EASY, LOW-FAT CHICKEN LASAGNA



Easy, Low-fat Chicken Lasagna image

This recipe derived from the need to use leftover grilled chicken when I was really in the mood for lasagna! The grill flavor really lent it a good flavor- so I suggest using leftover grilled or rotisserie chicken for this.

2 boneless skinless chicken breast halves, cooked and diced
2 cups shredded part-skim mozzarella cheese
8 tablespoons freshly grated parmesan cheese
1 (24 ounce) container fat-free cottage cheese
1 small yellow onion, diced
1 tablespoon olive oil
12 lasagna noodles
1 yellow bell pepper, diced
8 basil leaves, julienned
1/2 cup fresh parsley, chopped
1 (24 ounce) jar spaghetti sauce (I like Newman's Own)
1 tablespoon coarse garlic salt
1 teaspoon cayenne pepper

Steps:

  • Preheat oven to 375 degrees.
  • In 1 T olive oil saute the onion and bell pepper until translucent.
  • Add chicken and set aside.
  • Spray a 9x13" pyrex dish with cooking spray and spoon about a half cup of the spaghetti sauce on the bottom.
  • Mix the fresh herbs, garlic salt, and cayenne straight into the container of cottage cheese.
  • Layer 4 uncooked lasagna noodles, 1/3 cottage cheese mixture, 1/3 chicken mixture, 1/3 of the remaining sauce, 1/3 mozzerella and 1/3 parmesan.
  • Repeat this process until finished.
  • Cook, uncovered, for about 45 minutes or until bubbly and golden brown on top.

This white sauce Chicken Lasagna is so satisfying with layers of lasagna noodles and tender chicken in a creamy spinach sauce.

9 lasagna noodles (cooked al dente)
4 cups shredded rotisserie chicken (or cooked from 2 lbs chicken breast)
1 Tbsp olive oil
1 medium onion (finely chopped)
4 Tbsp unsalted butter
1/3 cup all-purpose flour
2 1/2 cups chicken broth
1 1/2 cups half and half ((or equal parts of heavy cream and milk))
5 oz fresh spinach (coarsely chopped)
2 tsp sea salt
1/2 tsp black pepper
3 garlic cloves (minced)
15 oz ricotta
1 large egg
1/4 cup parsley
1/4 cup parmesan cheese
3 cups mozzarella cheese (12 oz by weight, divided (reserve 1 cup for topping))

Steps:

  • Preheat oven to 375˚F. Cook pasta in a large pot of salted water until al dente according to package instructions then drain hot water and add cold water to the pot to stop the cooking process and prevent noodles from sticking together. Shred 4 cups of chicken.
  • Place a pot or large saucepan over medium heat, add 1 Tbsp olive oil and saute onions for 3-4 minutes or until softened. Add 4 Tbsp butter and whisk in 1/3 cup flour. Continue whisking 3 minutes or until flour mixture is golden.
  • Add 2 1/2 cups chicken broth, 1 1/2 cups half and half, 2 tsp salt, and 1/2 tsp black pepper. Whisk until smooth and simmer 5 minutes until thickened to a light gravy consistency.
  • Add minced garlic and chopped spinach, and stir to combine then remove from heat.
  • In a large bowl, whisk together: ricotta, egg, 2 cups mozzarella cheese, 1/4 cup parmesan, and 1/4 cup parsley.
  • Add a little bechamel sauce on the bottom of a 9x13 casserole dish, add 3 noodles, Add 1/2 ricotta sauce, 1/2 shredded chicken then ladle 1/3 of spinach sauce over the chicken.
  • Add 3 noodles, 1/2 ricotta cheese, 1/2 shredded chicken, and 1/3 spinach sauce
  • Add 3 noodles, remaining 1/3 sauce, and sprinkle on reserved 1 cup cheese.
  • Cover and Bake: Arrange 10-12 toothpicks over the top to keep the foil from touching the cheese then cover with a large sheet of foil. Bake on the center rack in a preheated oven at 375˚F for 45 minutes then uncover and broil 2-3 minutes to brown the cheese. Rest at least 10 minutes uncovered before slicing.

3 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped green pepper
3 cups chopped cooked chicken
1 (4-ounce) jar pimientos, chopped
1 (8 ounce) can cream of chicken soup
1 (8-ounce) can mushroom soup
1 cup chicken broth
6 lasagna noodles, cooked and drained
6 ounces shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a large saucepan over medium heat. Add the onions and green peppers and cook, stirring occasionally, until they are soft and translucent, about 15 minutes. Add the chicken, pimientos, mushroom soup, and chicken broth. Simmer the mixture until the flavors blend and the sauce thickens slightly, about 5 minutes.
  • Spoon about 1/3 of the chicken mixture into a medium baking dish. Arrange 2 of the noodles over the chicken; repeat layers of chicken and noodles twice more. Top the lasagna with cheese, cover with aluminum foil and bake for 20 minutes. Uncover and bake until the cheese is nicely browned, about 10 minutes. Remove the lasagna from the oven and allow it to set for 5 minutes, then serve.

This recipe proves that you can eat your favorite Italian food without worrying about the fat! It can be made vegetarian by omitting the ground beef, doubling the amount of soy sauce and balsamic vinegar and using vegetable stock instead of chicken stock.

1 (28 ounce) jar reduced-fat spaghetti sauce (you choose brand)
1 (16 ounce) can fat-free chicken broth
2 eggs
2 garlic cloves, crushed
8 ounces part-skim mozzarella cheese, grated
2 cups low-fat ricotta cheese
1/2 lb lean ground beef
1 (10 ounce) package frozen chopped spinach
1 onion, finely chopped
1/2 lb fresh mushrooms, sliced
1/2 teaspoon soy sauce
1 teaspoon balsamic vinegar
8 ounces lasagna noodles (*any brand, don't boil, they will cook in oven)
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Lightly oil bottom of baking pan.
  • Stir one cup of the chicken stock into the spaghetti sauce and set aside.
  • Whisk the egg.
  • Stir in ricotta cheese and one cup of the mozzarella.
  • Add garlic, salt and pepper and set aside.
  • Brown and drain the ground beef making sure to break it into very small pieces.
  • Season with salt and pepper.
  • Cook the spinach until it is half done, approximately two-thirds of the time indicated on the microwave directions.
  • Sauté the onion in 1/2 cup chicken stock until it is translucent.
  • Cook the mushrooms in the remaining 1/2 cup chicken stock adding the soy sauce and vinegar.
  • Simmer until all liquid is absorbed.
  • Mix together beef, spinach, onions and mushrooms.
  • Build the lasagna starting with a layer of sauce in the bottom of the pan.
  • *Add one layer of the uncooked noodles followed by more sauce, 1/3 of the cheese mixture and 1/3 of the spinach/beef mixture.
  • Repeat two more times, finishing off with the spinach mixture and the remaining sauce.
  • Bake uncovered for 45 minutes, until liquid around the edges has been absorbed.
  • Sprinkle remaining mozzarella on top and bake for 15 minutes more.
  • To freeze: Bake, cool, wrap well, and label. freeze up to 2 months. *Note: You can assemble and freeze without cooking and cook on the day to be eaten!
  • To serve, defrost overnight and then bake until warmed through, or bake from frozen for 1 hour and a half.

  • Prepare chicken. Place chicken in a medium pot and cover with water. Cook on medium heat for about 20-25 minutes. Drain and set aside until cool enough to handle. Chop in very small pieces. You can use your food processor for that: cut the breasts in 3-4 pieces, place in the food processor and pulse just a few seconds, or until finely chopped (don't pulse too much tough, you don't want ground chicken). Set aside.
  • Prepare alfredo sauce. Fill a large pot with 4 cups of stock and 4 cups of water. Bring to a boil. Add cauliflower florets, cover and cook for 10 minutes or until cauliflower is very tender. Transfer cauliflower to the bowl of your food processor using a slotted spoon. Add 1 cup of cooking liquid and process for about 3-4 minutes or until very smooth. You can also use a blender, but if you do, you might need to process the cauliflower in two batches. Add 1 cup of mozzarella, 1 cup of parmesan, nutmeg and freshly cracked black pepper. Process again until smooth. Separate and reserve 1 1/2 cups of sauce and set aside.
  • Prepare filling. Melt butter in a large skillet over medium heat. Add garlic and cook until just fragrant, about 30 seconds. Add mushroom and cook until they soften, then add spinach and cook until wilted. Add reserved chicken and reserved Alfredo sauce (except the 1 1/2 cups you saved), and mix until everything is well combined. Taste and adjust salt and pepper if needed.

Sprinkle with 3/4 cup mozzarella. Add the remaining 3 lasagna noodles; spread the remaining cheese sauce over the noodles and sprinkle with the remaining mozzarella.
  • Lightly coat a piece of foil with cooking spray; cover the dish, coated-side down. Bake for 30 minutes; uncover and bake until golden brown and bubbly, about 15 minutes more. Let the lasagna stand for 15 minutes before serving.
