1 pound chicken breasts (boneless skinless, cut into 1-inch cubes)
3 tablespoon coconut oil
3 tablespoon butter
1 10- ounce bag frozen vegetables with diced carrots (corn, and green beans)
4 cloves minced garlic
1/4 cup all-purpose flour
9 cups low sodium chicken broth (I like organic)
2 tablespoons cornstarch
15 ounce can garbanzo beans (rinsed and drained)
1 tablespoon chicken bouillon
1 teaspoon dried parsley
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/8 teaspoon red pepper flakes
10 uncooked lasagna noodles (broken into 1 to 2-inch pieces)
2 cups milk (can also use half and half, fat-free evaporated milk, or regular evaporated milk)
1/2 cup heavy cream (optional)
1 cup parmesan cheese (freshly grated )

Steps:

  • Heat 1 tablespoon oil in a Dutch oven. Add chicken and cook until almost cooked through. Remove to a bowl and set aside.
  • Melt 2 tablespoon oil, butter, and add frozen vegetables. Cook, stirring for 3 minutes.
  • Add garlic and cook another minute.
  • Sprinkle 1/4 cup flour over vegetables and cook for 3 minutes. This will be thick.
  • Reduce heat to low whisk in cornstarch into 9 cups of chicken broth, then add to soup.
  • Stir in chicken, beans, chicken bouillon, all herbs, all spices, and lasagna.
  • Bring to a boil then reduce and simmer 30 minutes until lasagna noodles are tender. Stir occasionally so the noodles don't stick together.
  • Stir in milk, heavy cream, and parmesan cheese until cheese is melted.
  • Taste and season with more salt and pepper if necessary.
  • Garnish with parsley and parmesan cheese and serve.

1-3/4 cups sliced carrots
1 cup butter, cubed
2/3 cup chopped onion

1-1/2 cups whole milk
4 cups cubed cooked chicken
1 cup frozen peas
1 cup frozen corn
4 sheets refrigerated pie crust

Steps:

  • Preheat oven to 425°. Place potatoes and carrots in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, 8-10 minutes or until crisp-tender; drain. , In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour and seasonings until blended. Gradually stir in broth and milk. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. Stir in chicken, peas, corn and potato mixture; remove from heat., Unroll a pie crust into each of two 9-in. pie plates; trim even with rims. Add chicken mixture. Unroll remaining crusts; place over filling. Trim, seal and flute edges. Cut slits in tops. , Bake 35-40 minutes or until crust is lightly browned. Let stand 15 minutes before cutting. Freeze option: Cover and freeze unbaked pies. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 425°. Place pies on baking sheets; cover edges loosely with foil. Bake 30 minutes. Reduce oven setting to 350°; bake 70-80 minutes longer or until crust is golden brown and a thermometer inserted in center reads 165°.

1/4 cup extra-virgin olive oil, plus more for drizzling
2 1/2 pounds skinless, boneless chicken thighs
Kosher salt and freshly ground pepper
2 onions, finely chopped
4 cloves garlic, minced
1 tablespoon minced fresh rosemary
3/4 cup dry white wine
4 bay leaves (preferably fresh)
2 28-ounce cans whole San Marzano tomatoes, crushed by hand
1 1/4 pounds fresh lasagna noodles
4 tablespoons unsalted butter, plus more for the dish
1/4 cup all-purpose flour
4 cups whole milk
Pinch of freshly grated nutmeg
1 1/2 cups grated Parmesan cheese, plus more for topping

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Season the chicken with salt and pepper. Working in two batches, add the chicken to the pot and cook until browned, 4 to 5 minutes per side. Remove to a plate. Add the onions to the pot and cook, stirring, until browned, 3 to 5 minutes. Add the garlic and rosemary and cook, stirring, until softened, about 30 seconds. Stir in the wine, scraping up any browned bits, and simmer until reduced by half, 1 to 2 minutes. Return the chicken and its juices to the pot.
  • Add 3 bay leaves to the pot along with the tomatoes, 3/4 teaspoon salt and a few grinds of pepper. Bring the sauce to a boil and stir, then reduce the heat and simmer, stirring occasionally, until the chicken is tender and the sauce is thickened, 25 to 30 minutes. Let cool.
  • Meanwhile, bring a large pot of salted water to a boil. Fill a large bowl with ice water. Line a baking sheet with a kitchen towel. Cook the lasagna noodles in the boiling water a few at a time until just al dente, 2 minutes. Carefully remove the noodles with a slotted spoon, transfer to the ice water and let cool, then remove the noodles to the baking sheet and blot dry. Drizzle the noodles very lightly with olive oil to prevent sticking; set aside. Preheat the oven to 375 ̊ F.
  • Make the béchamel: Melt the butter in a large saucepan over medium heat. Whisk in the flour; cook, whisking constantly, until smooth, 1 to 2 minutes. Increase the heat to medium high and whisk in 1 cup milk until combined. Continue whisking in the remaining 3 cups milk, 1 cup at a time, until combined. Add the remaining bay leaf, a big pinch each of salt and pepper and the nutmeg and cook, whisking, until the sauce comes to a simmer. Reduce the heat to maintain a simmer and cook until thickened, 5 to 7 minutes. Season with salt and pepper and let cool slightly, about 10 minutes. Discard the bay leaf.
  • Butter a 9-by-13-inch baking dish. Shred the chicken in the sauce with two forks; discard the bay leaves. Spread 1 1/2 cups of the chicken sauce in the baking dish and top with a layer of noodles, overlapping them slightly and trimming if necessary. Top with another layer of the chicken sauce, 1/2 cup béchamel and 1/4 cup Parmesan. Repeat the layering three more times (noodles, chicken sauce, béchamel, Parmesan), then top with a final layer of noodles (you might not use all of the noodles). Top with the remaining béchamel and parmesan. Put the lasagna on a rimmed baking sheet.
  • Bake the lasagna until bubbling around the edges and lightly browned on top, 30 to 35 minutes. Let sit 15 minutes before serving. Top with more Parmesan.

½ Cup Skim Milk

2 Stalks celery diced
1 small onion diced
1 Teaspoon Garlic Powder
½ Teaspoon Sage

1 Package Lasagna Noodles Cooked
1½ Cups Low Fat Part Skim Mozzarella Cheese

Steps:

  • Preheat oven to 350 degrees. Spray 9x13 casserole with nonstick cooking spray.

1 can cream of chicken soup
1 cup mixed frozen vegetables (peas, carrots, corn and green beans, defrosted)
1 package refrigerated biscuit dough

Steps:

  • Preheat the oven to 375F.
  • Combine the chicken, mixed vegetables and cream of chicken soup in a medium bowl and stir well.
  • Separate each of the biscuits and place them into the compartments of a greased muffin tin.
  • Using your fingers, push down on the dough starting in the middle, then working the dough up the sides of each of the muffin compartments, as high as it will go.
  • Add the filling to each of the compartments (approximately 2 Tablespoons each).
  • Bake at 375F for 20 to 25 minutes until golden brown and bubbly.

9-12 lasagna noodles, ((depending on your slow cooker size))
2 cups shredded mozzarella cheese
dried parsley ((optional))

Steps:

  • In a bowl combine Italian cheese blend with ricotta cheese. Mixture will be thick.
  • In a separate bowl, combine both jars of alfredo sauce with water, Italian seasoning and garlic.
  • Assemble the lasagna layers: Spread 1/4 of the alfredo sauce into the bottom the slow cooker. Arrange 3-4 lasagna noodles on top of the alfredo sauce (break noodles to fit.)
  • Spread 1/3 of the chicken on top of lasagna noodles.
  • Then spread 1/3 of the cheese mixture on top of the chicken.
  • Then repeat these same steps two more times (alfredo sauce, noodles, chicken, cheese mixture.) Try to make sure the alfredo sauce covers to the edge of the noodles.
  • Finally, top with shredded mozzarella cheese and dried parsley (optional.)
  • Cover and cook on low for 2 1/2 - 3 hours (or until noodles are tender.)
