These Chicken Parmesan Meatballs are an Italian dinner that's ready in no time at all. Seasoned meatballs with Panko crumbs for that crunch you crave when you eat Chicken Parmesan. Serve these over noodles with garlic bread and a salad for a delicious dinner.

1 lb ground chicken
1 egg
1/2 cup grated Parmesan cheese
1/2 cup Panko breadcrumbs ((and about 3/4 cup more breadcrumbs for rolling later))
1 teaspoon garlic powder
1 teaspoon Italian seasonings
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper
1/4 cup olive oil, (divided)
1 (26 ounce) jar marinara sauce
1/2 cup shredded mozzarella
2 tablespoons basil, torn ((optional))

Steps:

  • In a large bowl, mix together the chicken, egg, Parmesan cheese, breadcrumbs, garlic powder, Italian seasonings, salt, pepper, and red pepper. Roll into 1 1/2 inch balls.
  • Heat 2 tablespoons oil in a large oven-safe skillet over medium heat. Roll half of the meatballs in Panko breadcrumbs and brown them on each side in the oil. Add more oil if needed as you go. Remove from the pan and set aside. Wipe out any Panko breadcrumbs and heat the remaining 2 tablespoons of olive oil over medium heat. Roll the remaining meatballs in Panko breadcrumbs and brown on each side. Remove from pan.
  • Preheat oven to 350 degrees. Pour marinara sauce in the oven-safe skillet (or any baking dish will do) and place the meatballs on top of the sauce. Bake meatballs for 20 minutes sprinkling the mozzarella on top for the last 5 minutes of baking. Garnish with basil and serve over pasta.

1 1/2 pounds ground chicken
1 cup whole-milk ricotta cheese
1/2 cup freshly grated Parmesan
1/2 cup plain breadcrumbs
1/2 cup finely chopped fresh flat-leaf parsley
1/2 teaspoon freshly grated nutmeg
2 cloves garlic, grated
1 large egg
1/2 medium yellow onion, grated
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for the pan
2 cloves garlic, sliced
1 sprig fresh oregano
1/2 medium yellow onion, diced
One 28-ounce can tomato puree
Kosher salt and freshly ground black pepper
8 ounces sliced fresh mozzarella
Soft Polenta, recipe follows
1/4 cup freshly grated Parmesan
Torn fresh basil leaves, for serving, optional
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 cup yellow cornmeal or polenta
4 tablespoons unsalted butter
1/4 cup freshly grated Parmesan

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • For the meatballs: Combine the ground chicken, ricotta, Parmesan, breadcrumbs, parsley, nutmeg, garlic, egg and onion in a medium bowl until just mixed. Do not overwork. Season with salt and pepper. Divide the mixture into 8 portions and roll into balls.
  • Heat a cast-iron pan on the hot side of the grill until nice and hot. Brush the pan with enough olive oil to liberally coat the surface, about 3 tablespoons.
  • Place the meatballs in the pan and cook, flipping them, until all sides are caramelized, about 3 minutes. Move the pan to the indirect-heat side of the grill and cover the grill. Cook for 5 minutes.
  • For the sauce: Add the garlic, oregano and onion to the pan with the meatballs and saute until the onions begin to soften, 2 to 3 minutes. Flip the meatballs, then add the tomato puree and 1/2 cup water. Season with salt and pepper. Cover the grill and continue to cook until the chicken is cooked through and the sauce is reduced slightly, 10 to 15 minutes.
  • For topping and serving: Top the meatballs with the mozzarella, cover the grill and cook until the cheese is melted, about 3 minutes. Discard the oregano sprig. Spoon the meatballs on top of the Soft Polenta. Spoon any remaining sauce over top and serve topped with the Parmesan and basil if using.
  • (Alternatively, you can cook the meatballs and the sauce as directed in a cast-iron skillet on the stovetop over medium heat, then transfer the skillet to a 400 degrees F oven for 10 to 15 minutes before melting the cheese.)
  • Add 4 1/2 cups water, 1 tablespoon salt and the olive oil to a medium saucepot and bring to a simmer over medium heat. Whisk in the cornmeal in a steady stream, until it is all incorporated and smooth. Reduce the heat to medium low and continue to cook at a simmer until the polenta is creamy and fully hydrated, 30 to 40 minutes. Take the saucepot off the heat and whisk in the butter and Parmesan. Season with additional salt and pepper. Transfer the polenta to a large serving bowl.

1 pound lean ground chicken
1 cup panko bread crumbs
1 egg
1/2 cup grated Parmesan cheese
1/4 cup milk
For the casserole:
1 pound campanelle pasta (any small shape is fine, such as ziti)
1 jar (about 1 1/2 pounds) marinara sauce
2 cups grated mozzarella cheese
1 teaspoon Italian seasoning

Steps:

  • Bring a large pot of water to a boil and add the pasta. Cook for 1 minute less than package directions state. Preheat oven to 450 degrees. While the pasta is cooking, prepare the meatballs. Add all of the ingredients to a large bowl and use your hands to mix them together well. Form into small balls, about 1 inch in diameter and place on a parchment lined baking sheet. Bake for 10 minutes or until cooked through and no longer pink. Remove from the oven and reduce the oven temperature to 350 degrees. Add the pasta sauce to a large bowl and stir in the cooked pasta and meatballs. Stir gently to coat everything in sauce. Spread half of the pasta and meatballs into a 9x13 baking dish. Top with half of the mozzarella cheese. Repeat layers. Sprinkle with Italian seasoning. Bake for 20 minutes or until the cheese is melted. Serve immediately.

1 pound ground chicken (white and dark meat)
2 ounces thinly sliced prosciutto, finely chopped
1 cup panko breadcrumbs
¼ cup chopped fresh basil, plus basil leaves for garnish
¾ teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon crushed red pepper
2 medium garlic cloves, grated
2 ounces Parmesan cheese, grated with a Microplane grater (about 1¼ cups), divided
2 tablespoons olive oil
⅓ cup dry red wine
1 (24-oz.) jar marinara sauce
6 ounces low-moisture part-skim mozzarella cheese, shredded (about 1½ cups)
Garlic bread, cooked spaghetti, or zucchini "noodles," for serving

Steps:

  • Combine eggs, chicken, prosciutto, panko, basil, salt, black pepper, crushed red pepper, garlic, and 1 ounce of the Parmesan in a large bowl. Gently mix with your hands to thoroughly combine, taking care not to overmix. Shape into 12 (1¾-inch) balls (about 2 ounces each).
  • Preheat oven to 450°F. Heat olive oil in a large skillet over medium-high. Cook meatballs in a single layer, turning occasionally, until browned on all sides, 8 to 12 minutes. Transfer to a plate. Reduce heat to medium. Add wine to skillet; cook, scraping bottom of skillet to release browned bits, until reduced to about 2 tablespoons, 1 to 2 minutes. Stir in marinara sauce. Arrange meatballs in skillet in a single layer; turn to coat in sauce. Sprinkle with mozzarella cheese and remaining 1 ounce Parmesan.
  • Transfer skillet to preheated oven; bake until mozzarella cheese is melted and beginning to brown and internal temperature of meatballs registers 165°F, 10 to 14 minutes. Garnish with basil leaves. Serve with garlic bread, cooked spaghetti, or zucchini "noodles."

500g skinless boneless chicken thighs , cut into pieces
100g fresh breadcrumbs
1 large egg , beaten
1 onion , grated
25g parmesan , finely grated plus more to serve
4 garlic cloves , crushed
½ small bunch oregano , finely chopped
2 tbsp olive oil , plus extra to grease tray and serve
2 x 400g cans chopped tomatoes
1 tsp sugar
300g spaghetti

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the chicken in a food processor and pulse until finely chopped. Scrape into a bowl and add the breadcrumbs, egg, onion, parmesan, half the crushed garlic, and half the oregano. Season really well, and mix with clean hands until everything is evenly distributed. Shape into 20 meatballs, and put onto an oiled baking tray. Brush the meatballs with 1½ tbsp oil. Bake for 20 minutes until cooked through and golden brown.
  • Meanwhile, heat the remaining ½ tbsp oil in a deep frying pan. Fry the remaining garlic for 30 secs, then add the chopped tomatoes and reserved oregano. Season with salt, pepper, and a pinch of sugar. Simmer for 10-15 mins stirring frequently, until the tomatoes break down and you get a thick sauce.
  • Bring a large pot of salted water to a boil. Add the spaghetti and cook for 10 mins until al dente.
  • Add the cooked meatballs to the tomato sauce and gently stir through. Heat for a few minutes while you drain the spaghetti and spoon into warmed pasta bowls. Serve the meatballs and sauce on top. Drizzle over a little olive oil and a grating of more parmesan, if you wish.

Steps:
