3 Tbsp grated Parmesan cheese and 1 Tbsp snipped fresh parsley.
- Spoon about 1 1/2 Tbsp of cheese mixture onto each chicken breast.
- Fold in long sides and then roll from short end.
- Place seam side down in sprayed 8 x 8 inch baking dish.
- Measure out 1 cup of sauce; set aside.
- Next pour remaining 2 cups of tomato sauce over stuffed chicken breast.
- Cover baking dish with aluminum foil.
- Bake for 35- 40 minutes or until chicken is no longer pink.

- 1. Beat cream cheese until smooth. Add salsa, green onion, garlic salt, and chili powder. Mix well.

- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
