Purchased pizza crust, precooked chicken and shredded cheese make this one of the easiest pizzas you'll ever make.

2 cups shredded taco-flavored cheese (8 ounces)
1 package (16 ounces) ready-to-serve original pizza crust (12 to 14 inches in diameter)
1 1/2 cups chopped cooked chicken
2 roma (plum) tomatoes, thinly sliced
1 small jalapeño chili, seeded and finely chopped

Steps:

  • Heat coals or gas grill for direct heat.
  • Sprinkle cheese evenly over pizza crust. Top with remaining ingredients.
  • Cover and grill pizza 4 to 6 inches from medium heat 8 to 10 minutes or until crust is crisp and cheese is melted. (If crust browns too quickly, place a piece of aluminum foil between crust and grill.)

Steps:

  • Heat oven to 350°F.
  • Place pita breads on ungreased cookie sheet. Spread tomato sauce over pita breads. Top with chicken and chilies. Sprinkle with cheese.

¼ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon ground black pepper
½ cup all-purpose flour
1 egg
1 tablespoon lemon juice
2 skinless, boneless chicken breast halves
½ cup pizza sauce, divided
½ cup shredded mozzarella cheese, divided
4 slices pepperoni, or to taste - divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine bread crumbs, Parmesan cheese, salt, and black pepper in a shallow bowl; place flour into a second bowl. Whisk egg and lemon juice together in a third bowl.
  • Dip each chicken breast in egg mixture and dredge in flour; dip again in egg mixture and dredge chicken in crumb mixture until coated. Place coated chicken breasts into a baking dish.
  • Bake in the preheated oven until chicken is heated through and crumbs are golden, about 20 minutes.
  • Spoon 2 tablespoons pizza sauce onto each chicken breast, sprinkle each with half the mozzarella cheese, and top each with half the pepperoni slices.
  • Bake until chicken is no longer pink inside and the juices run clear, about 10 more minutes. An instant-read meat thermometer inserted into the thickest part of a breast should read at least 160 degrees F (70 degrees C).

A lovely simple and tasty pizza, found in my Take 5 ingredients book. Add extras to the chicken if you like, I also added a can of Mexican chili beans to mine which was great!

500 g ground chicken
2 prepared pizza crust
200 g hot taco sauce
2 cups pizza cheese, grated
1 yellow capsicum, diced
250 g cherry tomatoes, halved

Steps:

  • Cook chicken mince in a greased and heated pan, breaking up any large clumps until mince is just cooked through, remove from heat.
  • Place pizza bases on oven trays and spread taco sauce over them, sprinkle with cheese and then top with cooked mince, capsicum and tomatoes.
  • Bake at 190°C in a preheated oven for 20-25 minutes or until bases are crisp & topping lightly browned.

I found this recipe on the Muir Glen website. I added the carmelized onions and it really brings out the taste of the fire roasted tomatoes. We loved it. I plan on making different pizzas with the cornmeal crust. A taco pizza would be great. A great way to use up leftover chicken.

1 1/2 tablespoons olive oil (can use butter)
1 onion, thinly sliced (2 cups)
1/2 teaspoon sugar
1 1/2 cups all-purpose flour
1 tablespoon sugar
1 1/4 teaspoons active dry yeast
1/4 teaspoon sea salt
3/4 cup warm water
1 tablespoon olive oil
1/3 cup yellow cornmeal
additional cornmeal
2 cups Mexican blend cheese
1 1/2 cups shredded cooked chicken
1 (14 1/2 ounce) can diced fire-roasted tomatoes, drained (Muir Glen Organic)
1/2 medium yellow bell pepper, chopped
1/4 cup fresh cilantro, chopped
1/4 cup green onion, sliced (optional)
sour cream (optional)

Steps:

  • Heat oil (or butter) in large skillet. Add onions and cook over medium low heat, stirring frequently until onions are golden brown and soft. Stir in 1/2 teaspoons sugar and cook 1-2 minutes more. Set aside.
  • Heat oven to 450. In medium bowl, stir together 3/4 cup of the flour, the sugar, yeast and salt. Stir in warm water and oil. Beat with electric mixer on low 30 seconds. Beat on high about 1 minute. Stir in 1/3 cup cornmeal and remaining 3/4 cup flour to make a soft dough. On lightly floured surface, knead dough until smooth and elastic, about 5 minutes. Cover and let rest 10 minutes.
  • Spray large cookie sheet with cooking spray; sprinkle with additional cornmeal. Press dough into 14x10-inch rectangle on cookie sheet; prick with fork. Bake 8 to 10 minutes or until edges just begin to brown. Spread the onions on crust, then sprinkle with 1 cup of the cheese. Top with chicken, tomatoes and bell pepper. Sprinkle with remaining 1 cup cheese. Bake 6 to 8 minutes or until cheese is melted and edges are golden brown. Sprinkle with cilantro. Add green onion and a dollop of sour cream, if desired.

8 ounces boneless skinless chicken breasts, cut into thin strips
1 teaspoon canola oil, divided
1 medium onion, sliced
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 garlic clove, minced
1/4 cup chunky salsa
2 cups shredded reduced-fat Mexican cheese blend
1 tablespoon minced fresh cilantro
Sour cream and additional salsa, optional

Steps:

  • Unroll dough into a 15x10x1-in. baking pan coated with cooking spray; flatten dough and build up edges slightly. Bake at 425° for 8-10 minutes or until edges are lightly browned., Meanwhile, in a large nonstick skillet coated with cooking spray, cook chicken over medium heat in 1/2 teaspoon oil for 4-6 minutes or until no longer pink; remove and keep warm., In the same pan, saute the onion, peppers, chili powder and cumin in remaining oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in salsa and chicken., Sprinkle half of the cheese over prepared crust; top with chicken mixture and remaining cheese. 1/2 cup salsa

1 large ready-made pizza crust
16 ounces salsa
2 cups shredded mexican cheese
2 -3 boneless skinless chicken breasts
chili powder
salt
pepper
1 onion, diced
1 green bell pepper, diced
sour cream

Steps:

  • Cut chicken into cubes and season with chili powder, salt and pepper. Saute chicken until done.
  • Saute onion and green pepper until soft, 10-15 minutes.
  • Bake pizza crust 10-15 minutes, or according to package directions. Remove from oven and spread salsa over crust. Add onion and green pepper over salsa. Place chicken over pizza and top with Mexican cheese.
  • Bake at 350 until cheese melts, about 10-15 minutes.
  • Top with sour cream and enjoy!
