Chicken Mayo Sandwich image

Easily elevate the classic chicken mayo sandwich with just a few extra ingredients. My favourite way to use up leftover roast chicken (or turkey)!

150 grams cooked chicken (about 1 cup when shredded)
½ cup mayonnaise
1 handful fresh parsley (chopped)
1 shallot (diced)
1 head romaine lettuce
salt and pepper
4 slices bread

Steps:

  • Finely slice the lettuce and add to a colander. Rinse well under cold water, drain and pat dry with a clean kitchen towel.
  • Use two forks to shred the chicken then add to a bowl with the chopped parsley and shallot. Season generously with salt and black pepper.
  • Add the mayonnaise to the chicken mix and stir well to combine. Taste and add more seasoning if required.
  • Spread the chicken mayo mixture evenly over two slices of your preferred bread, then top with a generous handful of lettuce and another slice of bread..
  • Slice each sandwich in half and enjoy!

8 (6 ounce) chicken thighs
1 (12 ounce) jar roasted red peppers, drained and chopped
3 tablespoons bottled minced garlic
½ cup mayonnaise
1 tablespoon pesto
6 (6 inch) hoagie rolls, split lengthwise
2 large tomatoes, sliced

Steps:

  • Place chicken in the bottom of a slow cooker. Add roasted red peppers and garlic.
  • Cook on Low until chicken is no longer pink at the bone and the juices run clear, about 8 hours.
  • While the chicken is cooking, mix mayonnaise and pesto in a small bowl. Store in the refrigerator.
  • Shred chicken with 2 forks. Use a slotted spoon to put chicken and pepper mixture onto hoagie rolls.
  • Serve with pesto mayonnaise and sliced tomatoes.

4 boneless skinless chicken breasts
2 tablespoons cajun seasoning (or adjust to taste) or 2 tablespoons creole seasoning (or adjust to taste)
4 tablespoons butter, divided
1 medium onion, sliced
1 small red bell pepper, sliced
8 hamburger buns or 8 kaiser rolls, toasted is best
1 cup mayonnaise
1/4 cup minced fresh cilantro leaves
2 tablespoons fresh lemon juice
2 garlic cloves, minced
1 1/2 teaspoons chipotle peppers, in adobo (pureed)
1 teaspoon honey (optional)
1/2 teaspoon kosher salt

Steps:

  • Wash and pat dry the chicken. Place each breast between two sheets of clear plastic wrap and pound until about 1/8" thick. They should flatten out to the point where you can cut each in half when cooked to make two sandwiches. Place on plate and season with 1 tablespoons of the Creole/Cajun seasoning. Set aside.
  • Heat a skillet over medium high heat and add 2 of the 4 tablespoons of butter. Add the onions, peppers and the remaining tablespoon of seasoning mix and sauté until onions are caramelized. Remove vegetable mixture and set aside. Add remaining butter to the skillet and sauté the chicken breast until cooked through, turning once. This may need to be done in batches.
  • To make chipotle mayonnaise, mix all mayonnaise ingredients together.
  • To assemble, spread chipotle mayonnaise mixture on both inner sides of the toasted buns then layer within the cooked chicken, sautéed onions and red bell peppers.

1/2 teaspoon finely grated lemon zest

2 focaccia rolls (or your favorite bread sliced)

5 cherry tomatoes or 5 grape tomatoes, cut lengthwise
2 tablespoons shredded carrots
slivered red onion, to taste
1 cooked chicken breast fillet, shredded into long strips

Steps:

  • Lemon-Caper Mayonnaise: Mix mayonnaise, lemon juice, zest, and capers in a small cup or bowl and set aside.
  • Sandwich: Split rolls in half. On the bottom half of each roll, spread the lemon caper mayonnaise.

Chicken Salad:
2 cups cooked, shredded chicken
2 (1/4 inch thick) slices lightly toasted French bread, cut into very small cubes
2 small tomatoes on the vine, diced
1 small onion, thinly sliced
2 tablespoons minced celery
2 tablespoons chopped cilantro
10 small pimento-stuffed olives, halved
8 mini croissants

Steps:

  • Whisk together olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a small bowl until well combined; set aside.

  • Gently pull the skin off of the chicken breasts. Place on a baking tray and pop in the oven at 180C/356F for 15-20mins, or until crispy. Timings will depend on how big the skin is and how much it was cooked beforehand, so just be vigilant. Also depending on how well the skin was originally seasoned you might want to season with salt & pepper beforehand too. When done allow to cool for 5mins, this will help it crisp up even more.
  • Meanwhile, dice the chicken breasts into small cubes. Combine in a mixing bowl with mayonnaise and generous amounts of cracked black pepper. Taste a cube and adjust mayo/pepper to preference.
  • Butter one side of each slice of bread. Top two slices with lettuce, then spoon over chicken mayo. Crush the chicken skin with your hands or a knife and sprinkle over the chicken mayo. Top with second slice of buttered bread. Slice in half and enjoy!
