The lime and cilantro and a very fresh taste to this curry. I like it served over rice. A wok works well to make this in (of course, I think a wok works well to make everything in).

8 chicken thighs
3 tablespoons flour
1 tablespoon pepper
2 tablespoons oil
1 red onion, chopped
2 cloves garlic, crushed
1/2-1 cup stock (depending on how much broth you like)
3 teaspoons curry powder (or to taste)
3 dashes hot pepper sauce
1 lime, zest and juice of
1/4 cup fresh cilantro
1/3 cup sour cream

Steps:

  • Blend flour and pepper, and dredge thighs in mixture.
  • Brown chicken in oil.
  • Remove chicken to a plate.
  • Add onion, garlic, and flour, and saute.
  • Add broth, curry, and pepper sauce and stir to blend well.
  • Simmer mixture for 2 minutes, then bring to a boil and add chicken, lime zest and lime juice.
  • Cook until chicken is cooked through.
  • Add cilantro and sour cream just before serving.

  • Cut chicken into thin slices.
  • In a large non-stick skillet, heat oil and saute shallots until softened.

  • Add lime juice.
  • Just before serving, stir yogurt into the skillet; garnish with parsley and almonds.

This healthy chicken & lime curry is easy to make and jam-packed full of flavour from the homemade curry paste. It's low in calories and more than 3 of your 5-a-day, great if you're on a diet or the perfect excuse for an extra naan bread and onion bhaji!

2 chicken breasts
2 tsp olive oil
2 onions
1 red pepper
1 tbsp cumin seeds
1 lime (zest)
300 ml passata
200 ml water
Pinch of salt
1 lime (juice)
1 tsp paprika
½ tsp hot chilli powder
2 cloves of garlic
1 " cube of ginger
1 green chilli (add more or less depending on how spicy you like it, 1 makes it a medium heat)
1 tbsp ground coriander
1 tsp fenugreek
1 tsp turmeric
1 tbsp tomato purée

Steps:

  • Chop the chicken breasts into bite-sized pieces and place into a large bowl.
  • Add the lime juice (1 lime), hot chilli powder (½ tsp) and paprika (1 tsp).
  • Cover with cling film and leave to marinate while you prepare the rest of the curry.
  • Place the curry paste ingredients into a pestle and mortar (2 cloves garlic, 1" cube ginger, 1 green chilli (stalk removed), 1 tbsp ground coriander, 1 tsp fenugreek, 1 tsp turmeric, 1 tbsp tomato purée) and bash until there are no large lumps.
  • Slice the onions and roughly chop the red pepper into bite-sized chunks.
  • Heat the olive oil (2 tsp) in a large saucepan. Once hot turn the heat down to low-medium and add the onions and cook for 15-20 minutes until soft and starting to brown. Stir them regularly to ensure they don't burn.
  • Add the cumin seeds and cook for 1 minute.
  • Add the red pepper, lime zest (1 lime), curry paste, passata (300ml) and water (200ml) and simmer for 20 minutes while the sauce thickens. Stir occasionally. Season with salt to taste.
  • About 5 minutes before the sauce is cooked, cook the chicken. Heat a frying pan, add the chicken and cook for c. 5 minutes until it is piping hot all the way through. Turn it during cooking to ensure it cooks evenly.
  • Once the chicken and sauce are cooked, stir the chicken into the sauce and serve. I like mine with rice or chapatis.

4 pounds chicken wings, tips removed and discarded, wings separated into two pieces
Extra-virgin olive oil, for drizzling
Salt and freshly ground black pepper

1 1/2 limes, juiced
6 tablespoons unsalted butter, at room temperature
2 tablespoons coconut milk
1 tablespoon Thai red curry paste
1 tablespoon honey
1 teaspoon soy sauce
Zest of 1 lime
1 tablespoon fresh cilantro leaves, chopped
1 tablespoon fresh mint leaves, chopped
1 tablespoon roasted peanuts, chopped
1/4 Thai bird chile, sliced into rings

Steps:

  • Preheat the oven to 475 degrees F.
  • Spread the wings on two large rimmed baking sheets, then drizzle with olive oil, the juice of 1 lime and some salt and pepper, and toss to evenly coat. Bake the wings until browned and crisp, about 40 minutes.
  • In a large bowl, mix the butter with the coconut milk, curry paste, honey, soy sauce, lime zest and the remaining lime juice. Add the wings to the butter and toss to coat. Add the cilantro, mint, peanuts and chiles, then toss to coat. Serve hot.

2 shallots, or 1 small onion
1 stalk lemongrass
1 tbsp vegetable oil
3-4 tsp red Thai curry paste
4 boneless and skinless chicken breasts, cut into bite-size pieces
1 tbsp fish sauce
1 tsp sugar, brown is best
4 lime leaves
400ml can coconut milk
20g pack fresh coriander

Steps:

  • Peel shallots or onion and cut in half from top to root. Lay the cut sides flat on a board and thinly slice. Very finely slice the lemongrass, starting at the thinner end, stopping towards the base when it gets tough (often described as 'woody' and white in the centre).
  • Heat the oil in a wok or large saucepan for a couple of minutes until the oil separates (it looks more liquid at this point). Add the shallots or onion. Fry for 3-5 mins, until soft and translucent. Stir in the curry paste and cook for 1 min, stirring all the time.
  • Add chicken pieces and stir until they are coated. Add the lemongrass, fish sauce, sugar, lime leaves and coconut milk. Bring slowly to the boil, then reduce heat and simmer, uncovered, for 15 mins until the chicken is cooked. Stir the curry a few times while it cooks, to stop it sticking and to keep the chicken submerged.
  • While the chicken is cooking, strip the leaves from the coriander stalks, gather into a pile and chop very roughly. Taste the curry and add a little more curry paste and salt if you think it needs it. Stir half the coriander into the curry and sprinkle the rest over the top. Serve with Thai jasmine or basmati rice.

1/2 teaspoon salt

1 cup bell pepper, small dice
3 cups basmati rice or 3 cups long grain white rice, cooked

6 lime leaves (2 finely chopped and the centre vein discarded)
1 thumb-sized red chilli (deseeded if you don't like it too hot)
6 lemongrass stalks, tough outer leaves removed, finely chopped
3cm piece ginger , peeled
small pack coriander , stems for the paste, reserve the leaves to serve
2 tbsp soft brown sugar
3 tbsp tamarind purée
2 tsp vegetable oil
400ml can coconut milk
8 boneless, skinless chicken thighs , halved
zest and juice 2 limes
100g fine green bean
2 small mangoes , peeled and cut into 3cm pieces
cooked jasmine rice , to serve

Steps:

  • Blend the chopped lime leaves with the rest of the curry paste ingredients in a food processor.
  • Heat the oil in a large saucepan, add the curry paste and cook on a medium heat for 2-3 mins. Pour in the coconut milk and bring to a simmer. Add the chicken, lime zest and juice, then season and cover. Gently simmer for 30 mins until the chicken is tender.
  • Remove the lid and cook for a further 10 mins. Add the green beans, mangoes and whole lime leaves and cook for 5 mins. Add the coriander leaves just before serving with hot jasmine rice.

1/2 cup chopped onion

2 cups light cream

Steps:

  • In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  • Add chicken, sprinkle with garlic powder and cook, turning once, until golden, 3-4 minutes per side. Remove to a plate and set aside.
  • In the same skillet, melt remaining 2 tablespoons of butter.
  • Add onion, curry powder, salt and pepper. Cook, stirring, 3 minutes, or until onions are tender.
  • Stir in flour; cook, stirring, 1 minute.
  • Stir in lime juice and light cream.

1 (1-inch) piece peeled ginger, chopped
4 garlic cloves

2 tablespoons tomato paste
1 tablespoon sugar
1 Key lime, thinly sliced
2 tablespoons fresh Key lime juice

Steps:

  • Blend 1 cup onions with ginger, garlic, and 1/2 cup water in a blender.
  • Heat oil in a 12- to 14-inch heavy skillet over medium-high heat until it shimmers. Pat chicken dry and season with 1 teaspoon salt and 1/2 teaspoon pepper. Brown, skin side down, about 6 minutes (don't turn over), then transfer to a plate. Add remaining onions to skillet and cook, stirring occasionally, until softened and browned, 8 to 10 minutes. Transfer with a slotted spoon to plate with chicken.
  • Reduce heat to medium and add onion-ginger paste to skillet. Cook, stirring, 1 minute. Add curry powder and cook, stirring, 1 minute. Stir in tomato paste, remaining 2 cups water, sugar, and 1/2 teaspoon salt and bring to a simmer.
  • Return chicken and onions to skillet with sliced lime and simmer, partially covered, turning chicken once, until just cooked through, 25 to 30 minutes.

½-1 tsp ground white pepper
1 tsp ground coriander

1 red chilli halved, deseeded and finely sliced
400g can chopped tomatoes
1 tbsp mango chutney
2 tsp vegetable bouillon powder
1 aubergine , cubed
12 skinless boneless chicken thighs (about 1kg)
4 small fresh or dried lime leaves
1 green pepper , halved, deseeded and sliced
125g brown basmati rice
100g dried red lentils
1 tsp cumin seeds
1 tsp turmeric
1 tsp vegetable bouillon powder

Steps:

  • Heat the oil in a large, wide pan, add the onion and fry for 5 mins until softened, stirring every now and then. Stir in the garlic, ginger, cardamom, cloves and cinnamon, and cook for 5 mins more, stirring frequently. Add all the remaining spices with the chilli, stir briefly over the heat then add the tomatoes with 1 can of water, the chutney and bouillon.
  • Stir in the aubergine, bring to the boil then cover the pan and simmer for 15 mins. Stir well, and add the chicken and lime leaves. Push them under the liquid and scatter over the green pepper. Cover the pan and leave to cook for 40 mins. Remove the chicken, shred in to medium-sized pieces and return to the sauce.
  • Meanwhile, make the rice. Put all the ingredients in a medium pan with 750ml water. Bring to the boil , then cover and cook for 20 mins. Turn off the heat and leave for 5 mins to absorb any excess moisture. Serve with the curry.

1/2 teaspoon red curry powder
Coarse salt and ground pepper
2 tablespoons plus 1 teaspoon vegetable oil
2 packed cups cilantro leaves

1 tablespoon fresh lime juice
1 tablespoon rice vinegar

Steps:

  • Sprinkle chicken with curry powder, season with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-low. Add chicken and cook until golden and opaque throughout, 30 to 35 minutes, turning once.
  • In a blender, combine 1 tablespoon oil, cilantro, ginger, lime juice, vinegar, sugar, and 3 tablespoons water. Puree until smooth; set aside.
  • In a medium saucepan, heat remaining teaspoon oil over medium. Add shallot and turmeric; season with salt and pepper. Cook, stirring occasionally, until shallot begins to soften, 1 to 2 minutes. Add coconut milk and 1 cup water; bring to a boil. Stir in rice; return to a boil. Reduce to a simmer, cover, and cook just until rice is tender, 12 to 14 minutes. Remove pan from heat and let stand, covered, for 5 minutes. Fluff with a fork just before serving. Serve rice topped with chicken and drizzled with sauce.
