2 tablespoons butter
3 green onions, chopped
5 cloves garlic, diced
½ pound fresh mushrooms, sliced
1 small head broccoli, chopped
1 (14 ounce) can chicken broth
3 skinless, boneless chicken breast halves - cut into bite-size pieces
¼ cup butter
¼ cup all-purpose flour
1 cup milk
1 (8 ounce) package Colby-Jack cheese, cubed
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the linguine, and return to a boil. Cook, uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain.
  • Meanwhile, melt the 2 tablespoons butter in a large pot over medium-high heat. Stir in the onions, garlic, mushrooms, and broccoli, and cook and stir for 5 minutes. Pour in the chicken broth; cover and simmer until broccoli is just tender. Stir in the chicken, and cook until chicken is no longer pink in the center, about 5 minutes.
  • While the chicken is cooking, melt the butter in a saucepan over medium-low heat. Whisk in the flour, and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Add the butter-flour mixture to the chicken mixture, stirring constantly with a fork to prevent lumps. Pour in the milk, stirring constantly until smooth. Reduce heat to medium; simmer for 5 minutes more.
  • Stir in the Colby-Jack cheese; reduce heat to low and continue stirring until cheese is melted. Stir in the linguine. Season to taste with salt and pepper.

Steps:

  • Heat butter and olive oil together in a saucepan over medium heat; cook and stir onion and garlic until tender but not browned, about 5 minutes. Add milk, bouillon, oregano, salt, and pepper to onion mixture; bring to a boil. Reduce heat to medium and cook sauce for 5 minutes.
  • Whisk cold water and cornstarch together in a bowl until smooth. Mix cornstarch mixture and chicken into sauce; cook until heated through and thickened, about 5 minutes.

1 lb boneless skinless chicken breast
1 lb linguine, cooked al dente
1 small onion, sliced
3 garlic cloves, grated
1 tablespoon olive oil
1 tablespoon butter
1/4 teaspoon dried thyme
1/4 teaspoon red pepper flakes (optional)
2 lemons
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
salt and pepper

Steps:

  • In a large skillet, heat 2 tbsp of the olive oil and the butter. Add onions and garlic. Sauté gently for 1-2 minutes on medium heat.
  • Generously season the chicken with salt and pepper, the dried thyme, and red pepper flakes. Add the chicken breasts to the pan and cook completely.
  • Remove chicken from the pan.
  • Add the juice and zest of the lemons to the pan to deglaze. Combine this with the linguine and remaining olive oil, parsley, and basil. Season with additional salt and pepper to taste.

8 ounces linguine, uncooked
12 ounces boneless skinless chicken breasts (about 2 breasts)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup chicken broth
3 tablespoons fresh lemon juice
1 tablespoon lemon, zest of
1 cup evaporated skim milk
1 1/2 teaspoons cornstarch
2 cloves garlic, crushed
1/4 cup sliced scallion
1/4 cup fresh parsley, finely chopped
3 tablespoons grated lowfat parmesan cheese

Steps:

  • Cut chicken into 3/4 inch cubes.
  • Sprinkle with the salt and pepper.
  • Set aside.
  • In a small bowl, stir together broth, lemon juice and lemon zest.
  • Set aside.
  • In another bowl, stir together cornstarch and 1 tablespoon of the evaporated milk, stirring until cornstarch dissolves.
  • Stir in the rest of the evaporated milk.
  • Set aside.
  • Cook linguine according in a large pot of water according to package directions.
  • Meanwhile, spray a large nonstick skillet with olive oil spray (or just use regular olive oil).
  • Stir fry garlic and chicken over medium-high heat for about 4-5 minutes, or until chicken is no longer pink inside.
  • Reduce heat to medium.
  • Add linguine to skillet.
  • Pour broth mixture on top; toss.
  • Slowly pour milk mixture over.
  • Toss gently for 1-2 minutes, or until sauce is just beginning to boil and thickens slightly.
  • If it seems too dry, add a little more evaporated milk.
  • Add scallions and parsley to the skillet; toss.
  • Remove skillet from heat.
  • Toss in Parmesan cheese.
  • Serve.

This is delicious, easy to prepare, and great for company. Put it into the oven before your guests arrive and have the water and spinach ready to go. It comes together quick and easy. I have always used the skin on thighs and tossed the linguine with all pan juices. For a lower fat version; you could substitute skinless chicken thighs and/or remove a some of the pan drippings before adding the spinach and pasta (keep in mind that is where all the flavor is and is the sauce for the pasta). Spaghetti or whole-wheat pasta may also be substituted.

1/2 cup butter (1 stick)
1 medium onion, thinly sliced
2 garlic cloves, minced
1 tablespoon dried basil
1/2 teaspoon red pepper flakes (may use more or less)
2 1/2 lbs chicken thighs, rinsed and patted dry (about 8)
2 (10 ounce) packages frozen chopped spinach, thawed
8 ounces linguine
1 cup parmesan cheese, grated

Steps:

  • Melt butter in a 13"x 9"x 3" baking pan in preheated 400 F oven; then remove pan from oven.
  • Stir onion, garlic, basil and red pepper flakes into the melted butter.
  • Place chicken, skin side down, in butter mixture; then turn over.
  • Bake uncovered, until meat next to bone is no longer pink when slashed with knife (about 45 minutes).
  • Place thawed spinach in a clean kitchen towel and squeeze out liquid, set aside.
  • Bring a large pot of salted water to a boil, cook linguine about 10 - 13 minutes. (do this about 10 minutes before chicken is done).
  • When chicken is done, remove thighs from pan and keep warm.
  • Add spinach to the pan and stir to scrape browned bits free.
  • Then add pasta and Parmesan cheese; toss together until all is incorporated.
  • Put pasta into a large bowl, top with chicken thighs and serve.

My first Zaar recipe! Yummy, easy main course, only 15 minutesish to make! Add vegetables like fresh diced tomato (has to be fresh, canned will run), zucchini, sundried tomato or fresh broccoli if you like (steam and add toward the end--after milk). I would have done it but my DBF *hates* veggies. One idea would be to roast some Mediterranean type vegetables in the oven at 400 degrees for around 20 minutes with olive oil. Toss them into the dish.

1/2 lb linguine (half package, cooked and drained)
3 tablespoons olive oil
1 minced garlic clove
6 ounces precooked grilled chicken breasts, strips in the package (can be found in lunch meat section of the grocery store)
2 cups milk (add a little extra if needed)
3 tablespoons cornstarch (or flour if you don't have cornstarch but I find cornstarch is much better to work with in this case)
1 1/2 tablespoons basil (crushed works best but regular dried is ok)
3/4 teaspoon crushed red pepper flakes

1 pinch black pepper
1/2 cup fresh grated parmesan cheese (you can now get it in Kraft's canister form, just make sure it's the shreds, not the powder)

Steps:

  • Cook the linguine and set aside.
  • Put 3 tablespoons of olive oil into a large skillet on medium-high heat.
  • Sweat the garlic in the olive oil for a couple minutes.
  • Add the chicken breast strips, cook until warm throughout.
  • Mix 3 tablespoons of cornstarch into the milk until blended.
  • Add the mixture to the skillet and cook for just a minute.
  • Put the the linguine into the skillet, over the sauce and chicken.
  • Sprinkle the basil, red pepper, sugar, salt, and pepper onto the linguine in the skillet.
  • Mix well, toss with grated parmesan and serve.
