Diced chicken or turkey is combined with vegetables in a cream sauce, then topped with a whole grain biscuit and baked.NSLP/SBP CREDITING INFORMATION 1 biscuit with ²⁄3 cup (No. 6 scoop) of chicken mixture provides 2 oz equivalent meat, ¹⁄8 cup starchy vegetable, ¹⁄8 cup additional vegetable, and 1.5 oz equivalent grains.

Steps:
- Filling: Place 3 lb 3 oz (2 qt 3 cups) chicken in a steam table pan (12" x 20" x 2½").For 50 servings, use 2 pans.For 100 servings, use 4 pans.
- Add peas and carrots to each steam table pan. Spread evenly. For frozen vegetables, add 1 lb 12 oz (1 qt 1⅔ cups) per steam table pan.
- If using canned peas and carrots, add 1 lb 12 oz (1 qt 1⅔ cups) per steam table pan.
- Melt margarine in a large stock pot over medium heat. Add celery, onion, and flour. Cook for 3 minutes. Flour will begin to turn light brown in color. Stir often.
- Slowly stir in broth, half and half, pepper, and poultry seasoning. Stir often until mixture becomes slightly thickened for 10 minutes.
- Pour approximately 2 qt 1 cup gravy mixture over chicken and vegetables in each steam table pan. Gravy mixture will thicken in step 9. Stir gently. Set aside for step 8.
- Drop biscuits: Combine salt, flour, baking powder, and baking soda in a large bowl.
- Add oil and yogurt. Stir well until dough forms.
- Using a No. 30 scoop (⅛ cup), place drop biscuits on top of chicken mixture. Leave about 1⁄2"-1" space between each biscuit. Portion 25 biscuits per steam table pan.
- Bake:Conventional oven: 450 °F for 30 minutes.Convection oven: 400 °F for 20 minutes.
- Critical Control Point: Heat to 165 °F or higher for at least 15 seconds.
- Critical Control Point: Hold for hot service at 135 °F or higher.
- Portion 1 biscuit with 2⁄3 cup (No. 6 scoop) of chicken mixture.

EASY CHICKEN OR TURKEY POT PIE
For those who do not want to bother making a cream sauce from scratch then this is for you and it's pretty darn good too, fresh mushrooms may be used in place of canned, although the golden mushroom soup is better this will also work using cream of mushroom soup, if you are not a garlic-lover then omit --- see my recipe#66929

Steps:
- In a large skillet melt butter over medium heat.
- Add in carrot, celery, onion and thyme; cook stirring until just crisp-tender.
- Add in mushrooms fresh garlic,and black pepper; cook stirring for 2 minutes.; remove skillet from heat.
- Place the cubed chicken or turkey in a bowl sprinkle with 1 tablespoon plus 1 teaspoon flour and toss well to coat.
- To the skillet add in the floured chicken or turkey, undiluted soup and green beans to the onion mixture; mix very well with a spoon to combine.
- Line the bottom of the pie plate with pastry.
- Add in the chicken or turkey mixture.
- Place the remaining pastry on top; seal and flute.
- Slice a couple of slits on top to allow steam to escape.
- Brush lightly with table cream or milk.
- Cover the edges loosley with foil.
- Place the pie plate on a baking sheet.
- Bake bottom-oven rack for 55-60 minutes or until golden brown.

FAMILY CIRCLE'S LEAN CHICKEN/TURKEY POT PIE
From Family Circle magazine. This chicken pot pie recipe is low in fat, calories, and sodium, but still has so much flavor. It's a much healthier version of traditional chicken/turkey pot pie. The only thing I did differently was that I used turkey, a little more salt and pepper, peas in place of green beans, and I used 2 cans of low-fat crescent rolls because I couldn't find phyllo dough. I put one can of the crescent rolls on the bottom of the greased pan and baked at 350°F for a little over 20 minutes until golden brown, put the pot pie mixture in it, and then used the other can to top the mixture and baked at 350°F for 20 minutes. You can either follow the recipe if you wish or you can try the variation that I used. Hope you like this as much as we did!

- Heat oven to 350°F Coat a 3-quart baking dish with nonstick cooking spray.
- Heat 2 teaspoons of the oil in a large nonstick skillet over medium-high heat. Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook 8 minutes, turning halfway through cooking time. Transfer to a plate.
- Add remaining oil, onion and celery; cook 3 minutes. Stir in garlic, and flour and cook, stirring constantly, 1 minute. Gradually stir in broth and milk. Cook, stirring, until mixture comes to a boil.
- Add potatoes, carrots, green beans, remaining salt and pepper. Cover; cook on medium-low, stirring occasionally, 10 minutes.
- Stir in chicken, parsley, and sage. Spoon mixture into prepared baking dish.
- Unroll phyllo. Place 1 sheet on top of chicken mixture; lightly coating with cooking spray. Sprinkle with 1 tablespoon of the cheese. Repeat layering. Tuck edges of phyllo inside rim of baking dish.
- Place baking dish on a baking sheet; bake at 350°F for 35 to 40 minutes or until filling is bubbly. Let stand 10 minutes before serving.

- Preheat oven 375 degrees.
- Heat enough olive oil to thinly films the bottom of the saucepan. Add onion and garlic and cook 2-3 minutes until it begins to soften. Add carrots and cook 5 minutes to soften.
- Set aside.
- Melt butter. Wisk in flour and mix well. Mixture will be dry. Gradually add 1 Cup stock to the saucepan. Cool 2-3 minutes until mixture begins to thicken and takes on a golden color.
- Add chicken, corn and any additional stock to achieve consistency. (Some like it soupy, some like it thicker.) Add salt to taste.
- Place Mixture in baking dish and top with pie crust. Bake at 375 degrees for approximately 25 minutes or until crust is golden and pie is bubbly.
- **Variation: Mashed potatoes can be substituted for pie crust topping.
- **The longer you leave the chicken in the poached water to cool, the moister it will be.

- Heat oven to 425.
- Prepare pie crust for a two-crust pie.
- In a medium saucepan, melt margarine over medium heat.
- Add onion; cook two minutes or until tender.
- Stir in flour, salt and pepper until well blended.
- Gradually stir in broth and milk; cook, stirring constantly, until bubbly and thickened.
- Add chicken and mixed vegetables, remove from heat.
- Spoon chicken mixture into crust-lined pan.
- Top with second crust and flute; cut slits in several places.

- Preheat oven to 400 degrees and take pie crusts out of the fridge to allow to warm up a bit.
- Saute the chicken in a large, deep skillet with the chopped onion and 2 TB margarine until chicken is no longer pink. Season with 3 dashes poultry seasoning, salt, pepper and 2 dashes garlic salt. While chicken is cooking, peel and chop potatoes. Place potatoes in a microwave-safe bowl with a little bit of water, cover and microwave for 8 minutes.
- When chicken is done, add cans of gravy and worcestershire sauce. Gravy should "bite" just a little bit from the worcestershire sauce, as the flavors will mellow out while baking (worcestershire sauce may have to be adjusted depending on which brand of gravy you use.)
- Add veggies to chicken mixture.
- Unroll one crust and place in the bottom of a 2-quart oven-proof dish. Pour chicken mixture on top, and cover with other crust. Seal & crimp crust and cut for venting.
- Bake at 400 degrees until top is browned, about 20 minutes.

- Gradually add milk.
