- To begin making the Chicken Pizza With Caramelised Red Onion Recipe
- We will first make the pizza dough as it takes a couple of hours to rise.
- In a large mixing bowl, combine the flours, yeast, salt, honey. Add lukewarm water and knead to make a soft smooth dough.
- Add olive oil on the top and knead about for about 5 minutes until the pizza dough is soft.
- Once done, cover the dough and keep it aside for about 2 hours until the dough has almost doubled in size.
- Keep the tomato puree ready. Heat a sauce pan with olive oil on medium heat. Add garlic and saute or few seconds until you can smell the aromas coming through.
- Add onions and sauté them till they soften. Add pureed tomatoes into the pan along with the rest of the ingredients - dried thyme leaves, tabasco sauce, sugar, red chilli flakes and salt.
- Simmer the pizza sauce until it becomes thick and flavourful. Give the pizza sauce a taste and adjust the salt and seasonings accordingly. Stir in the basil leaves and keep aside.
- Heat a skillet with oil, add sliced onions and drizzle little bit sugar and vinegar on top. Saute for few seconds until the onions start to sweat it out.
- Ensure you turn the heat to low and caramelise the onions on low heat and allow it to become soft and caramelised gradually.
- You will notice that the onions will slowly start to become brown and change colour. Keep stirring the onions, and continue to cook them until they turn golden brown and have a sweet soft caramelised texture and taste.
- The entire process takes about 20 to 25 minutes or sometimes even half hour. The more onions you use, the longer it takes.
- In a bowl, add the chopped chicken, olive oil, salt sugar, dried thyme and pepper and marinate it for about 20 minutes.
- Heat a grill pan and brush oil over the grills. Slowly place the marinated chicken and grill on either side for 3 minutes until it is just about cooked. You can also lightly roast them in a skillet if you don't have a grill pan. Keep it aside.
- When the dough has risen and the toppings are ready, pre heat the oven to 180 degree Celsius.
- Divide the pizza dough into 2 portions. Dust the pizza dough on flour and roll to make a 8 inch diameter circle or the thickness you like for the pizza crust.
- Place the rolled dough on a pizza sheet, next spread the tomato sauce evenly, the onion jam, drizzle the mozzarella cheese and finally grilled chicken.
- Place the pizza and bake it in the oven for about 10 minutes till the crust turns light golden brown.
- Once done, remove the Chicken Pizza With Caramelised Red Onion from the oven and serve by garnishing it with some chopped basil leaves or arugula salad leaves.

- 1. Preheat oven to 350F. Slice your peppers and using a microwave safe plate, cover with paper towel and microwave for 1 minute. *This softens the peppers and ensures your peppers will crisp and cook through while baking*. Set aside. In a small saute pan, add your olive oil and your butter and bring to medium high heat. Once heated, add your sliced onions. Saute till onions start to become soft, add your balsamic vinegar. Continue tossing and stirring till they start to become caramelized and slightly charred, about 4-6 minutes. Take off heat and set aside.
- 2. On your pizza crust, spread almost the entire bottle of bbq sauce over the crust, reserving about 1/4 cup. Add your shredded chicken. Now comes the fun part; add 1/3 cup of your shredded cheddar cheese over the chicken, and 1/3 cup of the pepper jack cheese as well. Now add your peppers and finally add your amazingly delicious, (you just want to sit down and eat the whole pan) balsamic caramelized onions.
- 3. Sprinkle on the remainder of the pepper jack cheese, and 1/2 cup each of shredded cheddar and mozzarella cheese. Drizzle the remainder of the bbq sauce evenly over the pizza.
- 4. Now add the remainder of your cheeses over your pizza, smile at your creation with adoration and place in oven to bake!
- 5. Bake for 20-22 minutes till pizza is nice and crispy!! Enjoy!
WHITE PIZZA WITH CARAMELIZED ONION AND CHICKEN
This is a garlicky pizza that includes a white sauce. If you don't want to make your own sauce you can substitute with a little pesto sauce.You can also substitute pita bread in place of the pizza crust.

- Caramelized onions: Melt butter with olive oil in pan over medium heat. Add sliced onions and brown sugar and cook for 8 minutes, stirring occasionally. Remove from heat.
- Sauce: Meanwhile, place milk, cornstarch, garlic, garlic salt, onion powder, oregano, salt, pepper, and nutmeg in a medium saucepan. Bring to a boil and continue to cook for 2 minutes. Reduce heat and simmer until sauce thickens, about 3-4 minutes longer. Remove from heat.
- Pizza: Spread prepared dough with white sauce. Sprinkle with garlic and half of mozzarella cheese. Spread on shredded chicken, onions, tomatoes, capers and the rest of the cheese. Add the optional ricotta and pineapple if desired.
- Using a pastry brush, brush a thin coating of olive oil around the outer crust and then lightly sprinkle with garlic salt.
- Cook in a 450°F oven for 10-15 minutes until cheese is bubbly and crust in browned.

I love the new flatbreads that make a great low-calorie pizza crust. My grocery chain carries a brand called "FlatOut" in the deli area. If you can't find flatbreads, use a thin pre-baked pizza crust or use pita breads (split in half to make thin rounds). - Preheat oven to 400 degrees.
- Prepare flatbreads - It works best if the flatbreads have dried and crisped a bit before adding pizza toppings. So as my oven is pre-heating, I place the flatbreads on parchment paper and bake them for 5 minutes on each side. After 10 minutes, the flatbread is still soft but it won't get soggy when you bake it with pizza toppings.
- While flatbreads are pre-baking, saute sliced red onion in 1 T. oil about 8-10 minutes over MEDIUM heat. Set onions aside.
- To assemble - spread each pre-baked flatbread with 1 T. Boursin cheese. Then divide equally red onion, cooked chicken, and shredded Grueyere cheese. Drizzle each pizza with about 1/4 cup BBQ sauce.

- Combine bread crumbs, Parmesan cheese, salt, and black pepper in a shallow bowl; place flour into a second bowl. Whisk egg and lemon juice together in a third bowl.

- Peel, then slice the onions into thin wedges. Thinly slice the garlic. Heat the butter and oil in a large wok or frying pan, tip in the onions and garlic and cook over a medium-high heat for 15 minutes, stirring every now and then until golden. - To caramelize the onions, heat the olive oil in a large skillet over medium heat.
- Add the onions and garlic and cook over medium-low heat for about 20 minutes, stirring frequently, until the onions are very soft and lightly browned.
- Add the balsamic vinegar and cook a few more minutes, then remove from heat.
- Preheat the grill to low-medium heat (or preheat your oven to 400 degrees).
- Spread the caramelized onions evenly over the pizza crust.
- Top the onions with the chopped peppers, crumbled goat cheese, shredded provolone, and chicken.
- Cook for 10-15 minutes, making sure the crust does not burn.
