- Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
- Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
- Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

Steps:
- Place the flour in a resealable plastic bag and season with the garlic, 1 teaspoon salt and 1/4 teaspoon pepper. Place the chicken pieces in the bag with the flour and toss to coat (work in batches). Transfer the breadcrumbs to a rimmed plate, season with salt and pepper and set aside.
- Whisk the egg and 1 tablespoon water in a medium bowl. Remove a piece of chicken from the flour, dip in the egg mixture, then the breadcrumbs, gently pressing the crumbs into the chicken, and set on a clean plate. Repeat with the remaining pieces of chicken.
- Heat the vegetable oil in a large frying pan over medium-high heat. Add the chicken pieces to the pan (work in batches if needed) and brown on each side, about 8 minutes total. Use a spatula to transfer the chicken nuggets to a paper-towel-lined plate. Salt while hot and serve.

- Heat vegetable oil in a large pot.
- Whisk together the flour and spices in a shallow bowl.
- In a separate bowl, whisk the eggs together.
- Coat the chicken first in the flour, then in the eggs and finally in the flour again. For a thicker coating, repeat the breading.
- Fry the chicken nuggets in the oil until golden brown and crisp. Remove with a slotted spoon then drain on kitchen paper before serving.

Steps:
- Place flour on a large plate (fill the plate doesn't matter to much) do the same with the polenta.
- Beat the eggs and place in a bowl. Season the flour with salt and pepper.
- Cut the chicken into pieces of your choice (keep hole if want will effect cooking time).
- Preheat the oven 50C/gas 3.
- First roll the chicken in the flour (knock any access of) then the egg, then finally in the polenta. Repeat for all.
- Put a griddle pan on a high heat with the butter and oil.
- Fry each piece till golden brown then put in the oven to keep warm while cooking rest of the chicken.

- In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
- Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

- Combine bread crumbs and cayenne pepper.

CHICKEN NUGGETS - OAMC
This is the way I make my chicken nuggets. My kids love these and I try to keep some on hand in the freezer for quick snacks and meals. The technique came from the 30 day gourmet cookbook. This is an estimate on the crumbs. I normally do a whole bunch of chicken at once and just kind of eyeball the amounts.

- Preheat oven to 375 degrees.
- spray a baking sheet with cooking spray and set aside.
- Cut chicken into slices and then into "nugget" sized pieces.
- In a medium bowl, mix together the ranch dressing and the milk.
- put chicken pieces into bowl with milk mixture.
- Crush the ritz crackers into fine crumbs. I use my food processor.
- Place cracker crumbs and paprika in a large zipper type baggie. Seal and shake to mix together.
- Place a few of the chicken pieces into the bag of coating mix. Seal bag and shake to coat.
- Place nuggets on prepared baking sheet.
- Repeat until all chicken has been coated.
- Bake for 15-20 minutes or until chicken is done.
- Remove from oven and cool. I like to flash freeze before placing in a freezer bag and freezing.
- To serve:.
- Place frozen nuggets on a baking sheet and bake at 400 degrees for 5-10 minutes or until heated through. You can heat in the microwave, but they don't turn out as crispy.
- Note: Flash freezing just means to place the items on a baking sheet, not touching, and put in the freezer until firm. This keeps them from sticking together in one big clump.

- For the nuggets:.
- In a large bowl, marinate the pieces of chicken in buttermilk. Cover with plastic wrap and leave in the refrigerator overnight. This will tenderize the chicken.
- Heat oil in a deep fryer. Drain and discard the buttermilk. In a food processor, combine the marinated chicken, egg, chives, Parmesan, soy sauce, garlic-flavored hot sauce, lemon juice, salt, and pepper. Blend until a smooth paste is formed, about 1 minute.
- Make about 2-inch by 1-inch nuggets, lining them up on a baking tray.
- In a shallow bowl, add the flour and in a second bowl the beaten eggs, and in a third bowl the panko bread crumbs.
- Coat the nuggets in flour, then egg, and then the panko crumbs and place the nuggets back on the tray. Deep fry in small batches until golden brown, about 5 minutes. Alternately, heat 2 tablespoons of vegetable oil in a large skillet and fry, turning every 2 minutes, for about 10 minutes.
- For the dipping sauce:.
- Combine the mustard, honey, salt, and pepper in a bowl and mix well. Can be made up to 1 day in advance.
- Cook's Note:.
- Soaking the chicken in Buttermilk will result in tender and juicy chicken. You can buy buttermilk in the dairy product section of a supermarket, but mixing 1 cup of milk with 1 tablespoon of lemon juice or vinegar achieves the same result.
