1 1/2 cups boiling water
1 cup bulgur wheat
1/4 cup freshly squeezed lemon juice (2 lemons)
Olive oil
Kosher salt
1 whole (2 split) chicken breast, bone in, skin on
Freshly ground black pepper
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (2 bunches)
1 cup chopped fresh flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, halved lengthwise, seeded, and medium-diced
2 cups halved cherry tomatoes

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heat-proof bowl, pour the boiling water over the bulgur wheat. Add the lemon juice, 1/4 cup olive oil, and 1 1/2 teaspoons of salt. Stir. Cover the bowl with plastic wrap and allow the bulgur to stand at room temperature for about 1 hour.
  • Place the chicken breast on a baking sheet and rub it with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until just cooked. Set aside until cool enough to handle.
  • Remove the chicken meat from the bones and discard the skin. Cut the chicken into medium dice and add to the tabbouleh. Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and 1 teaspoon pepper. Season, to taste, and serve immediately or cover and refrigerate. The flavors will improve as it sits.

1 small onion
1 lb. ground chicken
1 Tbsp. ground cumin
1 tsp. each garlic powder and ground cinnamon
1 pkg. (4 oz.) crumbled feta cheese, divided
2/3 cup loosely packed fresh mint, divided
1 cup couscous, uncooked
1/2 cup cherry tomatoes, cut in half
1 cup chopped English cucumbers, divided
1/4 cup KRAFT Zesty Lime Vinaigrette Dressing
1/2 cup sour cream

Steps:

  • Heat grill pan to medium heat.
  • Process onion in food processor until finely chopped. Add chicken, dry seasonings, half the cheese and 1/4 cup mint; process just until blended.
  • Divide chicken mixture into 8 portions; shape each into 6-inch log on each of 8 wooden skewers, firmly pressing chicken mixture into skewers to secure.
  • Grill 12 to 15 min. or until done (165°F) and evenly browned on all sides, turning occasionally. Meanwhile, cook couscous as directed on package, omitting salt.
  • Chop remaining mint. Place 1/4 cup mint in medium bowl. Add tomatoes, 1/2 cup cucumbers, dressing and couscous; mix lightly. Spoon onto platter; top with remaining cheese and chicken skewers.
  • Mix remaining chopped mint with sour cream and remaining cucumbers. Serve with couscous mixture.

I'm excited to share what is one of my all-time favorite things to grill. This is perfect for those times when you want to take a break from grilling burgers, but you also kinda want a grilled burger, since this is basically a Mediterranean-style meatball on a stick. I know "shish" gets more love, but "kofta" might be the best kebab. Serve over a tomato, onion, and cucumber salad with flatbread or pita and a lemony tahini dressing.

1 slice whole grain bread, toasted
½ medium yellow onion, diced
⅓ cup chopped Italian parsley
4 cloves garlic, minced
8 ounces ground beef
4 ounces ground lamb
1 ¼ teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon ground allspice
½ teaspoon paprika
¼ teaspoon ground cardamom
⅛ teaspoon ground nutmeg
¼ teaspoon cayenne pepper
2 tablespoons water
4 bamboo skewers, soaked for at least 1 hour

Steps:

  • Cut toasted bread slice into thin strips on a cutting board; cut strips across into a small dice.
  • Place onion, parsley, and garlic on top of diced bread on the cutting board; chop until mixture resembles tabbouleh.
  • Season beef and lamb with kosher salt, black pepper, allspice, paprika, cardamom, nutmeg, and cayenne. Add onion mixture and water. Mix and mash with your hands until well combined.
  • Wrap in plastic wrap and refrigerate until chilled, at least 1 hour, up to overnight.
  • Remove meat from the refrigerator and roll ¼ of the mixture into a ball using wet hands. Pierce in the middle with a bamboo skewer. Shape meat into a uniform log, about 6 inches long and 2 inches wide.
  • Meanwhile, preheat a charcoal grill until coals are very hot.
  • Place kebabs on the hot grill until browned and cooked through, about 12 minutes, turning every 3 minutes or so. An instant-read thermometer inserted into the center of a kebab should read at least 145 degrees F (63 degrees C). Serve.

You can use a previously roasted chicken for this healthy salad. I reduced the amount of salt from original recipe. It is best after sitting in the fridge for 24 hours. Edit: If you use regular table Iodized salt instead of the kosher salt, please use much less as table salt creates a saltier final product.

  • First, soak a very small piece of sandwich bread in water until super tender, then drain the water and squeeze the bread dry. Place the bread in a large mixing bowl. Add ground chicken, grated onion, minced garlic, chopped parsley and mint. Add Aleppo-style pepper, coriander, paprika, kosher salt and pepper. Add the egg, if using, and a drizzle of extra virgin olive oil to bring this mixture together.
  • Take fistfuls of the chicken mixture and form into 8 oval patties that are about 1 to 1 1/2 inches thick (try to keep them all equal in size).Arrange the patties on a tray or a large plate (they should not be touching) and chill for 15 to 20 minutes while the grill is heating (longer if you have the time)
  • Grease the grates of your gas grill (or an indoor griddle or skillet) with a bit of oil and preheat to medium-high. When ready, arrange the chicken kofta on the grill or griddle so that they are far enough apart (you'll want to have enough room to turn them over). Grill for 4 to 5 minutes on each side or until the chicken is fully cooked. (Use a grill-safe spatula to turn the chicken kofta over halfway through cooking).
  • In my opinion these kofta patties are best hot off the grill. Add a little garnish of Aleppo-style pepper if you like and serve with your favorite Mediterranean sides.
