1 teaspoon honey mustard
2 cups shredded cooked chicken breast
1/3 cup finely chopped celery
6 slices whole grain bread, toasted
8 slices tomato
4 slices bacon, cooked, drained
4 leaves Romaine or leaf lettuce
4 tiny dill or sweet gherkins

Steps:

  • In medium bowl, mix mayonnaise and mustard well. Stir in chicken and celery until well mixed.
  • Spread 1/2 cup chicken mixture on one side of 2 bread slices. Layer each with 2 tomato slices, 2 half slices of bacon and 1 lettuce leaf. Top each with another bread slice. Repeat layers, starting with chicken mixture. Top each with third bread slice.
  • Place pickle on each of 4 toothpicks; insert 2 into each sandwich. Cut sandwiches into halves.

1tbsp tamari
1tsp medium curry powder
¼tsp ground cumin
1 garlic clove, finely grated
1tsp clear honey
2 skinless chicken breast fillets (or use turkey breast)
1tbsp crunchy peanut butter (choose a sugar-free version with no palm oil, if possible)
1tbsp sweet chilli sauce
1tbsp lime juice
sunflower oil, for wiping the pan
2 Little Gem lettuce hearts, cut into wedges
¼ cucumber, halved and sliced
1 banana shallot, halved and thinly sliced
coriander, chopped
seeds from ½ pomegranate

Steps:

  • Pour the tamari into a large dish and stir in the curry powder, cumin, garlic and honey. Mix well. Slice the chicken breasts in half horizontally to make 4 fillets in total, then add to the marinade and mix well to coat. Set aside in the fridge for at least 1 hr, or overnight, to allow the flavours to penetrate the chicken.
  • Meanwhile, mix the peanut butter with the chilli sauce, lime juice, and 1 tbsp water to make a spoonable sauce. When ready to cook the chicken, wipe a large non-stick frying pan with a little oil. Add the chicken and cook, covered with a lid, for 5-6 mins on a medium heat, turning the fillets over for the last min, until cooked but still moist. Set aside, covered, to rest for a few mins.
  • While the chicken rests, toss the lettuce wedges with the cucumber, shallot, coriander and pomegranate, and pile onto plates. Spoon over a little sauce. Slice the chicken, pile on top of the salad and spoon over the remaining sauce. Eat while the chicken is still warm.

2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice

2 teaspoons kosher salt
Freshly ground black pepper
10 sprigs parsley
2 sprigs fresh thyme
1 small onion, halved
1 small carrot, halved
1 stalk celery, halved
3 pounds bone-in, skin-on chicken breasts halves, fat trimmed
5 to 6 cups chicken broth, homemade or low-sodium store bought

Steps:

  • Toss together the chicken, celery, scallions, dill and parsley in a large bowl.
  • In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
  • Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken until firm to the touch, about 20 minutes. Remove the pan from the heat, uncover and cool the chicken in the liquid for 30 minutes.
  • Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and roughly chop the meat into about 1-inch pieces. Discard the bones and skin.
  • Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using.

Steps:

  • To make the chicken salad, start by chopping the meat with a knife: the pieces and the pieces obtained do not necessarily have to be all the same size. Wash and dry the celery, remove any filaments and then cut it into small pieces.

4 tbsp. olive oil
8 slices pancetta
2 slices focaccia, roughly torn
1 tbsp. wholegrain mustard
1 1/2 tbsp red wine vinegar
Small handful of parsley, chopped
2 Romaine lettuce hearts, roughly torn
175 g (6oz) baby plum tomatoes, halved

Steps:

  • Put the eggs in a small pan and cover with cold water. Bring to the boil, then cook for 5min. Drain, then run the eggs under cold water until cool. Peel and set aside.
  • Carefully halve each chicken breast lengthways, separate and season with a little salt and freshly ground black pepper.
  • Heat 1tbsp oil in a large frying pan and cook the chicken over a medium high heat for 3-4min on each side, until cooked through. Remove and set aside.
  • Next, lay the pancetta slices in the hot pan and cook until crisp. Set aside with the chicken.
  • Finally, add the torn focaccia to the frying pan and stir-fry in the pancetta fat for 2-3min until golden and crisp. Set aside.
  • For the dressing, whisk remaining oil, mustard and vinegar with the chopped parsley. Season to taste.
  • In a bowl, toss the lettuce and tomatoes with half the dressing, then divide among 4 plates. Juice of ½ lime
¼ cup mayonnaise
1 medium tomato (seeded and diced)
