A "stoup" is what I call a soup that is almost as thick as a stew. This one can be prepared as a vegetarian entree as well.

Time 40m

Yield 4 servings

Number Of Ingredients 25

2 tablespoons extra- virgin olive oil, 2 turns of the pan
1 large onion, chopped
3 ribs celery with greens, chopped
4 cloves garlic, chopped
1 jalapeno pepper, seeded and chopped
1 fresh bay leaf or 1 large dried bay leaf
1 red bell pepper, seeded and chopped
3 (15-ounce) cans black beans
2 tablespoons ground cumin, a couple of palm fulls
1 1/2 teaspoons ground coriander, 1/3 palm full
Salt and pepper
2 to 3 tablespoons plus 2 teaspoons hot sauce, divided
1 quart chicken or vegetable stock
1 (15-ounce) can diced tomatoes, diced tomatoes with peppers and onions, or stewed tomatoes
8 slices white sandwich bread
1/2 cup hot pepper jelly or chili sauce, tomatillo or tomato salsa, taco sauce - whichever you have on hand
1/2 lime, juiced
8 slices baked honey ham, from the deli counter
8 slices pepper jack cheese, from the deli counter
8 slices smoked turkey, from the deli counter
2 eggs, beaten
Splash of milk
1 tablespoon butter
1/2 cup sour cream
2 to 3 scallions, chopped

Steps:

  • Heat a medium soup pot over medium high heat. Add 2 tablespoons extra-virgin olive oil to the hot pot, then onion, celery, garlic, jalapeno, and bay leaf. Cook 3 to 4 minutes, then add red peppers and continue to cook. Drain 2 cans of beans and add them. Use a fork to mash up the beans in the remaining can. Stir the mashed beans into the pot and season with cumin, coriander, salt and pepper and 2 to 3 tablespoons hot sauce. Add stock and tomatoes to the stoup and bring to a bubble. Reduce heat and simmer 15 minutes over low heat. Add the lime juice. Remove and discard the bay leaf
  • While stoup cooks, make Monte Cristos: spread bread with a light layer of pepper jelly, chili sauce, salsa, or taco sauce. Build sandwiches using 2 slices each of ham, cheese and turkey per sandwich. Beat eggs with milk and 2 teaspoons hot sauce and season the eggs with a little salt. Heat a griddle pan or nonstick skillet over medium heat. Melt butter in skillet. Dip each sandwich in egg coating and cook 3 to 4 minutes on each side to melt cheese and warm the meats through.
  • Ladle up black bean soup and top with sour cream and scallions. Cut Monte Cristos corner to corner and serve alongside soup for dipping and munching.

8 ounces smoked turkey, thinly sliced
8 ounces smoked ham, thinly sliced
8 slices swiss cheese
4 tablespoons Dijon mustard

DISNEYLAND'S BLUE BAYOU MONTE CRISTO SANDWICH

Disneyland's Blue Bayou Monte Cristo Sandwich image

THE original. I've also posted a vegetarian version. I have had the privilege of eating this sandwich on several occasions at Blue Bayou, possibly one of the most romantic restaurants ever (fascinated by the fake fireflies!) Directions should warn not to ride Alice in Wonderland's Tea Cups' after eating this. Courtesy of Mouseplanet.com. Not diet friendly.

Time 40m

Yield 4 sandwiches

Number Of Ingredients 19

12 ounces red currant jelly
1 tablespoon water
1 tablespoon half-and-half
1 (12 ounce) jar red currant jelly
1 (15 ounce) can peaches (or your choice of canned fruit. I like peaches)
2/3 cup water
1 small egg
1/2 teaspoon salt
1/8 teaspoon white pepper
2/3 cup all-purpose flour
1 3/4 teaspoons baking powder
8 slices white bread
4 slices roasted cooked turkey (1 ounce each sandwich)
4 slices tillamook swiss cheese (1 ounce each sandwich)
4 slices smoked ham (1 ounce each sandwich)
vegetable oil, for frying
confectioners' sugar, for dusting
fruit, compote
currant jelly, sauce

Steps:

  • CURRANT JELLY SAUCE: Combine jelly, water and half and half in blender and mix until smooth. Makes about 3/4 cup.
  • FRUIT COMPOTE: Combine your favorite fresh and canned fruits and chill well. Yield is about 1/2 cup per person.
  • BATTER: Place water, egg, salt, and pepper in a bowl and using an electric mixer, mix well at low speed. Add flour and baking powder and mix until batter is smooth. Chill.
  • SANDWICHES: Make 4 sandwiches, putting cheese between ham and turkey. Cut into fourths and put a toothpick through each quarter.
  • Heat about 6" of oil to 340 degrees in a fryer. Dip sandwiches in batter to cover all surfaces. Deep fry sandwiches until golden brown, turning as needed. An alternate way of frying it to put approximately 1/4" oil in a large pan and fry the sandwiches on both sides until crispy and brown.
  • Remove from oil and take out toothpicks. Drain on paper towel to remove excess oil. Sprinkle sandwiches with confectioners' sugar. Serve with fruit compote and currant jelly sauce.

ORIGINAL 1949 BROWN DERBY COOKBOOK - MONTE CRISTO SANDWICH

Original 1949 Brown Derby Cookbook - Monte Cristo Sandwich image

One of my family's all-time favorites, we really love this simple old-time version of the Monte Cristo Sandwich! It's great for breakfast, brunch, lunch or dinner. Traditionally dusted with confectioner's sugar, and served with red currant jelly for dipping. You can add a dab of Dijon mustard, if desired. Although this sandwich can be quartered and deep-fried, many of the earliest recipes, like this one adapted from 'The Brown Derby Cookbook' (Doubleday, 1949), call for frying it in a skillet, like french toast.

BLACK BEAN STOUP AND SOUTHWESTERN MONTE CRISTOS

Black Bean Stoup and Southwestern Monte Cristos image

A "stoup" is what I call a soup that is almost as thick as a stew. This one can be prepared as a vegetarian entrée as well by omitting the ham.

Yield 4 servings

Number Of Ingredients 24

2 tablespoons extra-virgin olive oil (EVOO), (twice around the pan)
1 dried bay leaf
1 jalapeño pepper, seeded and chopped
4 garlic cloves, chopped
3 celery ribs with greens, chopped
1 large onion, chopped
1 red bell pepper, cored, seeded, and chopped
3 15-ounce cans black beans
2 tablespoons ground cumin (a couple of palmfuls)
1 1/2 teaspoons ground coriander (1/3 palmful)
Salt and freshly ground black pepper
2 to 3 tablespoons plus 2 teaspoons hot sauce
1 quart chicken or vegetable stock or broth
1 15-ounce can diced tomatoes
8 slices white sandwich bread
1/2 cup hot pepper jelly or chili sauce, tomatillo or tomato salsa, or taco sauce-whichever you have on hand
8 slices honey-baked ham from the deli counter
8 slices Pepper Jack cheese from the deli counter
8 slices smoked turkey from the deli counter
2 eggs, beaten
A splash of milk
1 tablespoon unsalted butter
1/2 cup sour cream
2 to 3 scallions, chopped

Steps:

  • Heat a medium soup pot over medium-high heat. Add the EVOO to the hot pot, then add the bay leaf, jalapeños, garlic, celery, and onions. Cook for 3 to 4 minutes, then add the bell peppers and continue to cook. Drain 2 cans of beans and add them. With the remaining can, pour the juice and half the beans into the pot. Use a fork to mash up the beans remaining in the can. Stir the mashed beans into the pot and season with the cumin, coriander, salt, pepper, and 2 to 3 tablespoons of the hot sauce. Add the stock and tomatoes to the stoup and bring to a bubble. Reduce the heat and simmer for 15 minutes over low heat.
  • While the stoup cooks, make the monte cristos: Spread the bread with a light layer of pepper jelly or chili sauce, salsa, or taco sauce, then build sandwiches using 2 slices each of ham, cheese, and turkey per sandwich. Beat the eggs with the milk and the remaining 2 teaspoons of hot sauce and season the mixture with a little salt. Heat a griddle pan or nonstick skillet over medium heat. Melt the butter in the skillet. Dip each sandwich in the egg coating and cook for 3 to 4 minutes on each side to melt the cheese and warm the meats through.
  • Ladle up the black bean stoup and top with sour cream and scallions. Cut the monte cristos corner to corner and serve alongside the stoup for dipping and munching.

MONTE CRISTO SANDWICH

Monte Cristo Sandwich image

A great brunch item! One of my husbands favorite filling, baked, french toast style, sandwiches filled with cheese, ham, turkey & mustard. Raspberry preserves is a must for him. Could be eaten for breakfast, lunch or dinner. This is a LESSER FAT Monte Cristo recipe being baked and not fried full of flavor! I also like to buy the low salt cold cuts or use fresh baked turkey leftovers sliced thin.
