My grandmother made this hearty chicken dish whenever we visited her. It was the only thing I'd eat until I was ready to bust! It's wonderful.

3 eggs, beaten
½ cup water
2 ½ cups all-purpose flour
2 teaspoons salt
¼ cup butter
1 ½ pounds bone-in chicken pieces, with skin
1 medium onion, chopped
1 ½ cups water
1 tablespoon paprika
½ teaspoon salt
1 teaspoon ground black pepper
2 tablespoons all-purpose flour
1 cup sour cream

Steps:

  • Fill a large pot with water and bring to a boil over high heat. In a large bowl, mix together the eggs, 2 teaspoons of salt, and 1/2 cup of water. Gradually stir in 2 1/2 cups of flour to make a stiff batter. Using two spoons, scoop out some batter with one spoon and use the second to scrap off the spoonful of batter into the boiling water. Repeat until several dumplings are cooking. Cook dumplings for 10 minutes or until they float to the top; then lift from the water and drain in a colander or sieve. Rinse with warm water.
  • In a large skillet over medium-high heat, melt butter and add chicken; cook until lightly browned, turning once. Add onion to skillet and cook 5 to 8 minutes more. Pour in 1 1/2 cups of water, and season with paprika, salt, and pepper; cook 10 minutes more, or until chicken is cooked through and juices run clear. Remove chicken from skillet and keep warm.
  • Stir 2 tablespoons of flour into sour cream; then slowly stir into the onion mixture remaining in the skillet. Bring the mixture to a boil, stirring constantly, and cook until thickened.
  • To serve, add dumplings to the sour cream/onion mixture, then spoon onto dinner plates adding a piece of chicken.

AUTHENTIC HUNGARIAN CHICKEN PAPRIKASH

I came up with this one night after being inspired by a bunch of other recipes, and it was so delicious that I had to write it down and share it. It was also pretty easy. Serve this over buttered noodles.

2 tablespoons oil
1 big onion, diced (huge)
1 green pepper, diced
1/2 lb mushroom, sliced
2 tablespoons Hungarian paprika
1 1/2 teaspoons ground caraway
salt
black pepper
10 skinless chicken thighs, fat traces removed
4 plum tomatoes, diced
2 cups chicken stock, approx
3/4-1 cup sour cream

Steps:

  • In a large pot, heat the oil and sauté the onion until translucent.
  • Add the green pepper, cook for 5 minutes or so, and add the mushrooms.
  • Cook until the mushrooms are just softened.
  • Add the paprika, caraway, pepper and salt (if you are not using salty stock, such as bullion cubes.)
  • Stir and add the chicken thighs and mix.
  • Add the tomatoes and enough stock to mostly cover the chicken.
  • Cover and simmer slowly for approximately 45 minutes.
  • The chicken should be falling off the bone, very tender.
  • Remove the chicken to a deep serving plate that has been warmed.
  • Reduce the stock a bit if it looks like it will be too much sauce.
  • Mix some stock fully into the sour cream to thin it a bit, and then mix the sour cream into the rest of the stock.
  • Heat until hot, but Do Not Boil.
  • Pour the sauce over the chicken, and serve over buttered egg noodles.
  • Miscellaneous Notes:.
  • Use 8 thighs if very large. "Bone in" is great.
  • Canned tomatoes are fine, as are bouillon cubes for the stock (in which case, don't add salt until the end, after you taste) and low-fat sour cream.
  • The prep time includes chopping and sauteing the veggies, and making the sauce at the end.

This is how my Grandma and Great Grandma have been making chicken paprikash forever. The recipes here on zaar are all gravies and thats not how we make ours. My Great Grandma was given a cookbook from the Hungarian Women's Auxilary in Detroit and that's where this comes from. I will also post a recipe for how we make kluskies seperately. Note: I never really measure, so with the paprika, you have to do this by taste and look. Oh! this is really easy to halve or cut down because 12 pieces of chicken is a lot, you defineitely don't have to use that many and you get the same result.

6 chicken drumsticks
6 chicken thighs (or large breasts with bones in them)
water
2 onions
5 chicken bouillon cubes
1 cup paprika (divided)
3 lbs sour cream
salt
pepper
vegetable oil

Steps:

  • Dice the two onions (It doesnt have to be perfect, just so theyre small).
  • Heat a large pot of water and put the 5 bouillon cubes in and let it boil.
  • In a large skillet, heat up about 4 tablespoons veggie oil (or enough to cover the bottom the pan and a touch more).
  • When the oil heats, fry up the onions until slightly translucent with salt, pepper, and paprika.
  • Put a few pieces of chicken in the frying pan and cook about 3 minutes on each side or until the outside turns golden (DO NOT COOK THROUGH) and put in the boiling water, repeat with the other chickens.
  • Add more paprika to the water until its an orangish color.
  • Cook chicken for about 45 minutes in the water. But do not drain this chicken broth/ stock.
  • Once the chicken is cooked, put almost all of the sour cream in a large pot. Take a soup dipper and slowly temper the chicken broth into the sour cream (If it curdles, it curdles, but it still tastes the same :)) Do this until the sauce has an almost watery/floury like consistency (it should be kinda thin) If it is too thin, add the rest of the sour cream.
  • Next, add enough paprika until the sauce turns a nice reddish white (the paprika sometimes doesnt blend very well) also add some salt and pepper to taste.
  • Now you can save the chicken stock or throw it away, its up to you but it needs to be taken away from the chicken. Put the sauce over the chicken and serve with kluskies and you have a delicious, filling Hungarian dinner!

1 medium onion (sliced)

4 tablespoons butter
1 can chicken broth

Steps:

  • Melt Butter in a large pot or dutch oven.
  • Stir in Paprika to butter.
  • Sautee the onions in the paprika butter solution, then temporarily remove them.
  • It may be necessary to add an additional Tablespoon of butter to the solution.
  • Brown the chicken in the butter.
  • Add the chicken broth, re-add the onions and simmer for one hour, covered.
  • After the solution is fully cooked, add in the sour cream.
  • You may also add in the flour to thicken the gravy.
  • This dish is often served with the German pasta,'Spaetzels' or with the Hungarian'Halousky'.
  • This meal is exceptionally filling with the Spaetzels.

6 slices bacon, diced
1 medium onion, chopped
1 green bell pepper, chopped
1/4 cup all-purpose flour
2 tablespoons paprika
1/2 teaspoon dried marjoram
1 1/2 pounds skinless, boneless chicken thighs, cut in half
2 cups low-sodium chicken broth
8 ounces egg noodles
1/2 cup sour cream
2 tablespoons chopped fresh parsley

Steps:

  • Bring a pot of salted water to a boil. Meanwhile, cook the bacon in a separate pot over medium heat, 2 minutes. Add the onion and bell pepper and cook 3 more minutes. Combine the flour, paprika, marjoram and 1 teaspoon salt in a large bowl; add the chicken and toss to coat. Push the bacon and vegetables to one side of the pot and increase the heat to medium high. Add the chicken and any remaining flour mixture to the other side and cook, turning, until browned, about 6 minutes. Stir together the chicken, bacon and vegetables and cook 2 more minutes. Add the chicken broth and bring to a boil. Stir, then reduce the heat to medium low. Cover and simmer until the chicken is almost cooked through, about 10 more minutes. Meanwhile, add the noodles to the boiling water and cook as the label directs; drain. Uncover the pot with the chicken, increase the heat to high and cook 2 minutes. 24 ounces boneless skinless chicken breasts, cut into small pieces (1.5 lbs)
2 tablespoons garlic, minced
1 onion, chopped
48 ounces chicken broth, separated
3 -4 tablespoons Hungarian paprika
1 tablespoon salt
1 teaspoon ground black pepper
1/2 teaspoon powdered ginger
2 bay leaves
1 fudgesicle (optional)
potato starch (optional) or cornstarch, to thicken (optional)
12 ounces sour cream

Steps:

  • Heat olive oil in a pot, add chicken and garlic and sautee.
  • Add onions and just enough broth to cover.
  • Stir in spices, bring to a boil, turn down heat and simmer until chicken and onions are fully cooked.
  • While it's simmering, eat the Fudgesicle. You can also make the Spaetzel and Halouskies now.
  • When the chicken and onions are fully cooked, bring to a roiling boil and drop in the Spaetzel.
  • If needed you may add the starch as a thickening agent, by mixng it into the set aside broth and pouring it into the pot.
  • Remove from heat and let it thicken.
  • Mix in sour cream, and it's ready to serve.

This classic Hungarian dish will fill you up and keep you warm on a chilly fall night. A healthy dose of paprika gives this dish its deep brick-red color. If you enjoy spicy food, try replacing half of the sweet paprika with hot Hungarian paprika.

4 chicken leg quarters, cut in half at joint (about 3 pounds total)
Coarse salt and ground pepper
2 teaspoons vegetable oil
1 large yellow onion, halved and thinly sliced lengthwise
3 garlic cloves, roughly chopped
2 tablespoons sweet paprika
3 tablespoons all-purpose flour
1 3/4 cups low-sodium chicken broth
1 can (14 ounces) diced tomatoes
1/2 pound wide egg noodles
1/2 cup sour cream or thick plain yogurt

Steps:

  • Season chicken with salt and pepper. In a large Dutch oven or heavy pot, heat oil over high. Cook chicken, skin side down, until golden and crisp, 6 minutes. Flip chicken and cook until browned, 6 minutes more. Transfer to a plate.
  • Discard all but 1 tablespoon fat from pot and reduce heat to medium. Add onion and cook, stirring frequently and scraping up any browned bits with a wooden spoon, until beginning to soften, 2 minutes. Add garlic and cook, stirring frequently, 3 minutes. Add paprika and flour, season with salt and pepper, and stir constantly until paprika is fragrant and mixture begins to stick, 1 minute. Add broth and whisk until smooth. 8 slices bacon
1/4 cup chopped onion
2 lbs boneless skinless chicken breasts
5 cups flour (spatzels)
salt
paprika
4 cups chicken stock or 4 cups chicken bouillon
butter
1 1/3 cups milk
3 cups sour cream
4 eggs (spatzels)

Steps:

  • Cook slowly 8 slices of Bacon in electric skillet until crisp and brown.
  • Remove the bacon strips and add 1/4 cup of finely chopped onion.
  • Cook Onion until transparent.
  • Remove onion from skillet.
  • Cut Chicken breast into serving size pieces of chicken.
  • Cut 1 breast into thirds.
  • In a gallon size sealable plastic bag, place 3/4 cup of flour, 1 1/2 teas salt and 1 1/2 teas of paprika.
  • Shake to mix ingredients.
  • Place chicken in bag, shake to coat.
  • Brown chicken in bacon grease.
  • Reduce heat and add 2 cups of chicken stock or bullion.
  • Cover pan and cook chicken until tender.
  • In a saucepan melt 4 tablespoons of butter, blend in 4 tablespoons of flour.
  • Heat until mixture bubbles.
  • Stir constantly.
  • Remove from heat, add 2 cups of chicken stock or broth, 1 1/3 cups of milk, 3 tablespoons of paprika.
  • When throughly heated, low heat.
  • Stirring vigorously with a whisk, beater or a fork add 3 cups of sour cream in small amounts to the sauce.
  • When sauce and sour cream are mixed add crushed bacon and onion to sauce.
  • Pour sauce over chicken in the skillet.
  • Heat 3-5 minutes.
  • Turn off heat and let it sit for 1 hour.
  • Reheat before serving.
  • Sprinkle with paprika.
  • Serve over Spatzle.
  • Recipe for Spatzels: For each person at the meal use 1 cup flour, 1 egg, 1/2 teas salt.
  • Add water to mixture to create a very thick batter that will break with a spoon.
  • Drop small amounts of batter (spoon size) into boiling salted water.
  • Boil gently for 5-8 minutes.
  • Drain and toss with butter so they won't stick together.

I found this recipe in "Cook's Illustrated" winter issue of 2008. My husband told me his mom would make this when he was a youngster. I thought I would try it in my husband's new Le Creuset dutch oven our daughter bought him for Christmas. We loved it. You have to make sure you use good paprika, Penseys or McCormicks. And make sure you put it on the sautéed green peppers and onions BEFORE you deglaze. It then gets infused in the stew.

8 chicken thighs, with bone
salt
1 tablespoon pepper
1 teaspoon vegetable oil
1 large onion, halved and sliced thin
1 large red bell pepper, seeded, halved width wise and cut into 1/4 inch strips
1 large green pepper, seeded, halved width wise, and cut into 1/4 inch strips
3 1/2 tablespoons paprika (sweet)
1/4 teaspoon dried marjoram
1 tablespoon unbleached all-purpose flour
1/2 cup dry white wine
1 (14 1/2 ounce) can diced tomatoes, drained
1/3 cup sour cream
2 tablespoons chopped fresh parsley leaves

Steps:

  • Adjust oven rack to lower-middle position; heat oven to 300°F Season on both sides of chicken liberally with salt and pepper.
  • Heat oil in large Dutch oven over medium- high heat until shimmering but not smoking, about 2 minutes. Add 4 chicken thighs, skin side down, and cook without moving them until skin is crisp and well-browned, about 5 minutes. Using tongs, turn chicken pieces and brown on second side, about 5 minutes longer; transfer to large plate. Repeat with remaining chicken thighs and transfer to plate; set aside. When chicken has cooled, remove and discard skin (see note in above description). Discard all but 1 tbsp fat from pan.
  • Add onion to fat in Dutch oven and cook, stirring occasionally, over medium heat until softened, about 5 minutes. Add red and green pepper and cook, stirring occasionally, until onions are browned and peppers are softened, about 3 minutes. Stir in 3 tbsp paprika, marjoram, and flour; cook, stirring constantly, until fragrant, about 1 minute. Add wine, scraping pot bottom with wooden spoon to loosen browned bits; stir in tomatoes and 1 teaspoons salt. Add chicken and accumulated juices, submerging chicken in vegetables; bring to simmer, then cover and place pot in oven. Cook until chicken is no longer pink when cut into with paring knife, about 30 minutes. Remove pot from oven, (At this point, stew can be cooled to room temperature, transferred to airtight container, and refrigerated for up to 3 days. Bring to simmer over medium-low heat before proceeding.).
  • Combine sour cream and remaining 1/2 tbsp paprika in small bowl. Place chicken on individual plates. Stir a few tablespoons of hot sauce into sour cream, then stir mixture back into sauce in pot. Spoon enriched sauce and peppers over chicken, sprinkle with parsley, and serve immediately.
  • You may serve over mashed potatoes, noodles, or rice. ( I used rice).

The perfect Hungarian comfort food. Serve over my posted nokedli recipe. This recipe has been passed down in my family for generations. I use Better Than Bouillon chicken base to make the broth.

1/2 cup flour
3 tablespoons Hungarian paprika (preferably Szeged)
salt
pepper
chicken piece (breasts, legs, or thighs, with bones)
3 tablespoons vegetable oil
1 cup chopped onion
1/8 teaspoon ground red pepper (cayenne)
2 cups chicken broth
1 cup sour cream

Steps:

  • Combine flour, 2 tbsp paprika, salt and pepper.
  • Dredge chicken pieces in flour mixture.
  • Reserve left over flour.
  • Add oil to large dutch oven.
  • Heat oil over medium high heat.
  • Add chicken and brown on both sides, about 10 minutes.
  • Remove chicken from pot.
  • Add little oil to pot (if bottom appears to be too dry).
  • Add onion, red pepper, 1 tbsp paprika, and salt.
  • Saute until onion is tender, about 2 minutes.
  • Return chicken to pot, and add enough chicken broth to cover.
  • Bring to boil, reduce heat, cover, and simmer about 30 to 45 minutes, until chicken is done.
  • Remove from heat and let paprikash cool down.
  • Combine reserved flour and 1/2 cup sour cream.
  • Add small amount of liquid from pot into flour mixture and stir with whisk until smooth.
  • Add mixture to pot, stirring constantly.
  • Simmer 5 minutes.
  • Let cool down again and add remaining sour cream, stirring constantly.
  • Sauce should be a very pale orange color (almost white).
  • Cook about 1 minute until heated.
  • Serve over homemade Hungarian nokedli (spaetzel), wide egg noodles, or cooked cavatelli.

This tastes even better as leftovers after the flavors have more time to blend, just don't forget to add with the Sour Cream and a little dried dill. (Fresh Dill if you have it)

2 1/2 lbs chicken thighs, boneless, skinless
1/2 teaspoon kosher salt

1 cup yellow onion, red, yellow, and orange Bell Pepper, sliced
2 garlic cloves, chopped
2 (14 1/2 ounce) cans stewed tomatoes
1 tablespoon paprika
6 ounces wide egg noodles, wheat, cooked

2 tablespoons dried dill (or fresh )

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the sliced onion and peppers and pan roast. I like a little char on the edges, and remove from pan when the skins start to pull away from the peppers.
  • Season the chicken thighs with salt and pepper. Cook the chicken in the same pot used for the peppers and onion until browned, 4 to 5 minutes per side. Remove from the pot.
  • Add the onions, bell pepper back to the pan and add garlic, cooking until the garlic is tender.
  • Add stewed tomatoes, paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper and bring to a boil.
  • Return chicken to the pot in the vegetable mixture and simmer, partially covered, until the chicken is cooked through.
  • To serve: in 4 bowls, divide the noodles into equal servings, top with chicken and sauce, top with sour cream and a sprinkling of dill.

1/2 cup nonfat sour cream

Steps:

  • Coat chicken breasts liberally on both sides with the paprika. Coat a non-stick skillet with cooking spray and heat over medium-high. Add the butter.
  • When melted, add chicken breasts and sauté until lightly browned on both sides; about 4 minutes. Remove to a serving platter. Cover with foil to keep warm.
  • Add the onion to skillet and sauté for 1 minute. Add wine, stirring to scrape up any brown bits in the pan. Increase heat to high and reduce wine to half. Stir in chicken broth and bring to a boil.
  • Lower heat and add chicken breasts back to the pan. Cover and simmer until chicken is tender; about 10 minutes.
  • Meanwhile in a large saucepan of boiling salted water, cook noodles until just tender; 3-5 minutes. Drain.
  • Transfer noodles to a serving platter. Remove the chicken from the sauce and arrange on top of the noodles. Whisk sour cream into sauce in skillet until smooth.
  • Cook and stir until sauce thickens slightly; 2-3 minutes. Spoon sauce over chicken.

I adapted this from a recipe by Pierre Franey that originally appeared in the New York Times. You may use 1 cup water plus 2-3 chicken bouillon cubes instead of the broth.

1 medium onion, chopped
1 -2 garlic cloves, minced or 1/2 teaspoon garlic powder
2 teaspoons oil
1 chicken, cut up
1 cup rich chicken broth
1 tablespoon sweet Hungarian paprika (or to taste)
8 ounces sour cream
1 -1 1/2 tablespoon flour
salt

Steps:

  • Saute onion and garlic in oil.
  • Add chicken; brown on all sides. Add broth (or water and bouillon cubes) and 2 teaspoons or so paprika. Cover and simmer until chicken is tender (do not boil but simmer; this may take longer). You may want to remove the white meat first. Remove all chicken; keep chicken warm while preparing sauce.
  • Mix flour and sour cream, add a bit of sauce from chicken and mix together. Put this back into the pot - mix with sauce. Cook 1 minute without boiling. Taste for seasoning - add salt if necessary or more paprika. Return chicken pieces to the pot.
  • Serve with buttered noodles or rice.
