ESPINACAS CON GARBANZOS (SPINACH WITH GARBANZO BEANS)
This recipe can be eaten as a side dish or as a light meal. It's great with a grilled pork chop and some crusty bread. Its origins date back to North African cultures and is one of the very popular choices of tapas in Seville's bars.

Steps:
- Heat the olive oil in a skillet over medium-low heat. Cook the garlic and onion in the oil until translucent, about 5 minutes. Stir in the spinach, garbanzo beans, cumin, and salt. Use your stirring spoon to lightly mash the beans as the mixture cooks. Allow to cook until thoroughly heated.

- Heat 1 teaspoon oil in heavy large nonstick skillet over medium heat. Add onion and garlic and sauté until tender, about 10 minutes. Pour in chicken broth and simmer until liquid is reduced by half, about 4 minutes. Add garbanzo beans and spinach and boil 1 minute. Transfer spinach mixture to large bowl. Add pasta. Drizzle pasta with remaining 2 teaspoons olive oil and toss. Season pasta generously with pepper; sprinkle with grated Parmesan and toss well. Serve.

Steps:
- Cook pasta until just tender.
- Ladle 1 cup of pasta cooking liquid into bowl and reserve.
- Drain pasta.
- Saute onion& garlic in oil, then add 1 T water to skillet& cook over medium heat until onion is golden and tender, stirring often.
- Add 1 c reserved pasta cooking liquid, spinach& tomatoes to skillet.
- Cover& cook until spinach wilts, about 3 minutes.
- Add cannellini beans& pasta.
- Cover& cook until heated, about 2 minutes.
- Stir in cheese& season with salt& pepper.

Steps:
- Heat oil in a large, lidded non-stick pot.
- Add onions and cook, stirring occasionally, for 6 minutes, until nicely browned.
- Stir in garam masala and cook for 30 seconds.
- Add tomatoes with their juice and heat until boiling.
- Add spinach and continue stirring until it is wilted down. Put on lid and simmer 20 minutes. Spinach should be very well done.
- Remove lid, stir in cauliflower and cook until cauliflower is tender.
- Stir in raisin and garbanzo beans until heated through.
- Serve over brown rice and top with cashews.

Steps:
- Heat oil.
- Fry onion till brown.
- Add ginger, garlic, black pepper, cumin powder, coriander powder, turmeric and nigella seeds (mixed with a little water to make a paste).
- Stir fry 1-2 minutes.
- Add tomatoes and stir fry till tomatoes are soft.
- Add drumsticks, fry 1-2 minutes.
- Add red chili powder and salt and mix well. Let chicken cook in its own water for a few mins or add 1/2 - 1 cup water and the garbanzo beans, mix well.
- Cover and let cook till chicken and beans soft and oil rises to the surface.
- (NOTE: if using canned beans, it won't take very long for this curry to cook).
- Toss in whole green chillies, cover and turn off heat.
- Serve in 5 minutes.
- Yum!
- Serve with a simple salad.

- Bring a large pot of water to a boil. Cook the pasta according to instructions on the box, minus a minute or two.
- When done save 1/2 cup of pasta water and drain the rest- keep in a colander.
- Pour the olive oil into a skillet over medium heat. . Add the bacon pieces and cook for 3 minutes or until they begin to render their fat. Toss in the garlic and cook for 2 minutes.
- Sprinkle in the red pepper flakes.
- Dump in chickpeas and stir to coat. Then add the spinach leaves, and cook until wilted. Season with a pinch of salt and add a half a cup or so of the pasta cooking water.
- When the spinach is wilted, add pasta to the pan with spinach and chick peas. Cook, stirring constantly, for a minute or two.
- Remove from the heat, sprinkle with cheese, and serve.
- I actually removed the bacon before eating, wanted to add the flavor but avoid some of the calories.
