Thai Chicken Meatballs with Spicy Peanut Sauce image

These Thai Chicken Meatballs with Spicy Peanut Sauce are a quick and tasty midweek meal, on the table in 30 minutes. The meatballs are mixed with garlic, ginger, finely chopped mint and coriander, all brought together with fish sauce, soy sauce and a shot of lime juice and raw honey to balance it all out.

Time 30m

Number Of Ingredients 30

500 grams/1 pound Minced or ground chicken
1 tsp grated ginger
3 cloves garlic (minced)
1 tablespoon fish sauce
1 teaspoon Raw honey
2 tablespoons Coriander/Cilantro (finely diced)
2 tablespoons Mint (finely diced)
1 teaspoon Lime juice
½ cup Panko Breadcrumbs
¼ cup Peanut butter
2 tablespoons Soy Sauce
1 tablespoon Lime Juice
1 teaspoons Garlic (crushed)
I teaspoon Ginger (fine grated)
1 teaspoon Raw Honey
1 tablespoon Sirracha (for a medium level peanut sauce, otherwise use 1 teaspoon for mild)
5 tablespoons Milk (any type)
2 cups purple or green cabbage
1/2 green apple (sliced into matchsticks)
1 small carrot (sliced into matchsticks)
2 tablespoons roasted peanuts
1 tablespoon Sesame seeds
2 tablespoons mint (finely chopped)
2 tablespoons coriander/cilantro (finely chopped)
1 red chilli (finely chopped)
1 tablespoon Soy sauce
1 tablespoon olive oil
1 teaspoon sesame oil
1 1/2 teaspoon White vinegar
1 1/2 teaspoon Raw Honey

Steps:

  • Meatball Preparation: Add all the ingredients for the meatballs (except panko breadcrumbs) to a mixing bowl. Use a spoon to mix everything together until combined.
  • Put the panko breadcrumbs onto a large dinner plate and use a dessert spoon to scoop out 1 spoonful of meat mixture and drop into the crumbs. (Make sure to do one at a time as the mixture will be quite moist, however the breadcrumbs will make it more manageable).
  • Roll the spoonful of meat in the breadcrumbs until a ball (approx. golf ball size) is formed. Set meatballs aside on a clean plate and repeat until all the meat is rolled into balls. (you should end up with about 16 or so)
  • Cover and refrigerate the meatballs whilst the other parts of the recipe are prepared.
  • Slaw: Add all of the slaw ingredients to a medium sized bowl (without the dressing), cover and refrigerate until just before serving.
  • Dressing: Add all the dressing ingredients into a small mixing bowl or jar and whisk to combine. Cover and refrigerate until just before serving.
  • Cooking the Meatballs: Heat a large pan/skillet on medium to high heat with the oil. Gently add all the meatballs, and cook, gently turning with a spatula or tongs - about 10 minutes or so. While they are cooking, make the peanut sauce.
  • Peanut Sauce: Heat a small saucepan on medium and melt the peanut butter. Add the garlic, ginger, soy sauce, honey, lime juice and siracha, stir with a spoon to combine and heat through until sauce is thickened. Gradually add the milk 1 tablespoon at a time and stir through to thin out to your liking. Remove from heat once desired consistency is achieved.
  • To serve: Give the dressing a shake or another whisk and add to the bowl of slaw and toss through with a couple of forks. Arrange the slaw on two plates, place the meatballs, and drizzle over the spicy peanut sauce. Optional garnishes could include sesame seeds, chopped peanuts and spring onion.

SPICY CHICKEN MEATBALLS WITH ARRABBIATA SAUCE

Spicy Chicken Meatballs with Arrabbiata Sauce image

This dish was inspired by R+D Kitchen and Milo + Olive, two of my favorite local spots in Santa Monica. Their chicken meatballs in tomato sauce are light but with a bit of heat and served without a strand of spaghetti in sight. Instead, they are ladled over arugula. For my version, I pair my spicy chicken meatballs with an equally spicy tomato sauce: Arrabbiata, which means "angry" in Italian. With fresh basil, bitter arugula, pungent red onion and a little Parm, this dish is perfect by itself, but if you want to push it into hearty territory, serve it over some spaghetti. Pile any leftovers onto an Italian roll for an epic sandwich the next day. Enjoy!

Time 30m

Yield 2 servings as a main course or 4 to 6 as an appetizer

Number Of Ingredients 27

1/2 cup fine breadcrumbs
1/2 cup finely chopped onions
2 cloves garlic, minced
1/2 teaspoon dried oregano
2 teaspoons tomato paste
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 tablespoon parsley, finely chopped
1/4 cup finely grated Parmesan
Kosher salt and freshly ground black pepper
1 pound ground dark meat chicken
1/3 cup milk
1 large egg
Olive oil, for cooking
2 cups Arrabbiata Sauce (recipe follows), heated
1/2 red onion, thinly sliced
1/2 cup finely grated Parmesan
1 bunch arugula (about 6 ounces)
1/4 cup thinly sliced basil leaves
2 tablespoons extra-virgin olive oil
2 large cloves garlic, finely chopped
1/4 teaspoon crushed red pepper
One 28-ounce can whole tomatoes
1 teaspoon tomato paste
1/2 cup dry white wine
3/4 cup thinly sliced basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • For the meatballs: Mix together the breadcrumbs, onion, garlic, oregano, tomato paste, cayenne, paprika, parsley, Parmesan and 1/2 teaspoon each salt and pepper in a large bowl; add the chicken, milk and egg. Gently blend together with your fingertips, then form into 2-inch balls. Don't compact the meatballs too much or they'll be dense and dry.
  • Heat a large skillet over medium-high heat and add a few tablespoons of olive oil to coat. Add the meatballs and cook until a deep golden brown, 2 to 3 minutes on each of their 4 sides. It's OK if they're not fully cooked through, as they'll finish cooking in the sauce. (If you're not cooking them in the sauce, then cook the meatballs over medium heat until cooked through, 3 to 4 minutes per side.)
  • For serving: Pour the hot Arrabbiata into the skillet with the meatballs. Reduce the heat to medium low, cover and cook until the meatballs are fully cooked through, 7 to 10 minutes.
  • Top with the red onions and Parmesan, then ladle over a handful of arugula in each serving bowl. Garnish with the basil and enjoy!
  • Heat the oil in a large skillet over medium heat. Add the garlic and crushed red pepper and cook, stirring, until fragrant, about 30 seconds. Add the tomatoes, tomato paste and wine and cook, stirring occasionally, until most of the alcohol has evaporated, about 5 minutes. Add the basil and cook, stirring occasionally, until the sauce has thickened.
  • Blend the sauce with an immersion blender (or in 2 batches in a blender) until smooth. Season with salt and pepper. Makes about 4 cups. Refrigerate any leftover sauce in an airtight container for up to 2 weeks or freeze for up to 3 months.

CHICKEN STIR-FRY WITH SPICY PEANUT SAUCE

Chicken Stir-Fry with Spicy Peanut Sauce image

"How do I make chicken interesting?" is a question people often ask me. Here's your answer. I love making a double batch of this sauce and keeping it in the door of the fridge for a day when I need something tasty in a pinch. Don't like spice? Simply omit the hot sauce and the red pepper flakes. You can also sub thinly sliced lean beef for the chicken or just make it a stir-fry with all vegetables...

Time 40m

Yield 4 servings

Number Of Ingredients 16

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

CHICKEN MEATBALLS AND SPICY PEANUT SAUCE

Chicken Meatballs and Spicy Peanut Sauce image

This dish turned out perfect with my minor additions in order to suit our tastes, adding the optional "heat" of Sambal Oelek, which I would strongly recommend. The coconut milk tends to lessen the intensity of the heat. I did not use low sodium products as originally suggested, but it's an option. Mixture is very wet to work with. You may want to spray your hands with oil to prevent the meat from sticking to your hands. I got 20 medium size meatballs using a 1/8 cup measure. Recipe by: Family Circle Magazine, April 2013

Categories     < 60 Mins

Time 40m

Yield 4 serving(s)

Number Of Ingredients 18

1 lb ground chicken
1/2 cup plain breadcrumbs, I used a combo of fresh and dry
1/2 cup finely diced onion
1/2 cup finely diced red bell pepper
1/3 cup cilantro, chopped, plus more for garnish
1 egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon cayenne pepper, to taste this adds heat
1 1/2 teaspoons grated ginger, divided 1 teaspoon plus 1/2 teaspoon
2 tablespoons canola oil
1 cup light coconut milk, I used regular
1/3 cup chunky peanut butter, I used plain
1 cup chicken broth, low sodium if desired
2 tablespoons soy sauce, low sodium if desired
1 -2 tablespoon sambal oelek, for added heat (to taste)
2 tablespoons cilantro (to garnish)
2 tablespoons scallions, sliced for garnish
3 cups cooked basmati rice

Steps:

  • In a large bowl, combine onion*, red pepper*, cilantro, egg, salt, cayenne and 1 teaspoon of the ginger, then add bread crumbs and chicken, combine well with spoon or hands. *I pulsed the pepper and onion in the food processor until fine, then used a paper towel blotting to remove excess moisture.
  • Mix well and form into 20 meatballs. I used a 1/8 C measure or medium cookie scoop.
  • Add 1 tablespoon of the oil to a large saute pan over medium heat. Add half the meatballs and brown on all sides, 5 to 6 minutes total; remove to a plate. Repeat with remaining 1 tablespoon oil, if necessary, and remaining meatballs; set aside. Drain off any excess oil.
  • In same pan, combine coconut milk, peanut butter, chicken broth, soy sauce and remaining 1/2 teaspoon ginger and Sambal Oelek if using. Stir constantly over medium heat to melt peanut butter.
  • Bring to a simmer and cook 2 to 3 minutes, until slightly thickened. Add meatballs to sauce, cover pan and cook 5 minutes, or until meatballs are cooked through. I let them simmer for about 30 minutes. Check for seasoning.
  • Serve meatballs and peanut sauce over rice. Garnish with cilantro and green onion, if desired.

Marvel over these meatballs while watching (hopefully) Black Panther at the Oscars. The movie is taken place in a fictional African country. I came up with these tasty morsels using spices of the regions. Break out the fondue or wrap in lettuce. These will leave an impression just as the movie did! ;) Geniet!
